GARLIC PARMESAN ORZO SIDE DISH



Garlic Parmesan Orzo Side Dish image

This easy garlic parmesan orzo side dish is perfect for something quick to go with dinner.

1 Tablespoon butter
3 garlic cloves (minced)
1 pound orzo pasta
1/4 cup white wine
3½ cups chicken stock
1 cup parmesan cheese (shredded, plus more for serving)
dash crushed red pepper flakes ((optional))

Steps:

  • In a small pot, melt the butter. Saute the minced garlic just until you can smell it then add in the orzo pasta. Cook it until it begins to smell toasty and looks shiny and semi-translucent.
  • Stir in the white wine and cook until it is almost gone. (This is called au sec.) Pour in the chicken stock and cook for about 15 minutes, stirring often. Cook until a thick sauce is made and pasta is al dente. It will absorb most of the chicken broth.
  • Stir in the shredded parmesan cheese until melted, season with salt and pepper and serve with optional crushed red pepper.

1 lb orzo pasta
6 tablespoons salted butter
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 cup white wine
1/2 cup parmesan cheese

Steps:

  • Boil pasta according to box.
  • Strain pasta and return to pot.
  • Add Sherry (or other dry white wine of your choice) and cook down for 1-3 minutes while stirring
  • Add in salt and pepper to taste and then the Parmesan cheese.

Steps:

  • Cook 2 cups sliced Tuscan kale in olive oil in a nonstick skillet over medium-high heat, 2 minutes. Add 2 sliced garlic cloves and cook 1 minute; season with salt and pepper. Add 2 cups vegetable broth and 1/2 cup heavy cream; bring to a simmer. Stir in 1 cup orzo and cook 9 minutes. Stir in 3 ounces baby spinach. Turn off the heat; stir in 3/4 cup grated Parmesan and 1 tablespoon each lemon zest and juice. Season with salt and pepper. Drizzle with olive oil.

4 cups chicken broth
1 1/2 cups orzo
1 (15-ounce) can garbanzo beans, drained and rinsed
1 1/2 cups red and yellow teardrop tomatoes or grape tomatoes, halved
3/4 cup finely chopped red onion
1/2 cup chopped fresh basil leaves
1/4 cup chopped fresh mint leaves
About 3/4 cup Red Wine Vinaigrette, recipe follows
Salt and freshly ground black pepper
1/2 cup red wine vinegar
1/4 cup fresh lemon juice
2 teaspoons honey
2 teaspoons salt
3/4 teaspoon freshly ground black pepper
1 cup extra-virgin olive oil

Steps:

  • Pour the broth into a heavy large saucepan. Cover the pan and bring the broth to a boil over high heat. Stir in the orzo. Cover partially and cook until the orzo is tender but still firm to the bite, stirring frequently, about 7 minutes. Drain the orzo through a strainer. Transfer the orzo to a large wide bowl and toss until the orzo cools slightly. Set aside to cool completely.
  • Toss the orzo with the beans, tomatoes, onion, basil, mint, and enough vinaigrette to coat. Season the salad, to taste, with salt and pepper, and serve at room temperature.
  • Mix the vinegar, lemon juice, honey, salt, and pepper in a blender. With the machine running, gradually blend in the oil. Season the vinaigrette, to taste, with more salt and pepper, if desired.
  • Yield: 1 3/4 cups

8 ounces orzo pasta (rice-shaped pasta)
6 tablespoons olive oil
1 cup crumbled feta cheese
1/4 cup freshly grated parmesan cheese
2 tablespoons chopped fresh basil
1/4 cup chopped fresh basil
1 lb uncooked medium shrimp, peeled, deveined
2 garlic cloves, chopped
1 (14 1/2 ounce) can diced tomatoes with juice
1/2 cup dry white wine
2 teaspoons dried oregano
1/2 teaspoon dry crushed red pepper

Steps:

  • Preheat oven to 400°F
  • Brush 11x7-inch glass baking dish with oil.
  • Cook orzo according to package directions.
  • Drain well and return orzo to same pot.
  • Add 2 tablespoons olive oil, 1/4 cup feta cheese, Parmesan cheese, and 2 tablespoons basil; stir to blend.
  • Arrange orzo mixture in prepared dish.
  • Heat 2 tablespoons oil in large skillet over medium-high heat.
  • Add shrimp and sauté until slightly pink, about 2 minutes (shrimp will not be cooked through).
  • Arrange shrimp atop orzo.
  • Add remaining 2 tablespoons oil to same skillet.
  • Add garlic and sauté over medium-high heat 30 seconds.
  • Add tomatoes with juice; cook 1 minute.
  • Stir in wine, oregano, crushed red pepper, and remaining 1/4 cup basil.
  • Simmer uncovered until reduced to thick sauce consistency, stirring occasionally, about 2 minutes.
  • Season sauce to taste with salt and pepper; spoon over shrimp.
  • Bake orzo until heated through, about 10 minutes.
  • Sprinkle with remaining 3/4 cup feta cheese and serve.

½ cup extra-virgin olive oil
½ cup red wine vinegar
½ lemon, juiced

  • Bring a large pot of lightly salted water to a boil. Cook orzo in the boiling water, stirring occasionally until tender yet firm to the bite, about 9 minutes. Drain well. Rinse with cold water and drain well again.
  • Combine orzo, cherry tomatoes, red onion, cucumber, olives, and Asiago cheese in a large bowl.
  • Whisk garlic, olive oil, red wine vinegar, lemon juice, salt, and pepper together in a small bowl to make the vinaigrette. Drizzle over the orzo mixture and toss lightly to combine. Add basil and parsley and mix well. Let sit for 20 minutes for flavors to blend, stirring occasionally.
