If you like those cinnamon waffles from the frozen food department of the grocery store, you'll love these! I developed this recipe because I don't care for syrup. Most waffles need the sweetness of syrup to make them special. These waffles are yummy just as they are; no syrup necessary! Whipped cream and fruit are a great addition if you want to go all out or just add butter and powder sugar to the top. These may brown quicker than standard waffles because of the sugar in them, so test the first one and adjust the time. I have also added 2 tablespoons ground flaxseed; you can't taste a difference. Enjoy!

2 cups all-purpose flour
¼ cup white sugar
½ cup brown sugar
2 ½ teaspoons ground cinnamon
4 teaspoons baking powder
¼ teaspoon salt
1 ¾ cups milk
½ cup vegetable oil
1 teaspoon vanilla extract
2 egg whites
cooking spray

Steps:

  • Whisk flour, white sugar, brown sugar, cinnamon, baking powder, and salt together in a bowl until no lumps remain.
  • Pour milk, vegetable oil, and vanilla extract into the flour mixture; stir until just combined.
  • Beat egg whites until foamy in a large glass or metal mixing bowl until soft peaks form. Lift your beater or whisk straight up: the egg whites will form soft mounds rather than a sharp peak.
  • Fold the the beaten egg whites into the batter.
  • Preheat a waffle iron and coat with cooking spray.
  • Pour batter onto waffle iron in batches and cook until crisp and golden brown, about 2 minutes; repeat until all batter is used.

1 package (1/4 ounce) active dry yeast
1/2 cup warm water (110° to 115°)
1 teaspoon sugar
2 cups warm 2% milk (110° to 115°)
1/2 cup butter, melted
2 large eggs, lightly beaten, room temperature
2-3/4 cups all-purpose flour
1 teaspoon salt
1/2 teaspoon baking soda

Steps:

  • In a large bowl, dissolve yeast in warm water. Add sugar; let stand for 5 minutes. Add the milk, butter and eggs; mix well. Combine flour and salt; stir into milk mixture. Cover and refrigerate overnight. , Stir batter; add baking soda and stir well. Bake waffles in a preheated waffle iron according to manufacturer's directions until golden brown.

I found this recipe in my Oat Cuisine cookbook. I accidently mixed up two recipes and the end result was a spicer waffle. These waffles freeze well and can be reheated in a toaster oven. These are also good topped with sweetened fresh strawberries and then sprinkled lightly with powdered sugar.

4 cups rolled oats
1/4 cup whole wheat flour
4 teaspoons baking powder
2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
1/8 teaspoon ground cloves
4 cups skim milk
3 tablespoons canola oil
2 teaspoons vanilla extract

Steps:

  • The night before: Combine oats, flour, baking powder, and spices.
  • Mix well.
  • Add remaining ingredients and mix until moistened.
  • Cover and chill overnight.
  • In the morning: Spray waffle iron with a non-stick cooking spray and preheat according to manufacturer's directions.
  • Stir batter (it will be thick).
  • Spoon batter onto center of hot waffle iron and bake 4 to 6 minutes.
  • (I use a Belgian Waffle Maker.) Spray the waffle iron before making each waffle.
  • Serve with fresh fruit and vanilla yogurt or maple syrup.

I grew up with homemade waffles fresh and hot from my gramma's waffle iron. My DH has been addicted to the frozen pre-made things that pass for waffles these days A little while back I made real,old fashioned, ones for him using my gramma's iron! He melted with enjoyment but I think I'm now stuck making fresh waffles forever, lol. I found this on AllRecipes as I didn't find a cinnamon waffle recipe here on Food. It's easy to make them as soft or crisp as you like, the longer you leave them in the waffle iron the crisper they will become.

1/2 teaspoon instant yeast
2 cups all-purpose flour
1 tablespoon sugar
1/2 teaspoon salt
2 cups milk
8 tablespoons melted butter
1/2 teaspoon vanilla (optional)
lite olive oil (for brushing the waffle iron) or vegetable oil (for brushing the waffle iron)
2 eggs

Steps:

  • Before going to bed combine the dry ingredients and stir in the milk, then the cooled melted butter and vanilla (if using it).
  • The mixture will be very loose.
  • Cover and let it sit at room temperature overnight.
  • In the morning, separate the two eggs.
  • Stir the yolks into the batter.
  • Beat the whites until they hold soft peaks.
  • Gently stir the whites into the batter.
  • Brush waffle iron with oil lightly and ladle batter on the waffle iron and bake until done (3-5 munutes).
  • Serve or keep warm until all are baked.

  • In a mixing bowl (or the glass liquid measuring cup used to measure and warm milk in microwave) whisk together warm milk, yeast and 1/2 tsp of the sugar. Let mixture rest for 5 minutes.
  • In a large mixing bowl combine remaining sugar, vegetable oil, melted butter, cinnamon, nutmeg, salt, eggs and vanilla and whisk mixture together until well combine.
  • Add rested yeast mixture to butter and oil mixture and mix until well combine. Whisk in 1 cup flour and mix until well blended, then add remaining 1 cup flour and mix until well blended. Scrape down the sides of bowl and cover bowl tightly with plastic wrap and allow mixture to rest in refrigerator 12 hours or up to 24 hours (make sure you use a big mixing bowl so it doesn't overflow into your fridge as the batter rises).
  • After batter has rested, preheat oven to 180 degrees and set a wire cooling rack over a rimmed cookie sheet in center of oven. Preheat an electric waffle iron. Remove batter from refrigerator and whisk well, then prepare waffles according waffle iron manufacturer directions.
