Categories     Dessert

Time 40m

Number Of Ingredients 10

1 pound frozen Marionberries (I bought Willamette Valley)
1 pie crust
1/4 cup sugar
2 Tbsp. corn starch
Juice from half a lemon
1 tablespoon butter
1 egg
1 Tbsp water
1/4 cup crystalized ginger (optional, if you don't use, use 1 Tbsp. dried ginger)
Turbinado sugar (Sugar in the Raw)

Steps:

  • Preheat oven to 425 degree F.
  • Line large baking sheet (with sides) with parchment paper.
  • Roll out dough of your favorite pie crust or use refrigerated pie crust.
  • In medium bowl mix sugar, cornstarch, lemon juice, crystalized ginger, and frozen berries.
  • Pour berries into center of pie crust, mounding berries in the middle.
  • Fold and crimp the dough, so it covers at least 2 inches of the filling. Freeze the galette for at least 15 minutes to chill the dough.
  • Whisk egg and water together. Just before baking, brush edges of pie crust with egg wash, and sprinkle the dough generously with turbinado sugar.
  • Add pats of butter on top of berries, in three or four small pieces.
  • Bake for approximately 30 minutes or until crust is golden brown.
  • Serve warm or at room temperature. Serve with vanilla ice cream.

MARIONBERRY COBBLER

Marionberry Cobbler image

I created this recipe while trying to duplicate a marionberry cobbler my family tried at the Chowder Bowl in Newport, OR. It's certainly not the same, but it has become one of our favorite special occasion desserts. I use frozen Marion Blackberries, but you can also use fresh berries.

FRESH PEACH COBBLER (OR BERRY COBBLER)

Fresh Peach Cobbler (Or Berry Cobbler) image

A fabulous cobbler recipe. It is quick to make and delicious every time. If peaches are not in season--it is also wonderful with frozen sliced peaches--just be sure they are thawed through before you put it together and allow more time to cook.

BEST-IN-THE-WEST BERRY COBBLER

Best-In-The-West Berry Cobbler image

The name says it all! It has a delicious sugar crackle topping that forms by pouring the boiling water over the top before baking. This is my favorite cobbler recipe. Easy, impressive, and versatile. Can use any combination of berries, frozen or fresh.

Provided by akgrown

Categories     Dessert

Time 1h20m

Yield 4-6 serving(s)

Number Of Ingredients 9

2 -3 cups berries (blueberries, blackberries, marionberries, or raspberries. I usually use a combo bag of frozen berrie)
3 tablespoons shortening
1 1/4 cups sugar, divided
1 cup flour
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup milk
1 tablespoon cornstarch
1 cup boiling water

Steps:

  • Spread berries in a greased 8 inch square pan.
  • Cream shortening and 3/4 cup sugar well.
  • Sift flour, baking powder, and salt together.
  • Add alternately with milk to creamed mixture. Batter will be thick.
  • Spread batter over berries.
  • Combine remaining sugar and cornstarch together then sprinkle evenly over batter. *NOTE* This is a juicy cobbler but if you want the berries and sauce to be thicker add an extra 1/2 to 1 tablespoon of cornstarch to the remaining sugar.
  • Pour boiling water over all. Do not mix.
  • Bake at 350* for 30-45 minutes, until golden brown and toothpick inserted into middle comes out clean. Serve warm or at room temperature with whipped cream or ice cream if desired. (Doubled recipe fits into a 9x13 pan, but must bake 20-30 mins longer than normal).

  • In a large bowl, gently fold the berries, sugar, cornstarch, lemon juice, and vanilla extract together until thoroughly combined. Spread filling evenly into prepared pan.
  • Whisk the flour, sugar, baking powder, and salt together in a large bowl. Using a pastry cutter or two forks, cut the butter into the mixture until it resembles coarse meal (pea-sized crumbs). A pastry cutter makes this step very easy and quick! You could also use a food processor, too. While slowly stirring, slowly drizzle in 1/2 cup buttermilk. Mix until evenly combined. Take handfuls of dough and gently flatten out. Place dough all over the top of the berry filling. There’s no special trick to this– just flatten the dough in sections and cover most of the berries.
  • Brush the top of the biscuit dough with 1 Tablespoon of buttermilk, then sprinkle with coarse sugar. These two are optional, but both help achieve a shiny, crunchy, golden brown crust.
