This is how the pros make pizza sauce. It's easy with no cooking required. This red sauce has rich tomato flavor. It's also perfect as a dip for breadsticks or pizza crust.

PIZZA WITHOUT THE RED SAUCE
I do not like red sauce but pizza is one of my favorite foods. So I came up with this good alternative to traditional red sauce pizza. It still has a light tomato taste.

Steps:
- Preheat oven according to pizza crust package directions.
- In a small bowl combine butter, olive oil, garlic, pesto, basil, oregano and Parmesan cheese. Spread mixture evenly on pizza crust.
- Arrange tomato, spinach, onion and jalapeno on pizza. Top with crumbled feta cheese.
- Bake according to pizza crust package directions.

FRIED CALAMARI WITH SPICY RED SAUCE

Steps:
- Add the olive oil to a medium pot over medium heat. Once it's hot, add the onions and garlic and cook until the onions are translucent, 3 to 4 minutes. Add the tomato paste and red pepper flakes and stir until the tomato paste is thoroughly incorporated. Add the crushed tomatoes to a food mill and process the tomatoes directly into the pot. Add the grated carrots and season with kosher salt. Reduce to low heat and simmer for 20 minutes. Adjust the seasoning as needed. Cover and put aside to keep warm.
- Heat the canola oil in a large Dutch oven or large heavy-bottomed pot over medium-high heat to 350 degrees F. Line a sheet tray with paper towels.
- Add the rice flour, semolina flour, pepper and 2 teaspoons kosher salt to a large shallow dish and mix until thoroughly combined. Working in 3 batches, toss the calamari, pickled pepper slices and rosemary sprigs in the seasoned flour, then scoop them out with a pasta spider and shake off the excess; transfer to the oil. Fry for 90 seconds, then remove to the paper towels and season with flaky sea salt. Repeat until all the calamari is cooked.
- Serve with the lemon wedges and spicy marinara on the side.
MAUI ONION PIZZA
Steps:
- Preheat the oven with a baking stone to 500 to 700 degrees F.
- Spread the pizza dough into an 11-inch round on a work surface. Spread with aioli, garlic, mozzarella, onions and rosemary.
- Bake until crust is firm and golden brown, 3 to 5 minutes.
- Apply Parmesan to the pizza and top with truffle salt. Cut and serve hot!
CLASSIC RED SAUCE

- Puree the tomatoes to a smooth, creamy consistency in a food processor or with an immersion blender. (If you like a more country feel, you can wait and break them up in the pan later with a wooden spoon.)
- Heat the olive oil over medium-high heat in a large saucepan. When hot, add the onion and saute 5 to 6 minutes, or until soft. Add the garlic and cook 2 to 3 minutes, until you see the color start changing. If you'd like to make the sauce spicy, add the red pepper flakes.
- Add the tomatoes and season with salt and pepper to taste. Reduce the heat to medium low and simmer about 30 minutes. (If you did not puree the tomatoes, use a wooden spoon to break them into pieces while they cook.) Strive for balance in the consistency of the sauce: It has to be fluid, but it should not look overly wet. Add the basil and remove from the heat. Toss with just-cooked pasta.
RED SAUCE FOR PIZZA
The only trick to this uncooked sauce is finding good canned tomatoes: If you can't find Jersey Fresh, look for ones from California, New Jersey, or Italy-the only ingredients should be tomatoes and salt.

- Whisk garlic, tomatoes, oil, and salt in a medium bowl. Don't be tempted to add more salt; the flavor will concentrate when sauce is baked with pizza. Cover and chill 3 hours to let flavors come together before using.
