Steps:
- Preheat oven to 400ºF and line a rimmed baking sheet with a piece of parchment paper. Lightly oil the parchment paper.
- Heat olive oil in a skillet over medium heat. Once hot add beef and cook until no longer pink, about 4-6 minutes. Drain any excess fat.
- Add the paprika, chili powder, garlic powder, onion powder, salt and pepper and cook for 1 minute. Shut off the heat, and let cool slightly before transferring the mixture to a bowl.
- Add the refried beans and shredded cheese to the bowl and mix together until well combined.
- Warm tortillas up either in a hot cast-iron skillet or in the microwave until malleable. Place 1 tortilla down on a flat surface and fill it with about 1/4 cup of the beef mixture off to the side. Roll up the tortilla tightly and place it, seam side down on the baking sheet. Continue until all of the filling has been used up.
- Lightly oil the tops of the tortillas.
- Bake on the lowest rack in the preheated oven for 15-20 minutes, flipping halfway though, until the tortillas are lightly crisp and the filling is melty.
- Serve taquitos as desired with optional garnishes of chopped lettuce, tomato, queso fresco, cilantro and hot sauce!

EASY BEEF TAQUITOS
Like tacos, only neater to eat, taquitos have plenty of kid appeal. In Mexico, they're often deep-fried, but baking them works well too. It's easier and healthier, and the tortillas still turn golden brown and crispy around the edges. Served with salsa, guacamole and sour cream, they make a quick and satisfying lunch or dinner.

- Shred zucchini using the large holes of a box grater. Squeeze dry in a clean kitchen towel (you should have about 2 cups). Heat oil in a large nonstick skillet over medium-high heat. Add the zucchini, beef, chili powder, onion powder, cumin and salt. Cook, stirring, until the beef is cooked through, 5 to 7 minutes.
- Spread tortillas out on a baking sheet in two overlapping rows. Bake until hot, 2 minutes. Transfer to a plate and cover.
- Coat the baking sheet with cooking spray. Place 6 tortillas on a clean cutting board. Working quickly, spread a generous 1/4 cup beef mixture along the bottom third of a tortilla, sprinkle with about 1 tablespoon cheese and tightly roll into a cigar shape. Place the taquito seam-side down on the baking sheet. Repeat with the remaining tortillas, filling and cheese. Generously coat the top and sides of the taquitos with cooking spray.
