HOMEMADE BASIL PESTO RECIPE



Homemade Basil Pesto Recipe image

This fresh basil pesto recipe is easy to make with pine nuts (or walntus), garlic, Parmesan cheese, and a generous drizzle of quality extra virgin olive oil. Make ahead and store in the fridge or freezer for later use. Be sure to read through my post and watch the video for important tips!

Number Of Ingredients 7

2 cups packed fresh basil leaves
1 to 2 clove garlic (roughly chopped)
1/3 cup pine nuts (or walnuts, toasted)
Juice of ½ lemon
1/2 cup extra virgin olive oil (plus more for storing)
1/2 cup finely grated Parmesan cheese
Kosher salt and black pepper (to taste)

Steps:

  • Quickly blanch the basil. Prepare a bowl of ice water and set aside near your stove. Fill a small saucepan halfway with water and bring to a boil. Drop the basil leaves in the boiling water and blanch for 5 to 10 seconds or until wilted. Using tongs, transfer the basil leaves to prepared ice water to stop cooking.
  • Dry the basil very well. Pick up the basil leaves and wrap them in paper towel and squeeze to wring out all the water.
  • Make the pesto. Place the basil, garlic, pine nuts, and lemon juice in the bowl of a food processor fitted with a blade. With the processor running, slowly pour the extra virgin olive oil. Do not run the processor too long, you want to have a little bit of texture to your basil pesto.
  • Stir in the Parmesan cheese. Transfer the basil mixture to a small bowl. Add the Parmesan cheese and season with salt and pepper to taste. Mix to combine. If needed add a little bit more extra virgin olive oil to mix.
  • Use immediately or store for later (see notes for storage).

Number Of Ingredients 8

2 cups sun-dried tomatoes, packed in oil; drain and reserve oil
3/4 cup oil, preferably olive oil
1/2 cup fresh rosemary
1/2 cup fresh parsley
1/2 cup fresh oregano
3 - 5 cloves garlic
1/2 cup pine nuts or walnuts (optional)
3/4 cup shredded Parmesan cheese

Steps:

  • Process all the above ingredients except for cheese in food processor until smooth. Add cheese, mix well, and refrigerate up to 2 days. Can also be frozen.

Number Of Ingredients 6

1 (9-inch) unbaked pie shell
2 cups shredded mozzarella cheese, divided
3/4 cup ready-made pesto
1/2 cup sun-dried tomato
4 eggs
1 1/2 cups milk

Steps:

  • In unbaked pie shell, layer 1 cup mozzarella, pesto, sun-dried tomatoes and then remaining cheese. Blend together eggs and milk. Pour batter over top of tomato/cheese mixture. Bake at 400° for 10 minutes, or until crust is lightly browned. Reduce temperature to 300° and bake until quiche is set and knife comes out clean.

Basic Pesto image

Pesto is a mouthful of bright summer - basil made more so. You can buy it in a jar or in the refrigerator section of your grocery story, but there is nothing better than making it yourself. Fresh basil can be found in abundance at farmers' markets in the summer. Just clean, take the stems off and throw the leaves in a food processor with nuts and garlic. Dribble in the oil and you've got a versatile sauce for pasta, chicken or fish.

Number Of Ingredients 5

2 cups fresh basil leaves (no stems)
2 tablespoons pine nuts or walnuts
2 large cloves garlic
1/2 cup extra-virgin olive oil
1/2 cup freshly grated parmesan cheese

Steps:

  • Combine basil leaves, pine nuts or walnuts and garlic in a food processor and process until very finely minced.
  • With the machine running slowly dribble in the oil and process until the mixture is smooth.
  • Add the cheese and process very briefly, just long enough to combine. Store in refrigerator or freezer.

LAMB LOIN WITH PESTO MINT SAUCE



Lamb Loin with Pesto Mint Sauce image

Number Of Ingredients 8

lamb loin (1 loin serves 2 people)
hot, sweet mustard
4 thin slices bacon or pancetta
fresh mint or fresh rosemary, chopped (optional)
1 cup pesto, your own or jarred bought
2 tablespoons Cross & Blackwell's mint sauce
2 tablespoons chopped fresh mint leaves
1 tablespoon chopped fresh rosemary, or 1 teaspoon dried rosemary

Steps:

  • Spread lamb loin generously with mustard. Wrap with bacon or pancetta. Sprinkle with herbs. Preheat oven to 350°. Grill or panfry lamb on all sides. Place on cookie sheet or roasting pan and put in oven to finish cooking off. If you like your lamb rare, this should take about 5-10 minutes. Cook longer for more well-done lamb. Remove from oven and let meat rest 10 minutes before slicing. To make sauce, combine pesto with mint sauce. Add fresh mint and rosemary. Combine well. Serve with sliced lamb.
