Orange & Lime Ice-Cream (No Eggs, No Ice-Cream Maker) image

This is amazing ice-cream and very quick to prepare. I like to serve it with strawberries marinated in Cointreau with passionfruit pulp added before serving. It is also delicious with just about anything chocolate. I have tried this using regular cream but it takes longer to whip. This is so special, I hope you try it because I am sure you will make it again and again. This is taken from a Nigella Lawson recipe.

Number Of Ingredients 4

1 orange
2 limes
175 g icing sugar
600 ml double cream

Steps:

  • Grate the zest of the orange and limes, juice them and add to the sugar.
  • Stir to dissolve the sugar and add the cream.
  • Whip until soft peaks form (no longer or it could curdle) and pour into a shallow container with a lid.
  • Freeze for about 4 hours.
  • This is great even when frozen for a much shorter period and still creamy.
  • If frozen for a long period remove from freezer to soften for a while before eating.
  • Time doesn't include freezing time.

Recipe by Nigella Lawson. I love Nigella's ice-creams and you don't need an ice-cream machine. I have another posted here Orange & Lime Ice-cream #71438, they are both so very good. I haven't allowed for freezing time because it can vary so much.

3 lemons, fresh
175 g icing sugar
420 ml double cream
3 tablespoons ice water

Steps:

  • Grate the zest from two of the lemons using a microplane, squeeze the juice of all three lemons and pour into a bowl with the zest and sugar, stir to combine and leave for 30 minutes, to let the flavour deepen.
  • Whip the cream with the water until it holds soft peaks, then whisk in the sweetened lemon juice.
  • Turn into a shallow container, cover and freeze (no stirring) until firm - this could take 3-6 hours.
  • Let stand in container in the fridge for half an hour to soften enough to serve.
