BAKED FETA WITH CHILLI & OREGANO

Steps:

• Heat oven to 200C/180C fan/gas 6. Sit the feta on a sheet of foil. Scatter over the chilli and oregano, then drizzle with olive oil. Scrunch up the foil to seal the feta in a parcel, then place on a baking tray and bake for 10 mins until warmed and softened.

ICEBERG SALAD WITH DRIED OREGANO DRESSING AND CREAMY FETA

Steps:

• First, make your vinaigrette. In a small bowl or jar with a lid, combine the shallot, vinegar and salt. Leave to macerate for about 15 minutes. Next, add the oregano and olive oil and mix or shake to combine.
• Cut your iceberg into thin, long wedges and arrange on a platter. Shake the dressing up just before pouring it over the lettuce. Sprinkle a bit of salt on top, followed by the chives and dill, then shave slices of cheese over the whole thing, or simply crumble it in. Serve immediately.

OREGANO-FLAVORED FETA

Steps:

• Place 1 cup feta in the work bowl of a food processor. Process until fine-textured. Add cream cheese, oregano and pepper. Process until smooth.
• Scrape into a bowl. Stir in remaining feta.
• Transfer to a serving bowl or storage container.
