8 ounces Full-Fat Cream Cheese Block (- softened to room temperature)
8 Ounces Pumpkin Puree (- NOT Pumpkin Pie Filling (1 cup))
½ Cup Light Brown Sugar (- packed)
¼ cup Confectioner's Sugar
1 tsp Pure Vanilla Extract
1 1/2 tsp Pumpkin Pie Spice
½ tsp Ground Cinnamon
¼ tsp Kosher Salt
3 Cups Cool Whip (- DIVIDED & Thawed (8-ounce tub))
Optional Toppings: Gingersnap Cookies or Graham Crackers - finely crushed; Chocolate Shavings (See post for full list of toppings!)

Steps:

  • Beat cream cheese: Using a large bowl and a hand mixer or a stand mixer fitted with the whisk attachment, beat the cream cheese on medium speed until very smooth and creamy, about 3 minutes. Scrape down the sides and the bottom of the bowl with a rubber spatula as needed.
  • Add pumpkin + sugars: Add the pumpkin puree, brown sugar and confectioner's sugar to the bowl. Beat on medium-high speed until well combined, about 3 minutes.
  • Add flavorings: Add the vanilla, pumpkin pie spice, cinnamon and salt to the bowl. Beat on medium-high until creamy and smooth; making sure no lumps of cream cheese remain - if so, continue beating!
  • Fold in whipped cream: Add 2 cups of the whipped topping to the bowl. Using a rubber spatula, gently fold the whipped topping into the pumpkin mixture until well combined. Make sure you fold gently so you don't deflate the whipped topping! Gently fold until the topping in completely combined and no streaks of cream remain.
  • Serve or Store: Either transfer the mousse to a piping bag or gently scoop the mousse into serving cups, glasses or a trifle dish. Top with remaining whipped topping and whatever toppings you love! Serve immediately and enjoy! Storage: Alternately, you can cover the mixing bowl tightly with plastic wrap and store in the refrigerator for several days.

14 graham crackers, finely crushed (about 1-1/2 cups crumbs)
2 Tbsp. sugar
1/4 cup butter, melted
1 cup boiling water
2 pkg. (3 oz. each) JELL-O Orange Flavor Gelatin
1 can (15 oz.) pumpkin
1 can (14 oz.) sweetened condensed milk
1 cup BREAKSTONE'S or KNUDSEN Sour Cream
1/2 tsp. ground cinnamon
1-1/2 cups thawed COOL WHIP Whipped Topping
1 Tbsp. orange zest

Steps:

  • Mix crumbs, sugar and butter until blended; press onto bottom of 13x9-inch pan.
  • Add boiling water to gelatin mix in large bowl; stir 2 min. until completely dissolved. Blend pumpkin, milk, sour cream and cinnamon in blender until smooth. Add to gelatin in bowl; mix with whisk until blended. Pour mixture over prepared crust.
  • Refrigerate 2 hours or until set. Serve topped with COOL WHIP and orange zest.

1 tablespoon unflavored gelatin
1/4 cup orange juice
1-1/4 cups canned pumpkin
1 cup sugar, divided
1/2 cup 2% milk
1 teaspoon grated orange zest
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/8 teaspoon ground ginger
3 large eggs, separated, room temperature
1/2 teaspoon vanilla extract
Whipped topping and additional ground cinnamon, optional

Steps:

  • In a small saucepan, sprinkle gelatin over orange juice; let stand 1 minute. Add pumpkin, 1/2 cup sugar, milk, orange zest, salt, cinnamon, nutmeg and ginger. Heat over low heat, stirring until gelatin and sugar are completely dissolved., In a small bowl, whisk a small amount of hot mixture into egg yolks; return all to pan, whisking constantly. Bring to a gentle boil; cook and stir 2 minutes. Remove from heat; refrigerate 1 hour or until chilled., In a small heavy saucepan, combine egg whites and remaining sugar over low heat. With a portable mixer, beat on low speed over low heat until mixture reaches 160°, 12-15 minutes. Remove from heat. Add vanilla; beat on high until stiff peaks form. Fold into pumpkin mixture. Spoon into dessert dishes. Refrigerate, covered, 1 hour before serving. If desired, serve with whipped topping and cinnamon.

4 pkg. (3 oz. each) JELL-O Orange Flavor Gelatin
8 vanilla creme-filled chocolate sandwich cookies, divided
8 candy-coated chocolate pieces
1/3 cup thawed COOL WHIP Whipped Topping
5 drops green food coloring

Steps:

  • Add boiling water to gelatin mixes in 2-qt. round casserole sprayed with cooking spray; stir 2 min. until completely dissolved. Refrigerate 3 hours or until firm.
  • Unmold gelatin onto plate. Spilt 2 cookies in half. Add 2 cookie halves to the gelatin for the jack-o'-lantern's eyes. Cut each of the 2 remaining cookie halves into 3 triangles. Top gelatin with 1 triangle for the nose; add remaining triangles for the mouth. Stack remaining cookies into 2 piles of 3 cookies each. Add to gelatin for the pumpkin's stem.
  • Tint COOL WHIP with food coloring; use to decorate dessert with remaining ingredients.

Steps:

  • Stir together 1 cup boiling water and gelatin in a bowl. Whisk in the brown sugar and cinnamon until the brown sugar is dissolved. Add the pumpkin puree and cold water; stir until mixture is smooth. Cover and chill in refrigerator until set, about 2 hours.

4 ½ teaspoons unflavored gelatin
¼ cup cold water
1 cup boiling water
1 ¾ cups orange juice
2 teaspoons grated orange zest
1 teaspoon grated lemon zest
¾ cup white sugar
½ cup lemon juice
1 pinch salt

Steps:

  • In a medium bowl, soak gelatin in cold water for 5 minutes. Add boiling water, stirring until gelatin dissolves.
  • To 3 tablespoons of the orange juice add the orange and lemon zest; set aside for 5 minutes.
  • Strain the zest out of the orange juice and discard the zest. To the gelatin add all of the orange juice, sugar, lemon juice and salt. Stir until well blended and set aside to cool.
  • Pour cooled mixture into a 4-cup mold which has been rinsed in cold water. Cover and refrigerate to congeal.
