This simple but amazing teriyaki sauce will take your chicken and rice to the next level!

1 cup water
¼ cup soy sauce
5 teaspoons packed brown sugar
1 tablespoon honey, or more to taste
½ teaspoon ground ginger
¼ teaspoon garlic powder
2 tablespoons cornstarch
¼ cup cold water

Steps:

  • Combine 1 cup water, soy sauce, brown sugar, honey, ginger, and garlic powder in a saucepan over medium heat. Cook until nearly heated through, about 1 minute.
  • Mix cornstarch and 1/4 cold water together in a cup; stir until dissolved. Add to the saucepan. Cook and stir sauce until thickened, 5 to 7 minutes.

ROASTED VEGETABLES IN ORANGE TERIYAKI SAUCE



Roasted Vegetables in Orange Teriyaki Sauce image

This is very tasty. It comes from a cookbook called "On Rice" and I fell in love with it the first time I made it. Definitely use a low-sodium soy sauce unless you love salt! If you choose to bake the rice using the Perfect Brown Rice recipe, cook the rice for 30 minutes and then for the final 30 minutes add your pan of veggies to roast and everything will come out at the same time.

6 cups cooked brown rice (Perfect Brown Rice is a good one!)
1/2 cup reduced sodium soy sauce
1/2 cup orange juice
1 orange, zest of
2 scallions, chopped finely
2 tablespoons mirin
2 tablespoons sesame oil
2 tablespoons fresh ginger, minced
3 garlic cloves, minced
1/4 teaspoon black pepper
1 1/2 lbs broccoli, stems cut crosswise into 1/2 inch slices, remainder in florets
8 ounces carrots, cut into 1/4 inch rounds
10 ounces large white mushrooms, sliced 1/2 inch thick

Steps:

  • Cook brown rice.
  • Prepare vegetables: Cut broccoli stems into 1/4 inch rounds; cut tops into florets; peel carrots and cut into 1/4 inch rounds; slice mushroom into 1/2 inch slices. Put the broccoli stems and carrots in one bowl and the florets and mushrooms in another.
  • Mix up the teriyaki sauce: Combine all the teriyaki ingredients into a large cup and whisk.
  • Lightly oil a large roasting pan (about 12X17 size). I use a cookie sheet.
  • Pour about 1/2 the teriyaki sauce onto the bowl of broccoli stems and carrots and toss. Pour them onto the roasting pan and roast at 400F for 15 minutes. (If your baking rice at the same time, 350F will be fine).
  • After 15 minutes, remove from oven. Pour the remaining teriyaki sauce over the florets and mushrooms and add them to the roasting pan, mixing all the veggies together. Return to oven and roast for 15 more minutes or until the broccoli is crisp-tender and lightly browned on the edges. Stir occasionally.
  • Spoon the rice into individual bowls and top with the vegetables and teriyaki.

1 lb boneless skinless chicken breasts or 1 lb boneless skinless chicken thighs
1 (16 ounce) package frozen broccoli carrots and water chestnut mix (loose-pack)
2 tablespoons quick-cooking tapioca
3/4 cup chicken broth
3 tablespoons orange marmalade
2 tablespoons teriyaki sauce
1 teaspoon dry mustard
1/2 teaspoon ground ginger
2 cups hot cooked rice

Steps:

  • Cut the chicken breasts into 1-inch pieces.
  • Place the frozen vegetables in a 4-quart slow cooker.
  • Sprinkle the tapioca over the vegetables.
  • Place the chicken pieces over the vegetables.
  • In a small bowl, add the chicken broth, marmalade, teriyaki sauce, dry mustard, and ground ginger; stir to combine.
  • Pour the sauce over the chicken.
  • Cover and cook on LOW for 4-5 hours.
  • Serve over hot cooked rice.

1 can (11 ounces) mandarin oranges
1 tablespoon cornstarch
1-1/2 pounds beef top sirloin steak, thinly sliced
2 tablespoons canola oil
1/2 cup soy sauce
2 tablespoons honey
1-1/2 teaspoons ground ginger
1 garlic clove, minced
Hot cooked rice
Green onion and orange peel curls, optional

Steps:

  • Drain oranges, reserving juice; set oranges aside. In a small bowl, combine cornstarch and 2 tablespoons reserved juice until smooth; set aside., In a large skillet or wok, stir-fry beef in oil. Add the soy sauce, honey, ginger and remaining juice. Cover and cook over medium heat for 5-10 minutes or until meat is tender. Add garlic; cook 1 minute longer., Stir cornstarch mixture and add to the pan. Bring to a boil; cook and stir for 2 minutes or until thickened. Stir in the oranges. Serve with rice. Garnish with green onions and curls if desired.

5 -7 drops Tabasco sauce

  • In shallow glass baking dish, combine soy sauce, orange juice concentrate, sugar, giner, lemon juice, Tabasco sauce and garlic. Marinate chicken in suce for 1 hour or oernight in refrigerator.

2 boneless skinless chicken breasts
1 cup fresh orange juice, plus
3 strips orange zest
1/2 cup soy sauce
1/3 cup honey
4 cloves garlic, minced
4 green onions, white part minced,green part thinly sliced for garnish
1 tablespoon minced fresh ginger
1 cinnamon stick
2 teaspoons sesame oil

Steps:

  • Wash and dry chicken breasts, trimming off any fat or sinew.
  • Halve breasts; place in shallow baking dish.
  • In saucepan, boil orange juice until reduced by half.
  • Add soy sauce, honey, garlic, green onion whites, ginger, cinnamon stick and sesame oil.
  • Boil about 5 minutes, until thick and syrupy.
  • Remove pan from heat and strain glaze into a bowl.
  • Let cool to room temperature.
  • Pour half over the chicken breasts, turning breasts to coat both sides.
  • Marinate chicken breasts in this mixture for 30 minutes.
  • Just before serving, preheat grill or broiler to high.
  • Grill chicken breasts until cooked, 2 to 3 minutes per side, basting with remaining glaze.
  • Sprinkle chicken with sliced green onions and serve at once with your favorite rice.

Steps:

  • Whisk first 5 ingredients in bowl to blend for marinade. Place hens in plastic bag. Add 1 cup marinade; seal bag. Let hens marinate 1 hour at room temperature or refrigerate up to 3 hours, turning bag occasionally. Reserve remaining marinade.
  • Preheat oven to 400°F. Place rack on large rimmed baking sheet. Arrange hens on rack; drizzle with marinade from bag. Roast hens until cooked through and brown, basting occasionally with reserved marinade from bowl, about 1 hour.
  • Transfer hens to platter. Scrape juices into pan; add broth and any remaining marinade. Bring sauce to boil. Season with salt and pepper; spoon over hens.
