PAN-FRIED MAHI MAHI WITH PLANTAIN MOFONGO AND PASSION BUERRE BLANC



Pan-fried Mahi Mahi with Plantain Mofongo and Passion Buerre Blanc image

One 8-ounce fillet mahi-mahi, or any other firm white fish
Adobo seasoning, to taste, or garlic, salt and pepper
4 tablespoons olive oil
8 ounces peeled plantains
Vegetable oil, for frying
3 garlic cloves, chopped
3 ounces chicken chicharones
1/2 cup passion fruit juice
1/4 cup plus 2 tablespoons Chardonnay, or dry white wine
1/4 ounce fresh cilantro
3/4 cup (1 1/2 sticks) butter, cubed

Steps:

  • Rub mahi mahi with adobo and 1 tablespoon olive oil and set aside.
  • Heat vegetable oil in a large heavy skillet until it reaches 365 degrees F. Cut plantains into small medallions, and then deep-fry until fully cooked, about 3 minutes. Remove from oil and let drain on a paper towel-lined plate. When drained, place plantains in a mortar.
  • Combine garlic and chicken chicharones with the plantains in the mortar and mash them together until mixed. Set mofongo aside.
  • Heat 3 tablespoons olive oil in a medium skillet over medium-high heat. Add fish and cook for 4 minutes on each side, or until cooked through. Remove fish and let it rest on a plate. Add passion fruit juice and wine to skillet and let reduce over medium-high heat for a few minutes. Whisk in butter, a few cubes at a time, until the sauce thickens.
  • To serve, place mofongo in the center of the plate with mahi-mahi on top. Cover with the beurre blanc.

1 serving olive oil cooking spray
1 (10 ounce) bag fresh green beans, trimmed
1 tablespoon olive oil
1 teaspoon seasoned salt
4 (4 ounce) fillets mahi mahi fillets
2 tablespoons salted butter, melted
2 tablespoons lemon juice
3 cloves garlic, minced
1 (10 ounce) can diced tomatoes and green chiles, drained
1 onion, chopped
1 pinch salt and ground black pepper to taste

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Spray a large sheet pan with cooking spray.
  • Mix green beans, olive oil, and seasoned salt together in a large bowl. Coat thoroughly. Place on one quarter of the sheet pan.
  • Bake in the preheated oven for 10 minutes.
  • While beans are baking, pat mahi mahi dry with a paper towel. Combine butter, lemon juice, and garlic in a small mixing bowl.
  • Toss green beans. Spray the empty side of the pan. Add tomatoes and onion; toss well. Place mahi mahi on top and brush with the lemon-garlic mixture. Season fish and tomatoes with salt and pepper.
  • Continue baking until fish flakes easily with a fork, about 25 minutes.

I am a transplanted Floridian and this takes me back to memories of when I lived on the coast of Florida. I love serving this with fresh vegetables and risotto.

3 tablespoons olive oil, divided
½ cup garlic- and herb-seasoned panko bread crumbs
2 cloves fresh garlic, finely chopped
1 lemon, zested
1 ½ teaspoons seafood seasoning (such as Old Bay®)
1 teaspoon salt, divided
4 (5 ounce) mahi mahi fillets

Steps:

  • Preheat a large saucepan over medium heat for 2 to 3 minutes. Add 2 tablespoons oil, then add panko. Cook and stir until lightly toasted, 2 to 3 minutes. Add garlic and cook until fragrant and panko is golden brown, 1 to 2 minutes.
  • Transfer bread crumb mixture to a small bowl and add lemon zest, seafood seasoning, and 1/4 teaspoon salt; mix to combine. Set aside.
  • Wipe out the saucepan and pour in remaining oil. Season fish fillets with remaining salt and add to the pan.
  • Cook over medium heat until opaque, 2 to 3 minutes per side. An instant-read thermometer inserted into the center should read at least 145 degrees F (63 degrees C).
  • Serve fish topped with bread crumb mixture.
