A hearty, savory slow cooker stew with potatoes, carrots, celery, broth, herbs and spices. You won't be slow to say 'yum'!

2 pounds beef stew meat, cut into 1-inch pieces
¼ cup all-purpose flour
½ teaspoon salt
½ teaspoon ground black pepper
1 clove garlic, minced
1 bay leaf
1 teaspoon paprika
1 teaspoon Worcestershire sauce
1 onion, chopped
1 ½ cups beef broth
3 potatoes, diced
4 carrots, sliced
1 stalk celery, chopped

Steps:

  • Place meat in slow cooker. In a small bowl mix together the flour, salt, and pepper; pour over meat, and stir to coat meat with flour mixture. Stir in the garlic, bay leaf, paprika, Worcestershire sauce, onion, beef broth, potatoes, carrots, and celery.
  • Cover, and cook on Low setting for 10 to 12 hours, or on High setting for 4 to 6 hours.

1 1/2 lbs organic beef chuck roast, cut into 1-inch cubes (marbled)
3 -4 medium size organic carrots, sliced
1 small organic onion, chopped
4 medium organic potatoes, cut into 2-inch cubes
3 cloves organic garlic, crushed
1/2 cup organic all-purpose flour
1/2 teaspoon paprika
2 teaspoons organic Worcestershire sauce
3 medium organic tomatoes, grated
1 tablespoon organic tomato paste
4 bay leaves
salt and pepper
3 sprigs parsley or 3 sprigs cilantro

Steps:

  • Heat a medium size non-stick pot , generously season your meat with salt and pepper and add it to the pot . Cook over low heat until it produces its own juice , then add some more water , add more salt to taste ( if needed ),let it cook over medium heat until the water is boiling , then add potatoes and bay leaves .Reduce the heat .
  • Heat oil in pan , add carrots, onions and garlic , cook until almost done, stirring occasionally . Add tomato sauce ( grated tomatoes ) , Worcestershire sauce and tomato paste . Add more salt to taste . Cook for 7 minutes . Then stir everything into the pot . Simmer until the meat is very tender .
  • Gradually add sifted flour right before it's done, stirring . Let is simmer for another 10 minutes until thickened . Sprinkle with parsley or cilantro .

  • Cook in low-medium heat for about 1 hour. Make sure you check every 20-30 minutes and mix a little more to integrate all the flavors. You can again check and add a little more broth if needed. It depends on your taste.

  • Preheat the oven to 250ºF and place rack on middle-low position. Generously season beef with sea salt and black pepper. Heat 2 tablespoons ghee in a [large dutch oven|http://www.amazon.com/gp/product/B00008CM6J/?ie=UTF8&creativeASIN=B00008CM6J&] (an ovenproof pot with a lid) over medium-high. Add half of the meat and cook for 2 minutes, until the bottom is browned. Using a pair of tongs, turn over each piece of meat and cook until browned on the second side, about 2 minutes. Place beef in a large bowl (the meat will not be cooked through). Repeat with remaining ghee and beef.
  • Reduce heat to medium and add onions to now-empty pot and sauté, stirring frequently until onions release their liquid, about 10 minutes. (If the bottom of the pot begins to brown too much, push the onions aside with a spoon, pour a small amount of water and scrape up the brown bits.) Continue to cook until the onions caramelize, about 15 minutes. Stir in coconut flour and cook for 1 minute. Make a well in the center of the pot and add garlic and thyme. Stir in the middle of the pan until fragrant. Add wine and chicken stock, scraping up any brown bits on the bottom of the pan. Add beef and any accumulated juices to the pot. Stir in the honey, cider vinegar, bay leaves and sea salt. Bring to a boil, cover with the lid and place in the oven. Cook for 2 1/2 hours, until meat is tender. Stir in mustard and parsley and serve.
