Number Of Ingredients 12

1 cup corn bread croutons
1-1/4 cups mild picante sauce, divided
5 tablespoons thawed orange juice concentrate, divided
6 tablespoons chopped fresh cilantro leaves, divided
1 large egg, lightly beaten
1 teaspoon salt
1 pound ground chicken
6 ounces fresh chorizo
1-1/4 cups orange marmalade
1/2 cup jalapeno pepper jelly
2/3 cup finely chopped peeled mango
2/3 cup pomegranate seeds, divided, optional

Steps:

  • Preheat oven to 375°. Crush croutons into fine crumbs. Add 1/2 cup picante sauce and 1 tablespoon orange juice concentrate; let stand 10 minutes., Stir in 2 tablespoons cilantro, egg and salt. Crumble chicken and chorizo into crouton mixture; mix well. With wet hands, shape into 1-in. balls. Place on a greased rack in a 15x10-in. baking pan. Bake until a thermometer reads 165°, 15-20 minutes., Meanwhile, in a small saucepan over medium heat, stir together marmalade, pepper jelly, remaining picante sauce and remaining orange juice concentrate. Bring to a boil. Reduce heat; simmer 5 minutes. Stir in mango, 1 tablespoon cilantro and, if desired, 1/3 cup pomegranate seeds. Pour sauce over meatballs. Serve with remaining cilantro and, if desired, pomegranate seeds.

1 cup fresh orange juice
3/4 cup balsamic vinegar
1/2 cup mild-flavored (light) molasses
2 tablespoons grated orange peel
6 garlic cloves, pressed
2 teaspoons hot pepper sauce
8 skinless boneless chicken breast halves

Steps:

  • Whisk orange juice, vinegar, molasses, orange peel, and all but 1 teaspoon garlic in medium saucepan. Bring to boil over medium-high heat. Reduce heat to medium and simmer until reduced to 2 cups, about 10 minutes. Stir in pepper sauce. Cool marinade to room temperature.
  • Place chicken in 11x7x2-inch glass baking dish. Pour marinade over. Refrigerate at least 4 hours and up to 1 day.
  • Prepare barbecue (medium-high heat). Remove chicken from marinade, shaking off excess. Transfer marinade to saucepan. Stir in reserved 1 teaspoon garlic. Boil over medium-high heat until reduced to 11/4 cups, about 5 minutes. Transfer to serving bowl. Season chicken with salt and pepper. Grill until cooked through, about 5 minutes per side. Transfer chicken to cutting board; let stand 5 minutes. Cut chicken crosswise on diagonal into 1/2-inch-thick slices; transfer to plate. Serve, passing sauce separately.

I adopted this recipe from the RecipeZaar account. I was blown away at how flavourful this dish was. Be careful not to actually burn it though as the burnt molasses taste will permeate the entire dish. ;) Trust me on that one! ---- Original Chef's notes: "This simple citrus glaze has a hint of sweetness, but also takes on a bit of smoky flavor from the molasses and red wine vinegar. The chicken turns a beautiful mahogany color, and is so delicious. From Everyday Food's January 2004 issue."

5 -6 navel oranges (enough to get 3 cups fresh-squeezed juice)
1/2 cup red wine vinegar
1/2 cup molasses
4 boneless skinless chicken breast halves
salt and pepper

Steps:

  • Preheat oven to 400 degrees Fahrenheit, and cover a rimmed baking sheet with foil.
  • Squeeze the oranges until you have 3 cups of juice.
  • In a large skillet, combine the juice, molasses and vinegar and bring to a boil over high heat, skimming foam periodically.
  • Boil until you have only about a half cup of thick glaze.
  • This takes 10-15 minutes.
  • Set half the glaze aside in a separate container for serving with the chicken.
  • Place the chicken breast halves on the baking sheet and season with salt and pepper.
  • Brush with glaze.
  • Bake chicken, brushing with glaze two more times, until juices run clear when pierced, 35-40 minutes.
  • Serve chicken hot with reserved glaze.

One of my favorite recipes! The combination of paprika and mustard powder really offsets the sweetness of the orange juice. I tend to eyeball when cooking, so if you cook more breasts or use a large pan, make extra sauce to baste with. I'll frequently use extra glaze when baking just so there's plenty to pour over rice once it's done!

½ cup orange juice
½ cup vegetable oil
1 teaspoon grated orange zest
1 teaspoon paprika
1 teaspoon ground mustard
1 teaspoon salt
4 skinless, boneless chicken breast halves

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Whisk orange juice, vegetable oil, orange zest, paprika, mustard, and salt in a bowl. Arrange chicken breast halves in a baking dish; pour orange juice mixture over chicken.
  • Bake chicken breasts until no longer pink in the center and juices run clear, 30 to 45 minutes, basting with orange glaze every 10 to 15 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

6 blood oranges
1/2 cup red wine vinegar
1/4 cup molasses

Steps:

  • Preheat oven to 400°.
  • Squeeze 5-6 oranges to yeild 3 cups of juice. In a large skillet, combine juice, 1/2 cup red-wine vingear and 1/4 cup molasses. Boil over high heat, skimming foam occasionally, until mixture is reduced to 1/2 cup; about 10-15 minutes. Reserve half the sauce for serving.
  • Place chicken breasts on a rimmed baking sheet lined with tinfoil. Season generously with coarse salt and cracked pepper. Brush with glaze.
  • Bake chicken, brushing with glaze and twice, at 20 minute intervals, until juices run clear when thickest part of meat is pierced with a fork - about 35-40 minutes. Serve hot with reserved glaze.
