YELLOW PEPPER ORZO GRATIN

Number Of Ingredients 10

1/2 pound orzo (rice-shaped pasta, about 1 1/8 cups)
1 pound yellow bell peppers, chopped (about 3)
1/2 cup dry white wine
1/2 cup low-salt chicken broth
1/4 teaspoon salt
1 large egg
1/4 teaspoon olive oil for oiling baking pan
2 scallions, minced
2 tablespoons chopped fresh chives
2 tablespoons freshly grated Parmesan

Steps:

  • In a 4-quart saucepan bring 3 quarts salted water to a boil for orzo.
  • In a heavy saucepan simmer bell peppers in wine and broth with salt, covered, until tender, about 15 minutes. Remove lid and simmer until liquid is evaporated. Cool pepper mixture and in a food processor or blender purée with egg. Transfer pepper mixture to a large bowl.
  • Preheat oven to 350° F. and lightly oil an 8-inch square baking pan with the oil.
  • Cook orzo in boiling salted water until al dente and drain in a colander. Rinse orzo under cold water and drain well. Stir orzo into pepper mixture with scallions, chives, 1 tablespoon Parmesan, and salt and pepper to taste. Spread orzo in baking pan, smoothing top, and sprinkle with remaining tablespoon Parmesan. Gratin may be prepared up to this point 8 hours ahead and chilled, covered.
  • Bake gratin in middle of oven 25 to 30 minutes, or until set and top is pale golden.

1/2 pound orzo
1 cup minced onion
1/2 cup diced fennel
2 tablespoons unsalted butter
1 16-ounce can plum tomatoes, drained and chopped
1 cup light cream combined with 1 tablespoon flour
1 tablespoon minced fresh rosemary or 1 teaspoon dried, crumbled
2/3 cup sliced sun-dried tomatoes
1/3 cup sliced pitted oil-cured olives
1/2 pound fresh Mozzarella, diced
2 tablespoons minced fresh basil
1/3 cup freshly grated Parmesan

Steps:

  • Preheat oven to 400 degrees. In a pot of boiling salted water cook the orzo until al dente and drain. Transfer to a large bowl. In a large skillet cook the onion and fennel in the butter over moderately low heat, covered, for 5 minutes. Add the tomatoes, cream mixture, rosemary and salt and pepper and simmer the mixture for 5 minutes. Add the vegetables to the bowl containing the orzo and stir in the sun-dried tomatoes, olives, all but 1/4 cup of the mozzarella cheese, basil and salt and pepper to taste. Transfer the mixture to a buttered 1-quart baking dish and sprinkle with the remaining Mozzarella and Parmesan. Bake for 30 minutes, or until golden brown.

1 cup orzo pasta
¼ cup butter
2 teaspoons minced garlic
¼ cup Parmesan cheese
2 tablespoons milk
1 tablespoon chopped fresh parsley
½ teaspoon salt and ground black pepper

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook orzo in the boiling water, stirring occasionally until cooked through but firm to the bite, about 11 minutes. Drain.
  • Melt butter in a skillet over medium heat; cook and stir garlic in melted butter until lightly browned, about 5 minutes. Stir orzo into garlic mixture and mix in Parmesan cheese, milk, parsley, salt, and black pepper.

16 ounce(s) package orzo
6 clove(s) garlic
1 cup(s) whipping cream
1 cup(s) chicken broth
1 1/4 cup(s) fresh parsley, minced, divided
1 cup(s) parmesan cheese, freshly grated, divided
- salt, to taste
- pepper, to taste
1/4 cup(s) fine, dry breadcrumbs
3 tablespoon(s) unsalted butter

Steps:

  • Bring water to a boil in a large Dutch oven. Add orzo and garlic, and return to a boil; cook 10 minutes. Drain, rinse in cold water, and drain again. Remove garlic; peel and crush garlic. Set orzo aside.
  • Combine garlic and whipping cream in a large bowl; beat with a wire whisk until blended. Add orzo, chicken broth, 1 cup minced parsley, 3/4 cup Parmesan cheese, and salt and pepper to taste; stir well.
  • Place mixture in a greased 2-quart baking dish. Combine breadcrumbs, remaining 1/4 cup parsley, and remaining 1/4 cup Parmesan cheese; stir well. Sprinkle the crumb mixture over the orzo mixture. Dot with butter. Bake at 325° for 1 hour and 15 minutes or until golden brown.

  • Pre-heat oven at 425 degree Fahrenheit. Spray 9.5 inch baking dish with oil spray. Set aside. In a bowl, add orzo, 1/4 cup parmesan cheese, chili flakes, oregano, basil, 1/2 tsp salt, lemon zest, 1/2 tsp black pepper, and grated garlic. Mix well. Set aside.
  • If using *tomato/pesto sauce then spread sauce evenly in baking dish in single layer. Next, gently spread orzo mixture evenly on top in single layer. Drizzle a tbsp of olive oil and a tbsp of lemon juice on top. Set aside.
  • Top orzo layer with sliced zucchini, squash, tomato and red onion. Arrange in alternately, starting with zucchini, squash, tomato and repeat to complete a spiral. (as shown in picture)
  • Slowly pour a cup of chicken stock (or vegetable stock) on top. Make sure not to disturb the layers. Drizzle remaining 1 tbsp olive oil on top of sliced veggies, then season with generous pinch of salt and black pepper. Bake until liquid in orzo has been absorbed. (about 20 minutes)
