CRANBERRY-ORANGE BUNDT® CAKE

Cranberry-Orange Bundt® Cake image

I bought the cutest little 4.5-cup capacity Bundt® pan to bake smaller cakes for just me and my husband. This recipe fit perfectly in it, and was just the right amount for us. Cranberries and orange peel are finely chopped and beat into the batter, so you get those flavors throughout the cake. Decorating with the sugared cranberries is optional, but makes for a beautiful presentation.

Time 1h15m

Yield 4

Number Of Ingredients 18

1 tablespoon vegetable shortening, melted
2 tablespoons cake flour
1 medium orange
½ cup fresh cranberries
⅔ cup white sugar
¼ cup butter, softened
1 large egg
¼ teaspoon almond extract
1 ¼ cups cake flour
½ teaspoon baking soda
¼ teaspoon salt
¼ cup buttermilk
¼ cup fresh cranberries
5 tablespoons sugar, divided
3 tablespoons water
½ cup powdered sugar
1 tablespoon orange juice
1 teaspoon grated orange zest

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Using a pastry brush, thoroughly brush the insides and center tube of a 4.5-cup fluted tube pan (such as Bundt®) with the melted shortening. Sift 2 tablespoons cake flour over the greased pan, making sure that all surfaces are well coated. Shake out any excess flour over the sink. Set the pan aside.
  • Using a sharp paring knife or vegetable peeler, remove the orange part of the orange peel, leaving behind the white bitter pitch. Place the strips of orange zest in the bowl of a food processor. Add cranberries and process until finely chopped. Set aside.
  • Cream sugar and butter together in a bowl with an electric mixer until light and fluffy. Beat in egg and almond extract. Add 1 1/4 cups cake flour, baking soda, and salt and mix until just combined. Beat in buttermilk and chopped cranberries and orange zest. Spread batter evenly into the prepared pan.
  • Bake in the preheated oven until a toothpick inserted into the center of the cake comes out clean, 35 to 37 minutes. Cool for 20 minutes and invert onto a serving platter.
  • While cake is cooling, combine cranberries, 3 tablespoons sugar, and water in a small glass bowl. Microwave on high for 1 minute to dissolve sugar and soften cranberries. Stir until all of the cranberries are coated with the sugary mixture. Remove the cranberries with a slotted spoon onto a waxed paper-lined baking sheet. Allow to dry for 30 minutes. Roll the cranberries in the remaining 2 tablespoons of sugar.
  • Combine powdered sugar, orange juice, and orange zest in a small bowl. Drizzle glaze over the cooled cake and garnish with the sugared cranberries.

Categories     Dairy

Time 1m

Number Of Ingredients 17

For the Pound Cake:
1-1/2 cups (3 sticks) unsalted butter
8 oz. (1 brick) PHILADELPHIA Cream Cheese, softened
3 cups granulated sugar
6 large egg
Juice of 1/2 navel orange (about 1/4 cup)
Zest of 1 navel orange
1 tsp. vanilla extract
3 cups cake flour
2 tsp. kosher salt
1 tsp. ground ginger
1/8 tsp. ground cloves
powdered sugar, for garnish
For the Sugared Cranberries:
1/2 cup water
1/2 cup sugar, plus more for coating
6 oz. fresh cranberries

Steps:

  • To Make the Pound Cake
  • Preheat the oven to 350 degrees F and generously mist a 10-cup Bundt pan with nonstick spray.
  • Place the butter and Philadelphia Cream Cheese in a large mixing bowl, mixing together until smooth and well-blended. Add the sugar and whip on medium-high speed until very pale and fluffy (about 5 minutes). Add the eggs, one at a time, scraping the sides and bottom of the bowl with a silicone spatula after each addition. Stir in the orange juice, zest, and vanilla. Add the flour, 1 ½ cups at a time. When all the flour has been incorporated, stir in the salt, ginger, and cloves.
  • Transfer the batter to the prepared Bundt. Bake for 70 to 80 minutes*, or until a bamboo skewer inserted in the thickest part of the cake comes out clean or with a few moist crumbs.
  • Cool in the pan for 20 minutes, then invert onto a wire rack to cool completely. Dust with powdered sugar, and fill the center of the Bundt with sugared cranberries, for garnish.
  • To Make the Sugared Cranberries:
  • Place the water and sugar in a medium pot, and place over medium-low heat. Bring to a low simmer, stirring, just until the sugar is completely dissolved. Remove from heat and cool for 15 minutes.
  • Toss the cranberries in the simple syrup, to coat.
  • Drain the cranberries, and spread in single layer on a wire rack. Allow to dry for about 8 hours, or until no longer wet but sticky to the touch. Roll in granulated sugar, to coat. Sugared cranberries can be stored in the refrigerator, in an airtight container, for up to a week.

