½ cup diced yellow onion
16 oz or fresh mushrooms of your choice, halved or quartered depending on size white button mushrooms
⅓ cup or burgundy wine red wine
1 tbsp unsalted butter
to taste salt and ground black pepper
chopped parsley

Steps:

  • Melt the butter over a skillet on medium heat. Add the onions and saute briefly until translucent.
  • Add the mushrooms and saute for roughly 8 minutes until caramelized.
  • Deglaze with red wine of your choice and reduce briefly for 5 to 8 minutes.
  • Season with salt and ground black pepper to taste.
  • Serve immediately, garnished with parsley.

These Outback Steakhouse-style fried mushrooms are dipped in buttermilk to bring out their delicious flavor.

½ cup whole wheat flour
½ tsp salt
½ tsp black pepper
¼ tsp dry mustard
¼ tsp paprika
½ cup buttermilk
for deep frying vegetable oil

Steps:

  • Combine whole-wheat flour, dry mustard, paprika, black pepper, and salt in a large ziplock bag. Alternatively, you can use a regular bowl or a paper bag when mixing the ingredients.
  • Place the buttermilk in a bowl. Dip the mushrooms at a time.
  • Place the mushrooms in the bag with the mixture.
  • Shake the bag to coat the mushrooms.
  • Heat 2 to 3 inches of oil in a deep fryer or saucepan at 375 degrees F.
  • Fry several mushrooms at a time until they turn golden brown on all sides.
  • Serve immediately and enjoy!
