- Heat oven to 350 degrees F.
- Crush 28 cookies finely; coarsely chop remaining cookies. Mix crushed cookies with butter; press onto bottom and 2 inches up side of 9-inch springform pan.
- Beat cream cheese and sugar in large bowl with mixer until blended. Add sour cream and vanilla; mix well. Add eggs, 1 at a time, mixing on low speed after each just until blended. Stir in chopped cookies. Pour into crust.
- Bake 55 min. to 1 hour or until center is almost set. Run knife around rim of pan to loosen cake; cool before removing rim. Refrigerate 4 hours.

This is a major hit at my house! Made them for Christmas and also for my mother on Mother's Day! Hint: when mixing Oreos® and cream cheese, do it with your clean hands! Store remaining Oreo® balls in a covered container in the refrigerator.

- Line a baking sheet with parchment paper.
- Mix cookie crumbs and cream cheese together in a bowl; roll into balls and arrange on the prepared baking sheet. Freeze cookie balls until solid, about 1 hour.
- Melt almond bark in the top of a double boiler over simmering water, stirring frequently and scraping down the sides with a rubber spatula to avoid scorching.
- Dip cookie balls in the melted almond bark, removing balls using 2 forks to allow excess bark drip back into double boiler. Arrange coated cookie balls on the baking sheet; refrigerate until coating is firm, about 10 minutes.

Steps:
- Place 36 sandwich cookies in a food processor.
- If you'd like to decorate the finished truffles with cookie crumbs, discard the filling from any remaining cookies and place the wafers in a small resealable bag. Crush with a rolling pin and set aside until needed.
- Pulse the cookies in the food processor until they become fine crumbs. Add cream cheese and powdered sugar; process until well mixed. Cover and refrigerate for at least 1 hour.
- Line a baking sheet with parchment paper.
- Remove cookie mixture from the refrigerator and roll into forty-eight 1-inch balls. Place on the prepared baking sheet and refrigerate for 30 minutes.
- Toward the end of the chilling time, place candy melts in a microwave-safe bowl. Microwave in 30-second intervals, stirring after each interval, until melted and smooth. Let sit for 5 minutes.
- Remove balls from the refrigerator and dip, one at a time, into the melted chocolate. Shake off any excess and place back on the lined baking sheet. Sprinkle reserved cookie crumbs and/or candy sprinkles over truffles while chocolate is still wet.
- Place truffles in the refrigerator until coating is set, about 15 minutes.

- Preheat the oven to 375 degrees F (190 degrees C). Line a baking sheet with parchment paper. Place crumbled cookies in a small bowl.
- Beat butter and cream cheese in a mixing bowl with an electric mixer on medium speed until smooth and creamy. Add sugar and vanilla and mix until well-combined. Add flour and mix on low speed until incorporated. Stir in chocolate chips.

- Place the Oreos inside the food processor and make sure that they crush into a sand-like texture. *Scoop out some of the crumbs and reserve for topping*
- Inside the food processor add the cream cheese. Make sure that the Oreos and the cream cheese combine to their finest.
- Roll the mixture into one-inch balls (or use a cookie scoop) and place them on your parchment-lined baking sheets. *TIP: You may find it helpful to chill the dough for a few minutes before rolling.*
- After rolling them into balls, place them into the freezer for about 30 to 60 minutes for them to solidify.
- While your Oreo balls are in the freezer, melt your chocolate according to the package directions. Allow the chocolate to cool slightly, just so that you don't burn yourself.
- Remove the Oreo balls from the freezer (one tray at a time), and place one ball in the melted chocolate. Using a fork, gently stir the ball around to coat, tap to drop the excess chocolate, and place the ball back on the baking sheet.
- Drizzle your Oreo balls with your chocolate and sprinkle with the crumbs that you left aside. Once all the balls are dipped, drizzled, and sprinkled, place the trays back in the freezer for about 15 minutes to set.
