2 tablespoons olive oil
1 pound whole mushrooms (cremini or white)

Steps:

  • Heat olive oil in skillet to medium-high heat. The oil should be sizzling hot.
  • Clean the mushrooms and trim if needed. Put in the hot pan cap side down and don't touch them.
  • After 2-3 minutes flip the mushrooms over and cook for another 2-3 minutes. Season with salt and pepper to taste.

24 oz. Baby Bella Mushrooms; gently washed and dried
1/3 cup olive oil
1/3 cup apple cider vinegar
1 tbsp honey (or more as needed)
3 cloves garlic; finely minced
1 tsp salt
2 tsp chili flakes
2 tbsp finely minced fresh rosemary
1 tbsp fresh thyme leaves

Steps:

  • Add some olive oil to a pan and sauté the mushrooms, cap side down until they begin to brown slightly. Flip them over and continue to sauté until water starts coming out. Remove and let stand in a bowl for 5 minutes.
  • Mix all remaining ingredients for marinade and pour over (still warm) mushrooms. Allow to sit for at least an hour or even over night.
  • Serve as a side dish, with charcuterie, on a bbq skewer, in a sandwich or salad. Save the marinade and use it to marinate meat the next day.

This recipe was handed down to me from my Grandma. Little mushrooms are marinated in a zesty mixture. They're great for buffet style gatherings. They keep well for a long time in the fridge, or you may can them in mason jars and store in cupboard.

⅓ cup red wine vinegar
⅓ cup olive oil
1 small onion, thinly sliced
1 teaspoon salt
2 tablespoons dried parsley
1 teaspoon ground dry mustard
1 tablespoon brown sugar
2 cloves garlic, peeled and crushed
1 pound small fresh button mushrooms

Steps:

  • In a medium saucepan, mix red wine vinegar, olive oil, onion, salt, parsley, dry mustard, brown sugar and garlic. Bring to a boil. Reduce heat. Stir in mushrooms. Simmer 10 to 12 minutes, stirring occasionally. Transfer to sterile containers and chill in the refrigerator until serving.

3 tablespoons extra-virgin olive oil
8 cups sliced wild mushrooms (such as chanterelle, shiitake, oyster, trumpet, or morel, preferably just a single variety and not a mix)
2 tablespoons water
3 to 4 tablespoons unsalted butter (cut into small chunks)
2 tablespoons minced shallots
1 tablespoon chopped thyme leaves
1 tablespoon chopped chives
1 garlic cloves (minced)
Salt and freshly cracked black pepper

Steps:

  • To make the pan-roasted mushrooms, heat your largest skillet, preferably cast-iron, over medium-high heat. Add the oil and wait for 30 seconds. Add the mushrooms and water and cook, without stirring or, okay, stirring just once or twice, until the mushrooms are crisp at the edges and golden, about 8 minutes or maybe even 12 minutes, depending on the type of mushroom.
  • Remove the skillet from the heat, stir in the butter, shallots, thyme, chives, and garlic, and toss just until the butter melts. Season to taste with salt and pepper.

6 portobello mushrooms
1/3 cup extra-virgin olive oil
1/2 teaspoon crushed red pepper flakes
1 pinch sugar
2 sprigs fresh thyme
2 small cloves garlic, minced
Kosher salt

Steps:

  • Use a spoon to remove the gills from the underside of the mushrooms. Put the mushrooms in a small baking dish.
  • Combine the oil, red pepper flakes, sugar, thyme and garlic in a small saucepot and heat until bubbling and aromatic. Pour the warm oil over the mushrooms, add 1/4 teaspoon salt and toss gently to coat. Cover and marinate at room temperature for at least 1 hour and up to overnight.
  • Preheat the oven to 425 degrees F. Arrange the mushrooms on a baking pan and roast until browned and tender, about 30 minutes. Transfer the mushrooms to a serving plate and drizzle with the liquid from the pan.

  • Remove the stems and clean the mushroom caps with a damp paper towel. Cut the mushrooms into large, even-sized chunks. Heat the oil in a large cast-iron skillet over medium-high heat. When the oil is hot, add the mushrooms in a single layer and season with salt and pepper (work in batches if necessary so the mushrooms brown rather than steam). Cook until they begin to brown, about 5 minutes. Stir in the garlic and butter. Cook for a few minutes more- to take the raw edge off the garlic-then remove from the heat and add the parsley.
