PENNSYVANIA DUTCH POTATO SOUP
An easy potato soup. Serve with crusty bread.

Steps:
- 1. Bring potatoes, onion, water and salt to a boil in a large pan. Reduce to a simmer and cook for 10 minutes. Add celery and carrot.
- 2. Stir in milk and return to simmer. Cook until heated through.
- 3. Just before serving, stir in butter, eggs, and parsley. Season with salt and pepper, as needed.

Steps:
- Cook potatoes and onion in boiling salted water until tender- drain.
- Add 1 quart of milk to potatoes and heat, and then blend in the salt, pepper and parsley.
- Cut butter into flour- blend together the egg and milk using only enough milk to make the mixture thin enough to drop into the hot soup.
- Cover and cook about 10 minutes.
- Serve at once.

PENNSYLVANIA DUTCH SAUSAGE AND POTATO SOUP
I've tweaked this recipe I found in an herb magazine I once subscribed to. Since my husband is an avid deer hunter, I sometimes use venison kielbasa. Then we call it 'Buck-Pole Soup'

Steps:
- 1. Combine first 7 ingredients in large soup pot and simmer until potatoes are tender. Add chicken boullion to taste during cooking. Add cream to finished soup right before serving. Do not boil after cream is added.
- 2. This could also be made in a slow cooker for 3 hours on high or 5 hours on the low setting. The cream can also be added to each individual bowl after serving.
DUTCH POTATO SOUP
I grew up on this soup...fall is here and I was chilly today, so figured it was a good day for it! It's a basic potato soup recipe but the addition of the hotdogs makes it better! Don't be put off by the hotdogs, give it a try & then decide...it also has no salt other than from the hotdogs... I just made this today & didn't...

- 1. Peel potatoes and cut into 1" cubes; chop onion and celery; place in 4 qt. saucepan and cover with water.
- 2. Add seasonings and heat over medium-high heat until it potatoes are softened. Use an immersion blender (or potato masher) to break potatoes down and make it thicker and creamy consistency (we like a little chunkiness, so I blended it just a little).
- 3. Add in the butter and milk, stirring to blend. Add hotdogs and continue heating until the hotdogs are warmed through.
- 4. Ladle into bowls and enjoy!
- 5. Note: If you don't want hotdogs, you can use cooked meatballs (beef, turkey or chicken), or maybe kielbasa. But try it first with the hotdogs!
PENNSYLVANIA DUTCH POTATO FILLING
These potatoes are perfect for Thanksgiving and Christmas! They are my husband's family tradition in Pennsylvania. This is the actual recipe from my husband's great-grandmother. I cut it down by a third for my family of 4. But I have given you the full recipe so you can cut it however you would like. There is a family 'secret ingredient' that I have never been told and so it's not in this recipe :( I believe it will still be yummy without the 'secret,' but if you happen to know what that is, then add it in ;)

- Place the potato cubes into a large pot and cover with salted water. Bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer until tender, about 25 minutes. Drain and allow to steam dry for a minute or two.
- Melt 1/2 cup of butter in a large skillet over medium heat, and cook and stir the onions and celery until they are reduced and browned, about 30 minutes.
- Preheat oven to 350 degrees F (175 degrees C). Grease 2 glass baking dishes, each 9x13 inches.
- Place another 1/2 cup of butter into the work bowl of a stand mixer, and add the cooked potatoes. Start the mixer on Low setting. While mixer is running, pour in 1 cup of milk, and add 1 tablespoon of seasoned salt and 4 slices of torn bread. Mix those ingredients briefly into the mixture, and pour in 1/2 cup of milk and 4 more bread slices. Mix that addition, and then mix in 2 more bread slices.
- After the last 2 bread slices have been roughly incorporated, place another 1/2 cup of butter, 1 tablespoon of seasoned salt, all the onions, celery, and butter from the skillet, and 4 more slices of bread into the mixer bowl. Mix to incorporate, and finally mix in 2 to 4 additional torn bread slices. Allow the mixer to run until the dressing is the desired consistency.
- Place half the dressing into each prepared baking dish, and top the dressing with the remaining 1/2 cup of butter, cut into thin slices and scattered over the top. Sprinkle remaining 1 tablespoon of seasoned salt evenly over the top of the dishes. Cover the dishes with aluminum foil.
- Bake in the preheated oven until the dressing is browned, about 1 hour.

- Cook the onions and celery in 1 tablespoon butter in a medium saucepan over medium heat until softened but not browned.
- Add potatoes and JUST enough water to cook (just barely to the top of the potatoes). Season lightly with salt. Bring to a boil; cover and reduce heat to low. SIMMER until potatoes are tender, about 15 minutes. Watch that you do not boil too hard and cook the pan dry. Do not drain.
- Add the milk, remaining 2 tablespoons butter, salt and pepper to taste. Cook over medium heat just until hot, do not boil.
- Stir in the chopped eggs, serve with another pat of butter on top if desired and sprinkle of parsley and/or black pepper.
