Steps:

  • Lightly grease 9x13 glass casserole dish and line with dried beef.
  • Wrap bacon around chicken breasts and lay on dried beef.
  • Mix sour cream and chicken soup together and pour over chicken.
  • Cook for 1 hour at 350 degrees or until tender.

Steps:

  • Lay chicken flat in a greased 9x13 pan.
  • Lay sliced onions over the chicken.
  • Mix one cup of water with the cream of chicken soup. Pour this over the chicken.
  • Sprinkle the gravy powder over the top.
  • Pour the rest of the water over everything.
  • Top with parmesan cheese.
  • Cover and bake for 10 minutes at 425º Fahrenheit.
  • Then uncover and bake for an additional 20-30 minutes.

1 (4.5 pound) whole chicken
1 tablespoon olive oil
2 tablespoons all-purpose flour

Steps:

  • Arrange a rack in lower third of oven with no racks above it; preheat oven to 425 degrees F. Place potatoes, carrots, thyme and rosemary in a 12-inch cast iron or other oven-safe deep skillet. Season with salt and pepper and pour in 1 cup of stock. Rub skin of chicken with olive oil, then season with salt and pepper. Place chicken breast-side-up on top of vegetables.
  • Roast chicken, basting with the pan juices every 20 minutes, about 60 to 75 minutes or until internal temperature reaches 165 degrees F. Transfer chicken to a platter, draining juices from the cavity of the chicken into the pan. Using a slotted spoon, remove vegetables and arrange around chicken on the serving platter.
  • Bring pan drippings to a simmer over medium heat. Add flour and whisk constantly for 1 minute. Add 1 cup of stock and whisk until smooth. Simmer until thickened, about 2 minutes. If too thick, whisk in additional stock 2 Tbsp. at a time until desired consistency is reached. Add cream, if desired, and season with salt and pepper to taste. Carve the chicken and serve with the vegetables and gravy.

1 (10 1/2 ounce) can 98% fat-free cream of chicken soup, undiluted
8 ounces nonfat sour cream
1 (3 ounce) jar 95% fat-free dried beef (I use Hormel)
10 ounces skim milk
24 ounces boneless skinless chicken breasts
1/4 cup frozen green pea, thawed (optional)

Steps:

  • Spray 2-quart glass casserole baking disk with non-stick cooking spray.
  • Preheat oven to 250 degrees.
  • Mix soup, sour cream and milk together in a large bowl.
  • Set aside.
  • The dried beef comes rolled inside of a glass jar.
  • Leave it rolled up and cut into thin slices, then cut slices in half.
  • Lay dried beef in the bottom of the prepared casserole.
  • Place chicken on top in single layer.
  • Pour soup mixture over chicken, being sure to cover the top of the chicken, even if some of mixture runs back into pan.
  • Bake uncovered for 1-1/2 hours.
  • Remove from oven and scrape the sauce from the sides of the casserole and mix it with the unbrowned sauce, spreading some sauce over the chicken.
  • Return casserole to the oven and cook an additional 60-90 minutes, until sauce around chicken has browned slightly and is consistency of gravy.
  • Serve chicken and gravy over cooked rice or pasta.
  • To garnish, microwave peas 30 seconds; sprinkle over the chicken and rice/or pasta.
  • NOTE: If sauce thickens too much before chicken has cooked at least 2-1/2 hours, add 1/4 cup water.
  • Stir into gravy and continue cooking.
  • NOTE: For Real gravy-lovers, double the soup, sour cream and milk so you'll be sure to have enough!
  • This gravy is also delicious served over biscuits.

1 cup water
2 teaspoons chicken bouillon granules
1 teaspoon dried rosemary
1 teaspoon dried sage
1 teaspoon garlic salt

1 cup salted butter
1 cup all-purpose flour
9 cups chicken broth
1 teaspoon salt

Steps:

  • Combine chicken, water, bouillon, rosemary, sage, garlic salt, and 1/2 teaspoon pepper in a slow cooker.
  • Cook on Low until chicken is no longer pink in the center and the juices run clear, about 4 hours. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
  • Shred chicken with 2 forks and leave in the slow cooker on Low.
  • Melt butter in a medium saucepan over medium heat. Whisk in flour and stir until the mixture becomes paste-like and light golden brown, about 5 minutes. Gradually whisk chicken broth into the flour mixture, and bring to a simmer over medium-high heat. Add salt and remaining 1/2 teaspoon pepper and cook until gravy thickens, 15 to 20 minutes.
  • Combine gravy and shredded chicken and serve.

