Oranges with Dessert Wine and Rosemary image

Muscat de Beaumes-de-Venise is a sweet, fragrant white wine from the Rhone region of France that can be served either as an aperitif or as a dessert wine. A variety of Muscat wines can be found in most wine stores.

3/4 cup Muscat de Beaumes-de-Venise
1/2 cup dry white wine, such as Sauvignon Blanc
6 sprigs fresh rosemary, plus more for garnish
8 small or 4 medium oranges

Steps:

  • Heat Muscat, white wine, and 6 rosemary sprigs in a saucepan over medium-low heat until warm.
  • Meanwhile, cut away peel and pith from oranges, keeping the segments intact, or, if desired, cut between membranes with a paring knife to release segments. Divide whole oranges or segments among 4 serving bowls. Pour wine mixture over top. Garnish with rosemary, and serve immediately.

This bright orange sangria combines Aperol, a slightly bitter orange-flavored aperitif, with orange liqueur, soda, juice and slices and a nice herbal hit of fragrant rosemary for an early autumn tipple.

1 cup orange liqueur, such as Clement Creole Shrubb
1 cup soda water
1/2 cup Aperol
1/3 cup loosely packed fresh rosemary leaves
One 750-milliliter bottle chardonnay or other rich white wine
1 1/2 cups orange juice (from about 6 oranges)
2 oranges, halved lengthwise and cut crosswise into 1/4-inch-thick slices

Steps:

  • Add the Aperol and rosemary to a 3-quart pitcher, and bruise the rosemary with a wooden spoon for 1 minute. Add the wine, juice, liqueur and soda water, and stir to combine. Add the oranges, and cover the pitcher with plastic wrap. Refrigerate the sangria for at least 4 hours and up to overnight.
  • To serve, fill 8 glasses halfway with ice, then pour the sangria, oranges and herbs into each glass.

BURNT ORANGES WITH ROSEMARY



Burnt Oranges With Rosemary image

The charred, sugary rosemary is both rough and refined, making these oranges a gratifying end to a grilled meal.

4 oranges, halved, peeled, pith removed
2 tablespoons fresh rosemary
1/2 cup sugar
1 cup plain thick Greek yogurt

Steps:

  • Place oranges cut-side up on a plate and sprinkle rosemary on top, pressing it into oranges so it adheres. Sprinkle with 1/4 cup sugar.
  • On a grill or stovetop, put a 12-inch cast iron skillet over medium heat until a drop of water sizzles on surface. Spread remaining 1/4 cup sugar in skillet and when it starts to caramelize place oranges, cut-side down, on sugar. Let cook for 3 to 4 minutes, not moving oranges, so cut side burns nicely and oranges soften.
  • To serve, place 2 orange halves in bowl with 1/4 cup Greek yogurt, and drizzle with burnt sugar juices from skillet.

200g caster sugar
200g softened butter
4 eggs , beaten
200g self-raising flour
1 tsp baking powder
2 tbsp milk
finely grated zest of 1 orange
½ tsp very finely chopped fresh rosemary
100g butter , softened
140g icing sugar , sifted
2 oranges
100g caster sugar
8 small sprigs rosemary

Steps:

  • Heat oven to 190C/fan 170C/gas 5. Butter two 20cm sandwich tins and line with non-stick baking paper. In a large bowl, beat all the cake ingredients together until you have a smooth, soft batter.
  • Divide the mixture between the tins, smooth the surface with a spatula or the back of a spoon, then bake for about 20 mins until golden and the cake springs back when pressed. Turn onto a cooling rack and leave to cool completely.
  • To make the buttercream filling, beat the butter until smooth and creamy, then gradually beat in icing sugar. Peel and cut out segments of an orange with a knife, then set aside for the decoration. Squeeze the juice from what's left and add to the butter cream.
  • Bring the juice of another orange, the caster sugar and the sprigs of rosemary to the boil in a small saucepan. Strain the syrup over the tops of the warm sponges - reserving the rosemary, cool, then sandwich together with the buttercream.
  • Decorate the cake with the orange segments and candied rosemary. Keep in an airtight container and eat within 2 days.
