Steps:
- Mix cake mix, water, oil and eggs in large bowl with electric mixer at low speed until moistened.
- Beat for 2 minutes at medium speed.
- Stir in 1/2 cup chopped cookies.
- Pour into 2 greased and floured 9-inch round cake pans.
- Bake at 350°F for 25-35 minutes or until toothpick inserted near center comes out clean.
- Cool in pans on wire racks for 10 minutes; remove from pans.
- Cool completely.
- Fold 3/4 cup chopped cookies and sliced strawberries into whipped cream in large bowl.
- Place 1 cake layer on serving plate; spread with half the whipped cream mixture.
- Top with remaining cake layer; spread top with remaining half of whipped cream mixture.
- Garnish with strawberries and remaining chopped cookies.

SIMPLE SHORTCAKE
This is based off of the "Original Strawberry Shortcake Recipe" that I have also posted. I served it with an un-sugared mixture of cut-up strawberries and blueberries and topped it with canned whipped cream. As easy at it gets, and a lot less calories too!

Steps:
- Preheat the oven to 375 degrees.
- Combine the flour, Splenda, baking powder, and salt in a medium bowl.
- Cut the butter into the dry ingredients with a pastry blender or a large fork.
- Whisk the egg into the milk.
- Make a well in the center of the dry ingredients and pour the wet mixture into the well.
- Mix with a fork until the ingredients just stick together.
- Spread the mixture evenly into a greased round cake pan or square baking dish.
- Bake for 15 to 20 minutes until golden on top and a toothpick inserted in the center comes out clean.
- Serve with fruit, jam, whipped cream, chocolate sauce or whatever else suits your fancy.

- Crush the Golden Oreo cookies. I used a blender, but you can use a small food processor, or you can place the cookies in a sealed plastic bag and smash them with a meat mallet! I found that the blender worked best when I did half the cookies at a time, rather than trying to crush all 36 at once. Use a fork to stir the mixture up between blends to get the finest consistency.
- Crush the freeze dried strawberries. I used a blender to make fine crumbs but you could chop them into small pieces if you want larger pieces of them in your Oreo balls. Add the strawberries to the cookie mixture and mix well.
- Use a cookie scoop to measure out about 1.5 TBSP of the cookie mixture and roll each scoop into a ball. Place Oreo balls on a parchment or wax paper lined cookie sheet.

- Begin by running 36 Golden Oreos through a food processor. Set aside 1/3 cup of Oreo crumbs in a small mixing bowl. Add the remaining to a large mixing bowl.
- Use a large spoon to stir in the cream cheese with the Oreo crumbles in your larger bowl. I patted it in, stirred, and then repeated until it was well mixed.
- Line a baking sheet with wax paper and spray well with non-stick spray. Using your hands form balls (about 1 1/2 tbsp). Put them in your freezer to chill for about 15 minutes. I chilled mine on the baking sheet.
- Retrieve your small bowl of Oreo crumbles. Run your freeze strawberries through your food processor. Add them to the bowl.
