ASIAN RICE NOODLE SALAD

The best thing about this salad is how it comes together in no time at all. Asian rice noodles generally cook more quickly than wheat noodles and with the addition of the precut coleslaw mix the prep time is very minimal.

Number Of Ingredients 12

1 (8-ounce) box Asian brown rice (whole-grain) noodles
1/4 cup soy sauce (preferably reduced-sodium)
1 tablespoon rice vinegar
2 teaspoons fresh lime juice (from 1/2 lime)
2 teaspoons honey
2 teaspoons toasted sesame oil
1 teaspoon minced fresh ginger
1 garlic clove, minced
3/4 cup fresh cilantro leaves, chopped
3/4 cup chopped salted, dry-roasted peanuts or cashews
2 1/2 cups coleslaw mix (shredded green and red cabbage plus carrots, found in the produce aisle)
Red pepper flakes (optional)

Steps:

  • Cook the noodles according to the package directions. Drain and set aside in a large bowl to cool (a few minutes in the freezer can help!). Cut the noodles up a bit with kitchen shears or a knife to make them easier to toss.
  • In a small bowl, whisk together the soy sauce, vinegar, lime juice, honey, sesame oil, ginger, and garlic.
  • Add the sauce, cilantro, peanuts, and slaw mix to the bowl with the noodles and toss until well combined. If desired, sprinkle in red pepper flakes to taste. Serve at room temperature or refrigerate for later.

The first time I had a spicy, cold rice noodle salad, it wasn't the bold flavors that caught me by surprise, but the strange and addictive texture.

1 (6.75 ounce) package thin rice noodles
3 cloves garlic, minced
⅓ cup seasoned rice vinegar
3 tablespoons fish sauce
1 tablespoon Asian chili paste (sambal), or more to taste
1 teaspoon brown sugar
¼ teaspoon salt
4 green onions, chopped
1 cup carrots, cut into thin matchsticks
½ cup chopped fresh herbs (basil, mint, and cilantro)
½ cup chopped peanuts
1 teaspoon sesame oil
6 grilled boneless, skinless chicken thighs
¼ cup Fresno chile peppers, cut into rings

Steps:

  • Place noodles in a large bowl and cover with hot water. Stir and allow to soak until softened, about 15 minutes. Drain and rinse thoroughly.
  • Combine garlic, rice vinegar, fish sauce, chile paste, brown sugar and salt in a bowl. Stir in green onions, carrots, basil, mint, and cilantro. Toss in rice noodles, peanuts, and sesame oil. Allow to sit for 30 minutes to absorb flavors. Garnish with additional green onions and peanuts. If using, top with grilled chicken and Fresno chiles.

RICE NOODLE SALAD

You can use Southeast Asian rice sticks or Chinese cellophane noodles (made from bean starch) for this Thai salad. It makes a satisfying lunch, or serve it as a starter or side dish (it will serve up to 6 as a side).

Number Of Ingredients 13

1/4 cup fresh lime juice
2 tablespoons Thai fish sauce or 1 tablespoon soy sauce
1 teaspoon sugar
2 to 3 teaspoons finely minced ginger (to taste)
1/2 teaspoon red pepper flakes, or a pinch of cayenne
2 tablespoons Chinese sesame oil
2 tablespoons canola oil
3 ounces dried rice noodles (rice sticks) or cellophane noodles
1/2 small Napa cabbage or 1 romaine heart
3 scallions, cleaned and thinly sliced on the diagonal (optional)
1 cup coarsely chopped cilantro
1 medium carrot, grated or cut in fine julienne
Lettuce leaves for the bowl or platter

Steps:

  • Mix together the dressing ingredients. Taste and adjust seasonings. Place the rice or cellophane noodles in a bowl and cover with warm water. Soak for 20 minutes, and drain.
  • Bring a large pot of water to a boil and add the noodles. Cook about 1 minute, or until tender. Drain well and coarsely chop using scissors. Toss with all but 2 tablespoons of the dressing.
  • If using Napa cabbage, cut the halved cabbage in half again, cut out the core, then slice crosswise into thin strips. If using romaine, cut in half, then slice crosswise into thin strips. Toss with the noodles, along with the scallions, cilantro, and carrot.
  • Line a platter or bowl with lettuce leaves and pile on the salad. Spoon on the remaining dressing, and serve.

