Categories     Dinner

Time 30m

Number Of Ingredients 10

4 boneless center cut pork chops, about ¾-inch thick (about 5 ounces each)
4 teaspoons cornstarch
½ cup dry breadcrumbs
½ cup Corn Flake crumbs ((about 1 ½ cups of whole cereal measured before crushing))
1 teaspoon sugar
1 teaspoon paprika
1 teaspoon onion powder
1 teaspoon salt, plus extra for seasoning the meat
2 tablespoons canola or vegetable oil
1 egg, lightly beaten

Steps:

  • Preheat oven to 400°F. Spray a rimmed baking sheet with cooking spray or line with parchment paper; set aside.
  • Pat pork chops dry and season liberally with salt on both sides. Sprinkle the cornstarch over the pork chops and pat to coat evenly on both sides.
  • In a large, shallow dish, combine breadcrumbs, Corn Flake crumbs, sugar, paprika, onion powder and salt. Drizzle with oil and mash with a fork until the oil is thoroughly incorporated.
  • Lightly beat the egg with a fork in another shallow dish.
  • Dip the pork into the egg, then press into the breading mixture until evenly coated on both sides. (Discard leftover mixture.)
  • Place the pork on the prepared baking sheet. Bake until just barely pink in the center and an instant read thermometer registers 145°F, about 15-20 minutes.

OVEN-FRIED PORK CHOPS RECIPE WITH SWEET POTATOES AND GREEN BEANS

Oven-Fried Pork Chops Recipe with Sweet Potatoes and Green Beans image

This hearty sheet pan supper is a cinch to make, even on the busiest weeknight. The secret to crisp, breaded pork chops? Dredge only one side of each pork chop in the panko mixture to keep the underside of the meat from becoming soggy.

Categories     Pork

Time 55m

Yield Serves 4

Number Of Ingredients 12

3 tablespoons country-style Dijon mustard
1 tablespoon chopped fresh thyme
1 tablespoon chopped fresh rosemary
1 1/2 teaspoons black pepper
3 teaspoons kosher salt, divided
1 cup panko (Japanese-style breadcrumbs)
6 1/2 tablespoons olive oil, divided
4 (12-oz.) 1-inch-thick, bone-in, center-cut pork chops
1 pound sweet potatoes, peeled and cut into 3⁄4-inch pieces (3 cups)
4 shallots, halved
8 ounces haricots verts (French green beans)
1 tablespoon apple cider vinegar

Steps:

  • Preheat oven to 425°F with oven rack 6 inches from heat. Stir together mustard, thyme, rosemary, pepper, and 1 1⁄2 teaspoons of the salt in a small bowl. Reserve 2 teaspoons of the mixture.
  • Stir together panko, 2 tablespoons of the oil, and 1 teaspoon of the salt in a shallow dish. Rub pork chops with mustard mixture, and dredge 1 side of pork in panko mixture, pressing to adhere. Place pork on a baking sheet lined with aluminum foil, with dredged side facing up.
  • Toss together potatoes, shallots, 1 1⁄2 tablespoons of the oil, and remaining 1⁄2 teaspoon salt in a bowl. Arrange potato mixture around pork chops. Bake in preheated oven until a thermometer inserted in thickest portion of pork registers 118°F, 18 to 20 minutes.
  • Increase oven temperature to broil. Toss haricots verts with 1 tablespoon of the oil, and scatter around pork chops. Broil until pork registers 135°F and vegetables are tender, about 5 minutes. Let pork rest 10 minutes (internal temperature will increase to 145°F). Whisk together vinegar, reserved 2 teaspoons mustard mixture, and remaining 2 tablespoons oil; drizzle over vegetables.

EASY OVEN BAKED BEANS AND PORK CHOPS

Easy Oven Baked Beans and Pork Chops image

This is an easy but really tasty pork chop dish --- purchase the thicker size pork chops or you may use 2-3 larger pork steaks, the thinner chops tend to fall apart when baked as they bake too fast, if desired you can top with shredded cheddar cheese the last 15 minutes of baking, also chopped fresh garlic may be added also to the bean mixture -- this may also be cooked in a crockpot, just brown the chops firstly in a skillet.
