2 tablespoons orange juice
2 tablespoons milk
1 tablespoon white sugar
1 tablespoon unsweetened cocoa powder

Steps:

  • Stir coffee, orange juice, milk, sugar, and cocoa powder together in a mug until the sugar and cocoa dissolve.

2 cups Gold Medal™ all-purpose flour
2 tablespoons unsweetened baking cocoa
2 1/2 teaspoons baking powder
1/2 teaspoon salt
1/3 cup packed brown sugar
1 cup milk
1/3 cup vegetable oil
1 tablespoon instant coffee granules or crystals
1 egg
1 cup semisweet chocolate chunks or chips

Steps:

  • Heat oven to 400°F. Grease bottoms only of 12 regular-size muffin cups (2 1/2x1 1/4 inch) with shortening, or line muffin cups with paper baking cups.
  • In medium bowl, mix flour, cocoa, baking powder and salt; set aside. In large bowl, beat brown sugar, milk, oil, coffee and egg with fork or wire whisk. Stir in flour mixture just until flour is moistened. Fold in chocolate chunks. Divide batter evenly among muffin cups.
  • Bake 18 to 20 minutes or until toothpick inserted in center comes out clean. Immediately remove from pan.

3 cups flour
1 tablespoon baking powder
1 teaspoon baking soda
3/4 teaspoon salt
1 cup sugar
1 cup orange juice
2/3 cup vegetable oil
2 eggs
1 (11 ounce) can mandarin oranges, drained and coarsely chopped
2/3 cup chocolate chips
1 cup shredded coconut
1/3 cup sugar
2 tablespoons butter, melted

Steps:

  • Heat oven to 350°F Place 24 paper or foil liners into 2 muffin pans.
  • In a large bowl, whisk flour, baking powder, baking soda and salt. Set aside.
  • In another large bowl, beat together sugar, orange juice, oil and eggs. Beat in the flour mixture until combined. Fold in the oranges and chocolate chips. Beat for 1 minute. Spoon batter equally into the lined muffin pans, about scant 1/4 cup into each.
  • Topping: in a small bowl, stir together coconut, sugar and melted butter. Sprinkle evenly over top of the muffins.
  • Bake at 350F for 20 minutes, or until toothpick inserted into center of a muffin comes out clean. Cool slightly on wire rack before removing from pan.

3/4 cup orange juice

  • Blend shortening and sugar.
  • Add eggs and beat.
  • Stir in orange peel, juice, and milk.
  • Mix dry ingredients together.
  • Add dry ingredients to other ingredients.
  • Stir just until mixed together.
  • Pour into greased muffin cups.
  • Bake at 400 degrees F for 25-30 minutes, watching carefully.

2 teaspoons instant coffee
1 tablespoon hot tap water
1 egg
1/4 cup canola oil
1 cup milk
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1/2 cup white sugar
2 tablespoons cocoa
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup chopped almonds (optional)

Steps:

  • Preheat oven to 400F; in a 12-cup muffin pan, place paper liners in 10 cups and set aside.
  • In a small bowl, dissolve instant coffee in hot water.
  • In a large bowl, crack egg and whisk; stir in oil, milk, vanilla, and coffee mixture; combine well.
  • In an another small bowl, combine dry ingredients.
  • Gently fold dry ingredients into coffee mixture, just until mixed; do not overbeat.
  • Spoon batter into the 10 paper liners and decorate the top of each muffin with a few chopped almonds, if desired.
  • In the two unused muffin pans, place some water so they won't burn.
  • Place in preheated oven and bake for 25 minutes.
  • Remove from pan and cool on rack.

  • Heat oven to 400 degrees F (205 degrees C). Grease bottoms only of 12 muffin cups or line with baking cups.
  • In a medium bowl, combine flour, sugar, baking powder, orange peel and salt; mix well. In a small bowl, combine orange juice, oil and egg; blend well. Add dry ingredients all at once; stir just until dry ingredients are moistened (batter will be lumpy.)
  • Fill cups 2/3 full. Bake for 20 to 25 minutes or until toothpick inserted in center comes out clean. Cool 1 minute before removing from pan. Serve warm.
