Steps:
- In a small saucepan, combine sugar and water.
- Cook over medium heat for 2 minutes or until sugar is dissolved.
- In food processor or blender, process sugar syrup, mangos and liqueur until smooth.
- Transfer to covered container and refrigerate up to 3 days.

SWEET CHUNKY MANGO SAUCE
My all time favourite on ice-cream and pan-cakes. Doesn't look fantastic but tastes great. Has a lot of spices. So good you could eat it on it's own.

Steps:
- Separate mango slices from syrup and do not throw away the syrup.
- Mash mangoes until chunky.
- Place mangoes, mango syrup, nutmeg, cinnamon, allspice and caster sugar in mixing bowl.
- Mix the mixture and place in a saucepan.
- Place saucepan over high heat and stir ingredients slowly but constantly.
- When the mixture begins to simmer, turn down the heat to medium.
- Cook mixture until it is hot, but not boiling hot.
- Serve on ice-cream, pancakes or in a bowl.

- Drain half the juice from the mangoes. Pour the mangoes & remaining juice into a small saucepan then add the spices & brown sugar.
- Simmer the mangoes over medium-low heat for 10 minutes. Mash the mangoes until the sauce becomes chunky.
- Serve warm or chilled. Also great as a topping for ice cream, pancakes, etc.

- Melt butter in a small stainless steel sauce pan on low heat.
- Add mango chutney and orange juice. Whisk to combine.
- Add cornstarch to the pan, whisking constantly to prevent clumps. Add the water in a slow, steady stream, whisking continuously.
- Sauce is finished when smooth and just thick enough to coat the back of a spoon.

DUCK WITH APPLES AND ORANGE LIQUEUR SAUCE
Several years ago I got into trying out lots of different duck recipes. This was one of the tastiest and easiest. The cooking time actually varies according to the size of the duck (see directions).

Steps:
- Melt all but 2 Tbs of the butter and pour over the duck in a roasting pan.
- Truss and bake at 350° 15 minutes per lb, basting often with the pan juices.
- Combine the cider and liqueur in a saucepan and reduce slightly by boiling.
- Gradually add the cream, salt& pepper.
- Over low heat, reduce the sauce by 1/3 or until thick.
- Fry the apple slices in 2 Tbs butter until golden brown.
- Remove the duck and let rest 15 minutes.
- Place the duck on serving platter, surrounded by the cooked apples.
- Serve the sauce in a separate dish with a spoon or ladle.