What more can we say? A classic roast chicken recipe should be in everyone's repertoire, and it can always save the day

1 onion, roughly chopped
2 carrots, roughly chopped
1 free range chicken, about 1.5kg/3lb 5oz
1 lemon, halved
small bunch thyme (optional)
25g butter, softened
1 tbsp plain flour
250ml chicken stock (a cube is fine)

Steps:

  • Heat oven to 190C/fan 170C/gas 5. Have a shelf ready in the middle of the oven without any shelves above it.
  • Scatter 1 roughly chopped onion and 2 roughly chopped carrots over the base of a roasting tin that fits the whole 1 ½ kg chicken, but doesn't swamp it.
  • Season the cavity of the chicken liberally with salt and pepper, then stuff with 2 lemon halves and a small bunch of thyme, if using.
  • Sit the chicken on the vegetables, smother the breast and legs all over with 25g softened butter, then season the outside with salt and pepper.
  • Place in the oven and leave, undisturbed, for 1 hr 20 mins - this will give you a perfectly roasted chicken. To check, pierce the thigh with a skewer and the juices should run clear.
  • Carefully remove the tin from the oven and, using a pair of tongs, lift the chicken to a dish or board to rest for 15-20 mins. As you lift the dish, let any juices from the chicken pour out of the cavity into the roasting tin.
  • While the chicken is resting, make the gravy. Place the roasting tin over a low flame, then stir in 1 tbsp flour and sizzle until you have a light brown, sandy paste.
  • Gradually pour in 250ml chicken stock, stirring all the time, until you have a thickened sauce.
  • Simmer for 2 mins, using a wooden spoon to stir, scraping any sticky bits from the tin.
  • Strain the gravy into a small saucepan, then simmer and season to taste. When you carve the bird, add any extra juices to the gravy.

3 tablespoons unsalted butter
1/4 pound dried beef, pulled apart into shreds (Knauss brand is good)
2 tablespoons flour
2 cups milk
4 slices country bread or 4 buttermilk biscuits

Steps:

  • In a skillet, heat the butter until foamy. Add the dried beef and fry until edges are browned. Sprinkle with flour, stirring to coat beef with flour. Cook until flour is just starting to color, then slowly add milk, stirring to smooth any flour bits and thicken sauce. Bring to a boil and cook until there is no longer any taste of flour. Meanwhile, toast the bread. Place the toast or warm biscuits on plates and spoon gravy on top. Serve.

¼ cup drippings from a roast chicken
2 ½ tablespoons all-purpose flour
2 cups cold chicken stock, or more if needed

Steps:

  • Pour fat from drippings into a bowl and reserve. Whisk flour into remaining drippings left in pan; mixture will seem dry. Add 2 tablespoons reserved fat, or as needed, to the drippings mixture to combine with flour.
  • Place pan of drippings mixture over low heat and toast flour until light brown and mixture gives off a nutty fragrance, about 5 minutes.
  • Drizzle about 1/3 cup cold chicken stock at a time into pan drippings, whisking each addition of stock into mixture until thoroughly combined. Continue whisking, scraping any browned pan drippings from the bottom of the pan into gravy; bring to a simmer. Continue to cook, whisking constantly, until gravy is thick and flour has combined with the liquid, 8 to 10 minutes.
  • Adjust thickness of gravy; if too thick, whisk in a little more stock. If gravy is too thin, continue to simmer, whisking constantly, until reduced and thickened, about 10 more minutes. For the smoothest texture, strain gravy before serving.

For the chicken
1 whole chicken, cut into parts
milk
1 stick (1/4 pound) butter
1 cup flour
1 tablespoon seasoned salt
2 teaspoons paprika
3/4 teaspoon pepper
1/2 teaspoon salt
For the gravy
2 tablespoons chopped scallion
1/2 cup chopped fresh mushrooms
3 tablespoons butter and drippings from baking dish, combined with scraped up crispy bits from chicken
2 tablespoons of the leftover flour seasoned for chicken preparation
1 cup milk
1 chicken bouillon cube (optional)

Steps:

  • Make chicken:
  • Soak chicken in milk to cover for 20 to 30 minutes. Spray a baking dish (one that will accommodate all the chicken pieces comfortably in one layer) with nonstick vegetable-oil spray.
  • Preheat oven to 400°F. Put the butter in the baking dish and heat it in the oven until the butter melts. Mix flour and seasonings together in paper sack or plastic baggie (1-gallon size). Shake each piece of chicken in seasoned flour. Place chicken pieces, skin-side down, in baking dish. Bake for 20 minutes. Turn chicken over and bake an additional 20 minutes or until cooked through and crispy. Remove chicken and set aside in a warm place.
  • Make gravy:
  • Sauté the scallions and mushrooms in the drippings over medium high heat, until soft. Mix the seasoned flour with milk first until you see no lumps. Whisk milk mixture into the sautéing onions and mushrooms. Taste and add bouillon cube, if desired (You may want to use additional milk if you do). Boil until thickened to preferred consistency. Put into a gravy dish and serve alongside the baked chicken.

1 cut up whole chicken (8 pieces)
1/4 cup vegetable oil
1/4 cup butter
1 cup flour
1 teaspoon paprika

Steps:

  • Place the chicken in salted water for 15-20 minutes.

  • Combine flour and seasonings in a plastic bag.
  • Shake pieces of chicken in flour mixture.
  • Remove hot pan from oven and arrange chicken pieces on it, skin side down being sure not to crowd.
  • Place pan in oven and bake 30 minutes.
  • Turn chicken so that the skin side is up and continue to bake 20 to 30 minutes more until nicely browned and juices run clear.
  • Remove to a platter and keep warm allowing to rest for at least 10 minutes.
  • For gravy, scrape baking pan and place 3 tablespoons of the accumulated cooking fat and browned bits into a saucepan.
  • Stir in 3 tablespoons of flour and cook 1-2 minutes until well combined.
  • Stir in 2 cups chicken broth and continue cooking and whisking until gravy boils and thickens.
  • Cook for about 2 minutes.
  • Season with salt and pepper if necessary.
