GINGER-ORANGE BROCCOLI AND NOODLES



Ginger-Orange Broccoli and Noodles image

These glazed, gingery noodles are heavy on the veggies and peppered with lightly blackened cashews.

Number Of Ingredients 16

4 ounces dried stir-fry noodles of your choice (we used thick stir-fry rice noodles)
1/4 cup low-sodium soy sauce
1/2 cup fresh orange juice (from 2 large oranges)
2 tablespoons cornstarch
1 teaspoon sriracha
1 tablespoon dark miso
1 tablespoon pure sesame oil (may substitute a neutral oil such as grapeseed or canola)
1/2 large sweet onion, thinly sliced
1/2 large red bell pepper, seeded and thinly sliced
1 yellow bell pepper, seeded and thinly sliced
2 large broccoli crowns (1 1/2), cut into bite-size florets
1/2 cup roasted, unsalted whole cashews
2 pinches kosher salt
1/4 cup water
2 cloves garlic, thinly sliced
One-inch piece peeled fresh ginger root, minced or grated (about 1/2 teaspoon)

Steps:

  • 1 Cook the noodles as directed on the package, then drain
  • 2 (The rice noodles we prefer required just a few minutes in a bowl with boiling water, so "cook" here is a loose term
  • 3 )
  • 4 Meanwhile, let's get that flavor going
  • 5 Whisk together the soy sauce, orange juice, cornstarch
  • 6 Sriracha and miso in a medium bowl or liquid measuring cup
  • 7 When you're ready to really do some cooking, add the oil to a large skillet or saute pan over high heat
  • 8 Add the onion and stir-fry for 2 minutes, or until it starts to brown
  • 9 Add the red and yellow bell peppers, broccoli, cashews and salt
  • 10 Stir-fry for 5 minutes, or until the thickest broccoli stems are tender and the cashews are slightly blackened
  • 11 Reduce the heat to low
  • 12 Add the water, stirring until it evaporates
  • 13 Add the garlic and ginger, then stir-fry for 1 minute
  • 14 Turn off the heat
  • 15 Add the soy sauce mixture, stirring until it thickens into a beautiful, glossy sauce
  • 16 Add the drained noodles and stir gently until everything is evenly coated
  • 17 Serve warm

1 lb broccoli floret
1 cup water
1/4 teaspoon thyme
1 orange, sliced
3 tablespoons butter
1 tablespoon honey
1/4 teaspoon ginger

Steps:

  • In lg skillet, combine broccoli and water.
  • Sprinkle with thyme.
  • Top with orange slices.
  • Cover and cook on medium for 8 minutes, or until broccoli is crisp-tender.
  • In small pan, mix butter, honey and ginger.
  • Cook on low, stirring, until smooth.
  • Remove orange slices, drain broccoli.
  • Put broccoli on top of orange slices to serve.
  • Drizzle with butter mixture.

1/4 cup chicken broth
3 tablespoons dry sherry or 3 tablespoons chicken broth
1/2 cup orange juice
2 tablespoons soy sauce
1 tablespoon grated fresh ginger
2 teaspoons cornstarch
1 teaspoon toasted sesame oil
1/2 teaspoon crushed red pepper flakes
3/4 lb beef sirloin, trimmed of all visible fat,cut in 1/4 inch strips
2 teaspoons olive oil
1 bunch broccoli, cut into florets
1 bunch scallion, cut into 1/4 inch thick diagonal slices
3 cloves garlic, minced
2 cups cooked basmati rice

Steps:

  • In a medium bowl, combine the broth, sherry or broth, orange juice, soy sauce, ginger, cornstarch, sesame oil and red pepper flakes.
  • Add the beef, tossing to coat.
  • Let stand for 10 minutes.
  • Heat 1 tsp.
  • of the oil in a large skillet over medium high heat.
  • Add the beef to the skillet; reserve the marinade.
  • Cook the beef, stirring, for 3 minutes, or until browned.
  • Remove to a plate.
  • Add the remainder 1 tsp.
  • oil to the skillet.
  • Add the broccoli, scallions, and garlic; cook, stirring for 2 minutes.
  • Add 2 tablespoons water.
  • Cover and cook for 2 minutes, or until the broccoli is tender-crisp.
  • Add the reserved marinade and cook, stirring for 3 minutes or until the mix.
  • Boils and thickens slightly.
  • Return the beef to the pan and cook, stirring, for 2 minutes, or until heated through.
  • Serve over the rice.

1 pound beef top sirloin steak, cut into thin strips
4 teaspoons soy sauce
2 teaspoons minced fresh gingerroot
1 teaspoon finely grated orange zest
1 tablespoon canola oil
2 cups fresh broccoli florets
1 small sweet red pepper, cut into strips
2/3 cup picante sauce
1/2 teaspoon sugar, optional
1 tablespoon cornstarch
1/3 cup orange juice
3 green onions with tops, cut diagonally into 1-inch pieces
Sliced almonds, optional
Hot cooked rice

Steps:

  • Toss meat with soy sauce, ginger and orange zest; set aside for 10 minutes. , Heat oil in a wok or large skillet on high. Stir-fry mixture just until meat is no longer pink; remove. Add broccoli, pepper, picante sauce and sugar to skillet. Cover; reduce heat to simmer. Cook until vegetables are crisp-tender, about 3 minutes. , Combine cornstarch and orange juice until smooth; add to skillet along with meat and onions. Cook and stir 1 minute or until sauce is thickened. Sprinkle with almonds if desired. Serve with rice.

1 1/2 tablespoons dark sesame oil
3 tablespoons soy sauce
1 tablespoon ground ginger
2 teaspoons brown sugar
4 tablespoons water

Steps:

  • Saute the broccoli over medium heat in sesame oil for 8 minutes.
  • While broccoli is cooking, stir together the soy sauce, ginger, and sugar, stirring until sugar dissolves.

  • Grate 1 tsp orange peel from the orange and squeeze 1/4 cup juice.
