JERK PLANTAIN CHIPS

Number Of Ingredients 4

3 green plantains
Coconut oil spray
1 tablespoon jerk seasoning
1 teaspoon kosher salt

Steps:

  • Preheat the oven to 400 degrees F. Line two baking sheets with parchment paper or wire racks.
  • Trim the ends of the plantains. Score the skin lengthwise in three spots and peel. With a mandoline or sharp knife, slice the plantains crosswise about 1/8-inch thick.
  • Arrange the plantain slices on the prepared baking sheets and spray generously with coconut oil spray. Season with 1/2 tablespoon of the jerk seasoning and 1/2 teaspoon of the salt. Turn over the slices and repeat with coconut oil spray and the remaining 1/2 tablespoon jerk seasoning and 1/2 teaspoon salt.
  • Bake for 10 minutes, then spray the tops of the plantains a second time with coconut oil spray. Rotate the baking sheets from top to bottom and continue baking until the plantains are golden and crisp, another 10 to 15 minutes. Cool on the baking sheets before serving.

These plantain chips make a great snack or appetizer for a Cuban-themed meal. If you are unable to find green (unripe) plantains, use very green bananas instead.

2 pounds plantains or green bananas, scored, peeled, and thinly sliced on the diagonal
1/4 cup vegetable oil
Coarse salt and ground pepper
Pico de Gallo with Plantain Chips, for serving (optional)

Steps:

  • Preheat oven to 350 degrees, with racks in upper and lower thirds. Divide plantains between two rimmed baking sheets. Toss with oil, then arrange in a single layer on sheets. Season with salt and pepper. Bake until golden and crisp, 30 to 35 minutes, rotating sheets and flipping plantains halfway through. Drain plantains on paper towels. Serve with Pico de Gallo, if desired.

  • The first thing you want to do is to peel 2 green plantains. This can be a little time consuming since under-ripened green plantains don’t peel as well as bananas. I find it easiest to make a few slits lengthwise to help guide the peeling of the plantain.
  • You may also want to put on a pair of rubber gloves because the plantains can make your fingers black.
  • Once your plantain is peeled, cut it into 1/8 inch thick slices. You can do this with a sharp knife or use a vegetable slicer or mandolin. Keep in mind, the thinner the slices, the faster they will bake.
  • Now place the sliced plantains into a Large bowl and pour 2 tablespoons of unrefined sunflower oil, 1/4-1/2 teaspoons salt, and 1/8 teaspoon black pepper. Use your clean hands to give it a good mix.