Time 2h25m

Number Of Ingredients 23

3 Cups Cake Flour
1 Tablespoon Ground Ginger
1/2 teaspoon Allspice
1/2 teaspoon Cloves
1 teaspoon Ground Cinnamon
1 teaspoon Ground Cardamom
1 teaspoon Freshly Ground Nutmeg
1 teaspoon Baking Soda
Pinch Salt
1 Cup Challenge Unsalted Butter (Melted & Cooled)
3/4 Cup Brown Sugar (Packed)
1 Cup Molasses
3/4 Cup + 1 Tbs Porter or Stout
2 Large Eggs
1/2 Cup Challenge Unsalted Butter
1 Cup Challenge Cream Cheese
1 Cup Sifted Powdered Sugar
1 Tablespoon Vanilla Paste
Hot water as needed
1/2 Cup Water
1/2 Cup Sugar (for the syrup )
1/2 Cup Cranberries
1/4 Cup Sugar (for coating the cranberries)

Steps:

  • Preheat oven to 350 degrees Fahrenheit.
  • Whisk together all your dry ingredients in a medium bowl - the spices, flour, baking soda and salt, then set aside.
  • Add the Challenge melted butter, brown sugar, molasses, porter, and eggs into a large bowl and whisk to completely combine. Then, add the dry ingredients and mix until smooth.
  • Add batter into your greased bundt pan and bake for 50-60 minutes, testing for doneness with a toothpick before removing it from the oven.
  • Allow the cakes to cool in the pan for 10 minutes before removing them. Once completely cool you can spoon, pipe, or dollop your cream cheese icing on top before enjoying!
  • Beat together the softened butter and cream cheese on medium speed until it's smooth and somewhat fluffy.
  • Scrape down the sides, then add in the powdered sugar slowly and vanilla paste.
  • Add hot water one tablespoon at a time until you reach the fluidity that you prefer for glazing your cake. Then you're now prepared to frost!
  • Bring water and sugar to a simmer making sure that the sugar is completely dissolved. Make sure that the simple syrup does not get too hot, otherwise your cranberries will pop open. If your syrup is too warm, set it aside and let it cool for a few moments before moving on.
  • Add cranberries and let the cranberries sit in the sugar syrup for 10-15 minutes.
  • Remove the cranberries from the syrup and allow them to dry on a paper towel for one to two hours. Note that you can certainly use the cranberry syrup for other purposes such as a simple syrup for cocktails - there's no need to get rid of it!
  • Coat the dried berries in granulated sugar and place on top of the finished spice cake adding pomegranate seeds and flowers for additional garnish!

CRANBERRY BUNDT® CAKE

Cranberry Bundt® Cake image

I don't like fruit cake but I love this. We grew up with this every Christmas. It's a little tangy, very moist, and can be dressed up for company or kept simple if you want. It freezes well, but we've never had leftovers when there was only one cake around! (And no one has ever complained about "fruitcake"!)

Time 1h35m

Yield 14

Number Of Ingredients 12

3 cups all-purpose flour
1 cup white sugar
1 teaspoon baking soda
1 teaspoon salt
¾ cup jellied cranberry sauce
1 cup mayonnaise
½ cup orange juice
1 cup chopped nuts
1 ½ oranges, zested
¼ cup jellied cranberry sauce
¼ cup orange juice
1 cup confectioners' sugar

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a fluted tube pan (such as Bundt®).
  • Mix together flour, sugar, baking soda, and salt for the cake in a large bowl. Add mayonnaise and cranberry sauce; mix until well combined. Add orange juice and mix well. Stir in nuts and orange zest and pour batter into the prepared pan.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 60 to 75 minutes. Cool on a wire rack for 5 minutes. Tap the pan a few times to loosen the cake and invert carefully onto a serving plate.

  • Transfer cooled cranberry-orange mixture to a large mixing bowl. Gradually add powdered sugar and beat until glaze has a thin and pourable consistency; pour over cake.
