BAKED BULL'S-EYE EGGS



Baked Bull's-Eye Eggs image

Baking (rather than frying) an egg-in-a-hole means you can make many at once -- perfect for serving a group. An array of toppings lets everyone customize their own.

2 tablespoons unsalted butter, room temperature, plus more for sheet
6 slices sandwich bread
6 large eggs
Salt and pepper
Toppings, such as grated cheddar, chopped parsley, sliced avocado, hot sauce, and chopped tomatoes (optional)

Steps:

  • Preheat oven to 375 degrees. Generously butter a nonstick rimmed baking sheet. Butter bread on both sides. With a cookie cutter or drinking glass, cut a 2 1/2-inch round from center of each bread slice. Place slices and rounds on sheet and bake until golden, 6 minutes. Remove from oven and flip bread.
  • Carefully crack 1 egg into center of each slice. Season with salt and pepper. Bake until egg whites are set but yolks are still runny, 8 to 9 minutes, rotating sheet halfway through (sprinkle with cheese, if using, during last 30 seconds of baking). Serve with desired toppings.

American Toad in a hole is one of the first recipes I had my children prepare when they were learning to cook. Much easier than the European version, this fun egg-in-a-hole is sure to please. My "little ones" are now grown (and have advanced to more difficult recipes!), but this continues to be a traditional standby in my home and theirs. -Ruth Lechleiter, Breckenridge, Minnesota

1 slice of bread
1 teaspoon butter
1 large egg
Salt and pepper to taste

Steps:

  • Cut a 3-in. hole in the middle of the bread and discard. In a small skillet, melt the butter; place the bread in the skillet. , Place egg in the hole. Cook for about 2 minutes over medium heat until the bread is lightly browned. Turn and cook the other side until egg yolk is almost set. Season with salt and pepper.

Yummy Eggs and Toast for Breakfast

2 slices of bread
3 teaspoons of butter
2 large eggs
salt & pepper

Steps:

  • Use a cookie cutter to cut out the circle in the center of the bread.
  • Melt butter in a non-stick skillet over medium heat.
  • Place the bread in the skillet and cook on both sides for about 30 seconds or until the bread is nicely browned.
  • Cook the center circles this way as well and set aside.
  • Gently break an egg into each hole and then lightly salt & pepper.
  • Lower the heat a bit and cook for about 2 minutes then flip the bread and cook for another minute on the other side.

1 large Spanish onion
3 tablespoons canola oil
1 tablespoon butter
1/4 pound lox (may be scraps or wings)
8 eggs
Salt and pepper
2 scallions, chopped

Steps:

  • Cut the onion in half, then slice thinly. In a large saute pan, heat the oil over high heat, then saute the onions until lightly colored. In a bowl, beat eggs with a fork, then add to the pan. When the eggs have set on the bottom, scramble in the lox and flip over. Cook and scramble until just set.

1/2 cup milk

  • Add the milk and salt to the beaten egg.
  • Place the bread in a buttered baking dish and baste with the egg and milk.
