2 cups sifted all purpose flour
1/2 cup icing sugar
1 cup butter, softened
4 eggs
2 cups sugar
1/3 cup lemon juice
1/4 cup all purpose flour
1/2 teaspoon baking powder

Steps:

  • Sift together 2 cups of flour and icing sugar. Cut in butter until mixture clings together. Press into 13x9 inch baking pan. Bake at 350 until lightly browned, aprox. 20-25 minutes.
  • Put eggs, sugar, and lemon juice in blender. Blend until thick and smooth. Sift 1/4 cup of flour with baking powder. Add to blender and blend to combine. Pour over crust. Bake at 350 for 25 minutes.
  • Sprinkle with additional icing sugar. Cool in refrigerator. Cut into bars.

The best lemon bars I have ever had! I have to make these very often because my family and customers clamor for them, I can barely keep up with the demand!

1 1/2 cups flour
2/3 cup powdered sugar
3/4 cup butter, room temp
1 dash salt
3 eggs
1 1/2 cups sugar
3 tablespoons flour
1/3 cup lemon juice
lemon zest

Steps:

  • Preheat oven to 350°F Mix crust ingredients in a food processor, or by hand. Press down evenly into a parchment lined 9 x 13" pan. Bake for 20 mn.
  • Mix filling ingredients, pour over the hot crust. Bake an additional 20-25 mn. or until set.
  • Cool completely, dust with powdered sugar.

Number Of Ingredients 12

20 Nilla Wafers, finely crushed
1/2 cup all purpose flour
1/4 cup firmly packed brown sugar
4 Tablespoons of cold butter
1 pkg. (8 oz.) cream cheese (you can use low fat)
1 cup granulated sugar
2 eggs, at room temperature (just place eggs in a bowl of warm water for about 10 minutes)
2 Tablespoons all purpose flour
3 Tablespoons grated lemon peel, divided
1/4 cup fresh lemon juice (use juice from the lemons you zested)
1/4 teaspoon baking powder
powdered sugar (optional to sprinkle on top)

Steps:

  • Preheat oven to 350ºF. Line 8-inch square baking pan with foil, with ends of foil extending over sides of pan. Spray lightly with non-stick spray and set aside.
  • In a bowl, combine Nilla Wafer crumbs, 1/2 cup flour and the brown sugar. Chop butter into small pieces and then cut into crumb mixture with a pastry blender. If you don?t have a pastry blender, just use 2 knives, or even your fingers to break up the butter until mixture resembles coarse crumbs.
  • Press crumb mixture firmly onto bottom of prepared pan. Bake 15 minutes.
  • While crust is cooking, beat cream cheese and granulated sugar with electric mixer on medium speed until well blended. Add eggs, 2 tablespoons flour, and baking powder; mix well. Blend in 1 tablespoon lemon zest, and lemon juice and then pour mixture over crust.
  • Bake 25 to 30 minutes or until center is set. Cool completely. Cover and refrigerate at least 2 hours, but preferably overnight. These bars improve with time. Sprinkle with powdered sugar and remaining 2 tablespoons grated lemon peel just before cutting into squares to serve. Store leftover squares in refrigerator.

  • In a medium bowl, use an electric hand mixer to blend together softened butter, 2 cups flour and 1/2 cup powdered sugar. Mix for about 3 minutes until the mixture resembles coarse crumbs. Press into the bottom of an ungreased 9" x 13" inch pan. Bake for 18 to 20 minutes or till lightly golden at edges.
  • While base layer is baking prepare the topping. In medium sized mixing bowl, whisk eggs well. Add 2 cups granulated sugar and 1/4 teaspoon salt and whisk to combine. Whisk in lemon juice and lemon zest (if using). Finally, whisk in 1/4 cup flour until well incorporated. Pour over the warm, baked crust. Return to the oven for an additional 18 to 20 minutes at 350 degrees until topping appears to be set and is just beginning to lightly brown.
  • Allow to cool completely then sprinkle surface liberally with powdered sugar. Cut into serving sized pieces and store in an airtight container.
