ORANGE DREAMSICLE CUPCAKES
"Since I was a kid, my family has competed in food competitions at the Texas State Fair. I have a basic cupcake recipe from my grandmother and I change the flavor every year. Orange and vanilla is my showstopper -- the combination reminds me of buying Creamsicles in the summer," says Emily.

- Make the cupcakes: Preheat the oven to 350 degrees F. Line 18 muffin cups with paper liners. Sift the flour, baking powder and salt into a medium bowl; set aside. Beat the egg whites in a large bowl with a mixer on medium-high speed until stiff peaks form, about 4 minutes; set aside.
- Beat the butter, granulated sugar, egg yolks, orange zest and orange oil in a separate large bowl with a mixer on medium speed until smooth and combined, about 4 minutes. Reduce the speed to low; beat in the flour mixture in three batches, alternating with the orange juice. Fold in the beaten egg whites. Spoon the batter into the muffin cups, filling each about halfway. Bake until a toothpick inserted into the centers comes out clean, about 15 minutes. Let cool 10 minutes in the pans, then remove to racks to cool completely.
- Make the frosting: Beat the butter and vanilla in a large bowl with a mixer on medium-high speed until light and fluffy, about 6 minutes. Reduce the speed to low; gradually beat in the confectioners' sugar. Add the milk, increase the speed to medium and beat until light and fluffy. Frost the cupcakes. Top with sanding sugar and orange gummy candies.
- Orange oil gives the cupcakes an intense orange flavor that you can?t get from just extract or zest.
ORANGE CREAM CUPCAKES
These Orange Cream Cupcakes are made with orange cupcakes and frosting and a light vanilla cream filling! Such a delicious cupcake and fun flavor!

- Preheat oven to 350°F (176°C) and prepare a cupcake pan with cupcake liners. 2
- . In a large mixing bowl, cream the butter and sugar together until light in color and fluffy, about 3-4 minutes. Do not skimp on the amount of creaming time.
- . Add sour cream, vanilla extract and orange zest and mix until well combined.
- . Add egg whites in two batches, mixing until well combined after each. Scrape down the sides of the bowl as needed to be sure all ingredients are well incorporated.
- . Combine dry ingredients in a separate bowl, then combine the milk, water and orange juice in a small measuring cup.
- . Add half of the dry ingredients to the batter and mix until well combined. Add the milk mixture and mix until well combined. Add remaining dry ingredients and mix until well combined. Scrape down the sides of the bowl as needed to be sure all ingredients are well incorporated. Do not over mix.
- . Fill the cupcake liners a little more than halfway. Bake for 15-17 minutes, or until a toothpick inserted comes out with a few crumbs.
- . Remove cupcakes from oven and allow to cool for 2-3 minutes, then remove to cooling rack to finish cooling.
- . When the cupcakes are cooled, make the filling. Add the heavy whipping cream, powdered sugar and vanilla extract to a large mixer bowl and whip on high speed until soft peaks begin to form.
- 0. Add the cream cheese and continue whipping until stiff peaks form.
- 1. Remove the centers of the cupcakes using a cupcake corer or sharp knife, then fill with the cream filling. To make the frosting, beat the butter in a large mixer bowl until smooth.
- 1. Add 2 cups of powdered sugar and mix until smooth.
- 2. Add the orange zest and 1 tablespoon of orange juice and mix until smooth.
- 3. Add the remaining powdered sugar and mix until smooth.
- 4. Add the remaining orange juice as needed for the right consistency of frosting and mix until smooth. 15
- Color the frosting as desired, then pipe the frosting onto the cupcakes. I used Ateco tip 844. 16.
- Decorate the cupcakes with orange slices, or your preferred decorations.

- Preheat the oven to 350 degrees F (175 degrees C). Line a 12-cup muffin pan with paper liners or grease with butter.
- Whisk flour, baking powder, and salt together in a medium bowl.
- Beat sugar and butter together in a separate bowl until light and fluffy. Beat in eggs, one at a time, then add milk, vanilla extract, and orange extract slowly.
- Pour batter evenly into the prepared tin.
- Bake in the preheated oven until a toothpick inserted into the center of a cupcake comes out clean, 20 to 25 minutes. Remove from the oven and let cool completely.
- Beat butter for frosting with a mixer on high speed; mix in powdered sugar. Add heavy cream 1 tablespoon at a time. Add orange extract and vanilla extract and mix until smooth. Frost cooled cupcakes.
- Combine orange, orange juice, cornstarch, and powdered sugar for glaze in a saucepan. Stir until all lumps are gone. Bring to a boil; reduce heat and let simmer, stirring every few seconds, for 5 minutes. Strain orange out of the glaze into a container. Pour a little glaze over each frosted cupcake.

These ARE delicious! One bite and I was brought back to the ice cream I enjoyed so much as a kid. I added orange food coloring to my buttercream frosting to top these off. I can't wait to make these again! A treat the entire family will enjoy.

- 1. For cake: Preheat oven to 325 degrees.
- 2. Sift all dry ingredients into bowl, then mix all wet ingredients into dry ingredients together until blended.
- 3. Scoop batter into cupcake liners/cupcake tin. Bake for 18-20 min until cooked through (cake springs back/or toothpick comes clean. Let cool on racks before adding filling. Makes approx 30-32 cupcakes
- 4. For Cream Filling: Cook together first 5 ingredients until thick like wallpaper paste. Make sure flour is added and mixed well so doesn't become lumpy. Cool.
- 5. Separately mix sugar, butter, and shortening. Add to cooled mixture and beat with mixer 5 minutes/or until fluffy. Squeeze into cooled cupcakes with a frosting bag and tip.
- 6. On Top: Orange glaze or frosting of your choice for top. I typically use the crusting buttercream recipe for all my cakes and cupcakes listed in my recipe file, and you could flavor that orange or vanilla to your liking and color with orange food coloring if preferred.

- Scoop out 1 cup of batter and pour it into a small bowl. Add the orange extract and food coloring to this batter and mix until combined. The amount of food coloring is your preference. I personally used 2 drops of gel food coloring. Set aside.
- Scoop the plain batter and fill 12 cupcake liners evenly. Then, top each of the 12 cupcakes with a scoop of the orange batter. Bake for 20-25 minutes, until a toothpick comes out clean. Cool completely.
