2 heads red-leaf lettuce (Leaves Pat Dry)
1 cup kalamata olive (Pitted, sliced)
4 tablespoons flat leaf parsley (Chopped)
3 japanese cucumbers (Seeds removed, Sliced Thin)
4 cups daikon radishes (Sliced Thin)
2 anaheim chilies (Fine Diced)
1 (14 ounce) can hearts of palm (Sliced )
1/4 teaspoon fine sea salt
1/4 teaspoon ground black pepper
3/4 cup lemon yogurt
2 tablespoons lemon zest
1 tablespoon fresh lime juice
1 pinch cayenne pepper

Steps:

  • Chill lettuce leaves and salad plates for 15 minutes.
  • Place olives, parsley, cucumbers, radishes ,chilles, hearts of palm, salt, pepper in a bowl and toss the salad.
  • In a small bowl combine lemon yogurt, lemon zest, lime juice and cayenne pepper. Whisk dressing until smooth. Season with salt and pepper to taste. Fold dressing into salad, cover with plastic and chill for 15 minutes.
  • Assemble the salad.
  • Place Red-Leaf lettuce leaves on chilled salad plates and add salad.
  • Garnish salads with fresh chopped parsley and sliced Kamata olive.

A cool summertime salad with ingredients from the Pacific rim. The salad has fresh herbs and a rice vinegar dressing. This salad can be served as an appetizer or a side dish. Use a mandolin to thin-slice cucumbers, radishes, and onion.

¼ cup seasoned rice vinegar
1 teaspoon white sugar, or to taste
1 bay leaf
salt and ground black pepper to taste
4 Japanese cucumbers - peeled, seeded, and sliced thin
2 cups thinly sliced daikon radish
1 tablespoon fine sea salt
1 cup thinly sliced sweet onion (such as Maui®)
2 cups grape tomatoes, halved
¼ cup chopped fresh chives
2 tablespoons chopped fresh cilantro
1 tablespoon minced garlic
1 teaspoon ground white pepper

Steps:

  • Stir rice vinegar, sugar, and bay leaf together in a small saucepan over medium heat; bring to a boil. Whisk the boiling mixture until the sugar dissolves completely; remove from heat. Discard the bay leaf. Season with salt and pepper. Set aside to cool.
  • Spread cucumber and radish slices onto a layer of paper towels. Sprinkle sea salt over the cucumber and radish slices. Set aside for 10 minutes. Rinse under cold running water and pat dry with paper towel.
  • Toss cucumber, radish, sweet onion, tomatoes, chives, cilantro, garlic, and white pepper together in a large bowl. Drizzle rice vinegar dressing over the salad; toss to coat.

Pacific Rim Fruit Salad image

Delicious alternative to the usual American fruit salad, given to me by an accomplished hostess in Australia. This is so good it can be served for breakfast or as a side dish at any meal. If you prefer, you may substitute mangoes for the papaya (or pawpaw) with equally delicious results.

1 golden ripe papaya (There should be more papaya than banana and kiwi, about 2/3 papaya and 1/3 banana & kiwi)
green kiwi fruit (not the golden variety)
banana
1/2 orange
1/2 lemon

Steps:

  • peel and seed papaya, cut into cubes.
  • place papaya in a large glass bowl.
  • add sliced kiwis and bananas and mix well.
  • squeeze orange and lemon together, stir into fruit mix.
  • let stand at room temperature an hour or two, then refrigerate overnight for best results.

1/3 cup Hellmann's light mayonnaise
1/3 cup french vanilla yogurt
2 teaspoons dark amber maple syrup
2 teaspoons seasoned rice vinegar
1/4 teaspoon fine sea salt
1 dash white pepper
1 fresh lemon (Quartered)
1 cup fuji apple (Small Diced)
3 cups apples (Arkansas black, Small Diced)
1 Asian pear (Small Diced)
1 tablespoon unsalted butter
1/2 cup fresh coconut (Grated)
2/3 cup toasted sliced almonds
1 cup celery (Sliced Thin)
2/3 cup golden raisin
1 cup red seedless grapes (Cut in Half)
1 head red leaf lettuce
1 cup cilantro (Chopped)

Steps:

  • In a bowl combine mayonnaise, vanilla yogurt, maple syrup, seasoned rice vinegar, sea salt, white pepper and whisk dressing until smooth.
  • Add diced apples and pears to salad.
  • In a small saute pan melt butter, add coconut, almonds, toast until light brown and add to salad.
  • Fold in celery, raisins and grapes. Season with salt and pepper to taste. Cover salad with plastic and chill for 10 minutes.
  • Cover chilled salad plate with Red Leaf Lettuce, place salad on plates.
  • Garnish salads with fresh chopped cilantro.

Fantastically Fresh Summer Salad image

This salad is easy to put together and tastes delicious. Don't let the list of ingredients fool you - they are items that you typically have on hand. In the salad, the combination of radishes, strawberries and avocado are a mixture of complimentary tastes and textures. Personally, I don't toss salads with the toppings because the toppings always seem to fall to the bottom of the bowl and you miss out on them.

1/4 cup apple cider vinegar
1/2 cup canola oil
2 teaspoons Worcestershire sauce
2 tablespoons honey
1/4 cup onion, roughly chopped
1 tablespoon sugar
1 tablespoon grainy mustard or 1 tablespoon Dijon mustard
1/2 teaspoon salt
1 head romaine lettuce (cut or torn into bite-sized pieces)
1/2 cup radish, thinly sliced
1 cup fresh strawberries, sliced
1 avocado, chopped
1/2 cup aged white cheddar cheese or 1/2 cup smoked cheddar cheese, cut into small cubes

Steps:

  • Mix all ingredients for the dressing in a blender or food processor. Blend for at least 2 minutes.
  • Place the lettuce in a large salad bowl. Add dressing and toss.
  • Top with radishes, strawberries, avocado and cheddar cheese. Serve immediately.

3 lbs savory cabbage (Sliced Thin)
2 celery ribs (Sliced Thin)
1 cup maui onion (Sliced Thin)
2 carrots (Grated)
1 (5 ounce) can sliced water chestnuts (Drained)
1/4 cup parsley (Chopped)
3/4 cup cilantro (Cilantro, Chopped)
1 cup dried cranberries
1 (11 ounce) can mandarin oranges (Reserve Juice)
2 limes (Zested & Juiced)
1/2 cup seasoned rice vinegar
1/3 cup extra virgin olive oil
1 teaspoon chili oil
1/2 teaspoon fine sea salt
2 teaspoons celery salt
1 teaspoon white pepper

Steps:

  • In a large bowl combine cabbage, celery, Maui onion, carrots, water chestnuts, parsley, cilantro, cranberries and Mandarin oranges.
  • In a small saucepan combine 2 tablespoons Mandarin juice, lime juice and lime zest. Bring to a slow boil and whisk until combined. Remove from heat and whisk in oils. Add dressing to salad. Add sea salt, celery salt, white pepper and toss well. Cover salad with plastic and chill for 2-hours.
  • Garnish with Fresh Parsley Sprigs.
