1/3 cup egg substitute
1 can (6 ounces) tomato paste, divided
2 tablespoons Dijon mustard
2 teaspoons prepared horseradish, divided
1/2 cup quick-cooking oats
1 envelope onion soup mix
1-1/2 teaspoons garlic powder
1 teaspoon steak seasoning
1 pound lean ground beef
1/2 pound lean ground turkey
1 teaspoon water
1/2 teaspoon sugar

Steps:

  • In a large bowl, combine the egg substitute, 1/2 cup tomato paste, mustard, 1 teaspoon horseradish, oats, soup mix, garlic powder and steak seasoning. Crumble beef and turkey over mixture and mix well. , Shape into a loaf and place in an 11x7-in. baking dish coated with cooking spray. Combine the water, sugar, remaining tomato paste and remaining horseradish; spread over meat loaf., Bake, uncovered, at 350° for 45-55 minutes or until a thermometer reads 165°. Drain if necessary.

Number Of Ingredients 15

1/2 lb ground beef
1/2 lb ground veal
1/2 lb ground pork
2 c fresh bread crumbs, cubed
1 c milk
1 egg, beaten
1 Tbsp worcestershire sauce
1/4 c minced onion
1 1/4 tsp salt
1/4 tsp freshly ground pepper
1/4 tsp dry mustard
1/4 tsp dried sage
1/4 tsp celery salt
1/4 tsp garlic salt
3 Tbsp ketchup

Steps:

  • 1. Heat oven to 350. Spray 9x5" loaf pan with cooking spray.
  • 2. In large bowl, combine beef, veal, pork and bread cubes; mix well. In another large bowl, combine milk, egg and Worcestershire sauce; mix well. Pour milk mixture into beef mixture; mix well.
  • 3. In small bowl, combine onion, salt, pepper, mustard, sage, celery salt and garlic salt; mix well. Stir into meat mixture.
  • 4. Form mixture into loaf pan; drizzle with ketchup. Bake 1 hour and 15 minutes or until internal temp reaches 160 degrees.

This is the good ol' meat loaf I grew up with. I didn't think there was any other kind for years. I was kind of shocked when my mother admitted that she got the recipe from the Quaker Oats box. But who cares? It's easy and it's GOOD! I believe she often served it with baked beans on the side.

1 1/2 lb ground beef (i use chuck)
3/4 c quick-cooking oats
1/4 c chopped onion
1 1/2 tsp salt
1/4 tsp pepper
1 c tomato juice
1 egg, beaten

Steps:

  • 1. In a large bowl, combine all the ingredients. Pack firmly into an ungreased loaf pan.
  • 2. Bake in a preheated 350-degree oven for 1 hour and 15 minutes. Pour off any grease.
  • 3. Let stand 5 minutes before slicing. I like mine with a little ketchup. Some like A-1, mustard, or even plain.

1 (10 1/2 ounce) can condensed vegetable beef soup, undiluted
1 egg
1/4 cup breadcrumbs
2 lbs ground beef

Steps:

  • Preheat oven to 350 degrees Fahrenheit.
  • Drain the sauce from the vegetables/pasta of the vegetable-beef soup and reserve.
  • In a large bowl, stir together the egg, vegetables/pasta from the soup, and breadcrumbs.
  • Add the ground beef and mix until well blended.
  • Shape meat mixture into a rounded loaf shape and place in a baking dish.
  • Pour reserved sauce from the soup over the loaf.
  • Bake, uncovered, at 350 degrees Fahrenheit for 1 hour.

I don't really like meatloaf at all, but when mom made this one, she really had a hit with the entire family! Not your typical meatloaf -- very tasty! Use fresh sausage, not frozen! Use more crackers if the loaf seems too moist before cooking. Excellent for sandwiches the next day!!

1 tablespoon olive oil
1 large red bell pepper, diced
1 large onion, diced
2 large garlic cloves, minced fine
1 lb sweet Italian sausage link, casings removed
1 lb ground chuck
2 large eggs
1 1/2 cups fresh breadcrumbs
1/3 cup grated parmesan cheese
1 (8 ounce) can tomato sauce
1/2 teaspoon salt
1/2 cup shredded mozzarella cheese (2 oz) or 1/2 cup Fontina cheese (2 oz)

Steps:

  • In nonstick large skillet, heat olive oil over medium heat.
  • Add red peppers and onions and cook until tender and lightly browned, 10-15 minutes, stirring occasionally.
  • Add garlic and cook for 1 minute, stirring. Set vegetables aside to cool slightly.
  • Preheat oven to 375°F.
  • In large bowl, mix sausage meat, ground beef, eggs, bread crumbs, parmesan, tomato sauce, salt and cooked vegetables just until well combined, but not over mixed.
  • In 13" by 9" ungreased metal baking pan (I use silicon pans), shape meat mixture into 9" by 5" loaf. Bake for 1 hour.
  • Sprinkle mozzarella or fontina cheese down center of loaf in a 2-inch-wide strip and bake for 10 minutes longer.
  • Let meatloaf stand 10 minutes before slicing.

A slight variation on Tyler Florence's "Dad's Meatloaf." After my sister raved about it, I tried my hand at it and it was a hit. This is a healthier version with less fat and one less egg yolk.

1/2 lb lean ground beef
1/2 lb ground veal
1/2 lb ground lean pork
1 egg
1 egg white
4 ounces fresh whole wheat bread crumbs
3 garlic cloves, chopped
2 tablespoons olive oil
1 ounce dried parsley
4 large tomatoes
3 red peppers
2 onions
4 ounces ketchup

Steps:

  • For the tomato relish, chop tomatoes, peppers, and onions into a medium dice. Saute over high heat. Finish with ketchup. Lower heat. Reduce to a simmer.
  • For the Meatloaf, in a large mixing bowl, using a fork, combine 1/2 cup of the tomato relish, the ground meats, egg and egg white, bread crumbs, garlic and skim milk.
  • Finish with olive oil, and then lightly pack into a 9-inch loaf pan.
  • Cover with half the remaining relish and place in the middle of a preheated 350 degree oven.
  • Bake for 45 minutes to one hour or until the center of the meat loaf reaches 170 degrees.
  • Allow meatloaf to cool 15 minutes before slicing.
  • Serve with additional relish.

2 lb. extra-lean ground beef
1 pkg. (6 oz.) STOVE TOP Stuffing Mix for Chicken
1 cup water
2 egg whites
3/4 cup HEINZ Tomato Ketchup, divided
1/2 cup KRAFT 2% Milk Shredded Sharp Cheddar Cheese

Steps:

  • Cook onions in dressing in skillet on medium heat 8 to 10 min. or until golden brown, stirring frequently. Cool slightly.
  • Heat oven to 375°F. Mix meat, stuffing mix, water, egg whites, 1/4 cup ketchup and onions just until blended; shape into 10x5-inch loaf in 13x9-inch baking dish sprayed with cooking spray. Cover with remaining ketchup.
  • Bake 55 min. to 1 hour or until done (160°F). Sprinkle with cheese; bake 2 min. or until melted.