I had this salad at a summer pot luck picnic. To my delight, it was delicious and has since become one of my favorites. This non traditional salad recipe has been given out to my company more times than I can count. It is great for a pot luck, as you can almost be assured that there will not be doubles.

1 cup frozen peas
2 cups cooked rice, according to directions
1 1/2 cups diced ham or 1 (6 ounce) can small shrimp
1 1/2 cups celery, chopped
1/4 cup green onion, chopped
1/2 cup salad oil
3 tablespoons soy sauce
1 tablespoon curry powder
2 tablespoons vinegar
1/2 teaspoon salt
1/2 teaspoon celery seed
1/4 cup white sugar (or 2 Splenda quick packs)
1/4 cup toasted slivered almonds
1/2 teaspoon Accent seasoning, if desired (msg)

Steps:

  • Be careful not to overcook rice.
  • I have used both minute rice and long grain.
  • Toss salad ingredients together and refrigerate long enough to let peas thaw.
  • Beginning with salad oil ingredient, mix all dressing ingredients and let sit for an hour at room temperature or longer.
  • Stir dressing well and dress salad just before serving, mix well.
  • Serve cold.

4 cloves garlic, finely chopped
1 cup chopped cilantro
1 jalapeno pepper, chopped
1 tablespoon honey
1/4 cup fresh lime juice
3 tablespoons fish sauce
1 teaspoon kosher salt
1 pound dried rice vermicelli
2 carrots, julienned
1 cucumber, halved, peeled, seeded and sliced into thin half-rounds
1/4 cup chopped fresh mint
1/2 cup finely shredded napa cabbage
1/4 cup chopped dry-roasted nuts

Steps:

  • Place the garlic, cilantro, jalapeno, honey, lime juice, fish sauce and salt in the bowl of a food processor and process until almost smooth. Bring a large pot of salted water to a boil, add the noodles and cook for 2 minutes. Drain, rinse well with cold water and drain again. In a large bowl, combine the sauce, noodles, carrots, cucumber, mint and napa cabbage. Toss well and garnish with peanuts.

I tried this at a concert on a boat in Toronto Harbour last summer, watching the "Carpetfrogs" perform, then I had to try a get a recipe, I basically combined ideas from several recipes that I found on the web, and I think this is pretty close, I have taken it to several functions and it is always a hit

8 ounces no yolk noodles (large or your preference)
3 large carrots
6 ounces sugar snap peas or 6 ounces snow peas
1 English cucumber
6 green onions
1/2 cup soy sauce
1/4 cup rice wine vinegar
2 tablespoons sesame oil
1 tablespoon olive oil
1 tablespoon brown sugar
1 lime, zest of
1/4 cup freshly squeezed lime juice
2 tablespoons grated fresh ginger
1/2 teaspoon salt
1/2 cup freshly chopped coriander leaves or 1/2 cup parsley
1/2 cup chopped peanuts (really good) (optional)

Steps:

  • Cook noodles, drain, and set aside.
  • Dressing:.
  • In a small bowl, whisk soy sauce with vinegar, sesame oil, olive oil, sugar, lime zest& juice.
  • Stir in ginger well, it sometimes has a tendency to clump.
  • Pour over still warm noodles, and toss.
  • Blanch the peas & cut into one inch diagonal lengths.
  • Julienne the carrots and cucumber, (cut the cucumber in half lengthwise and spoon out the seeds first).
  • Cut the green onions into one inch diagonal lengths.
  • Stir together with the still warm noodles, it can be refrigerated at this point, and kept for a day or two.
  • When ready to serve, add coriander or parsley, top with chopped nuts.
