RED CURRANT SAUCE

Red Currant Sauce image

Recipe I came up with to serve with a chicken dish but I think it would be also suited to other poulty and game meats. I didn't use a great amount of sugar so the sauce retains a bit of tartness from the currants which was what I was after rather than anything too sweet. Note that it's quite a thin sauce rather than a thick one, aimed at things like rice and battered items that will soak it up, but you could always thicken it with cornflour.

Time 30m

Yield 1 1/2 cups, 8 serving(s)

Number Of Ingredients 3

300 g red currants
150 g brown sugar
3 tablespoons malt vinegar

Steps:

  • Combine ingredients in medium saucepan.
  • Start cooking over medium temperature and lower after a while to maintain a gentle simmer, stirring occasionally.
  • I started with frozen currants and cooked for 25 minutes, I imagine 20 minutes would be sufficient for fresh currants and the first 5 minutes was more or less defrosting them.

Yield Serves 12

Number Of Ingredients 20

Crust
Nonstick vegetable oil spray
1 1/3 cups ground chocolate wafer cookies
1/4 cup (1/2 stick) butter, melted
For Filling:
2/3 cup dried currants
3 tablespoons plus 1 teaspoon bourbon
1/3 cup dark corn syrup
3 large egg yolks
3/4 cup half and half
9 ounces bittersweet (not unsweetened) chocolate, finely chopped
1/4 teaspoon ground nutmeg
1/2 cup chilled whipping cream
Bittersweet chocolate curls
Powdered sugar
For Orange Custard Sauce:
1 1/2 cups half and half
6 tablespoons sugar
6 large egg yolks
1 teaspoon grated orange peel

Steps:

  • For Crust:
  • Preheat oven to 350° F. Spray vegetable oil spray on 9-inch-diameter tart pan with removable bottom. Combine ground cookies and butter in processor; blend until very moist crumbs form. Using plastic wrap as aid, press crumbs firmly onto sides, then bottom of prepared pan. Chill 15 minutes. Bake until set, about 8 minutes. Cool.
  • For Filling:
  • Mix currants and bourbon in heavy small saucepan. Bring to simmer over low heat. Cover and set aside. Whisk corn syrup and egg yolks in medium bowl. Bring half and half to simmer in another heavy small saucepan. Gradually whisk half and half into yolk mixture. Return mixture to same saucepan and stir over medium-low heat until custard thicken and leaves path on back of spoon when finger is drawn across, about 4 minutes (do not boil). Pour into large bowl. Add chopped bittersweet chocolate and nutmeg, whisk until melted and smooth. Mix in currants and bourbon. Chill just until cool, stirring occasionally, about 15 minutes. Whip cream in medium bowl to stiff peaks. Fold cream into chocolate mixture. Transfer filling to crust. Chill until firm, at least 4 hours or overnight.
  • Gently press up tart pan bottom to loosen tart. Remove pan sides. Transfer tart to platter. Top with chocolate curls. Sift powdered sugar over. Serve with Orange Custard Sauce.
  • For Orange Custard Sauce:
  • Bring half and half to simmer in heavy medium saucepan. Whisk sugar and yolks in small bowl. Gradually whisk in hot half and half. Return mixture to saucepan and stir over medium-low heat until custard thickens and leaves path on back of spoon when finger is drawn across, about 3 minutes (do not boil). Strain into bowl. Mix in peel. Cover and refrigerate until cold. (Can be prepared 2 days ahead. Keep refrigerated.) Makes about 1 1/2 cups.

LAMB FILLET WITH ORANGE, REDCURRANT AND MINT SAUCE

Lamb Fillet with Orange, Redcurrant and Mint Sauce image

This was in Melbournes Herald Sun Newspaper yesterday. It looks fast and tasty, and I love lamb! They suggested 3 minutes would be enough cooking time for the fillets, but I think a little more would suit me!

Provided by JustJanS

Categories     Lamb/Sheep

Time 10m

Yield 6 serving(s)

Number Of Ingredients 9

6 lamb fillets (large enough for 1 per person)
1 teaspoon finely grated orange rind
1/2 cup orange juice
2 tablespoons lemon juice
1/3 cup red currant jelly
2 tablespoons port wine or 2 tablespoons chicken stock
2 teaspoons French mustard
salt and pepper
1 tablespoon fresh mint leaves, roughly chopped

Steps:

  • Mix everything (except the lamb) together in a small saucepan and bring to the boil, stirring to melt the redcurrant jelly.
  • Cook for a couple of minutes (this can be done in advance).
  • Season the lamb and oil the outside lightly.
  • Put in a hot pan and brown on all sides.
  • Cook until done to your liking-I would cook a small thin fillet for about 5 minutes.
  • Remove to a warm plate and cover loosely with foil or another plate.
  • Tip the sauce into the lamb cooking pan, and boil quickly.
  • Serve the lamb sliced diagonally with plenty of sauce poured over.

DUCKLING WITH ORANGE SAUCE

Duckling with Orange Sauce image

Provided by By Betty Crocker Kitchens

Categories     Entree

Time 3h5m

Yield 4

Number Of Ingredients 11

1 whole duckling (4 to 5 lb), thawed if frozen
2 teaspoons grated orange peel
1/2 cup orange juice
1/4 cup currant jelly
1 tablespoon lemon juice
1/8 teaspoon ground mustard
1/8 teaspoon salt
1 1/2 teaspoons cornstarch
1 tablespoon cold water
1 medium orange, peeled, sectioned
1 tablespoon orange-flavored liqueur, if desired

Steps:

  • Heat oven to 350°F. Fasten neck skin to back of duckling with skewer. Fold wings across back of duckling so tips are touching. On rack in shallow roasting pan, place duckling, breast side up. Pierce skin all over with fork. Loosely tie legs to the tail, if desired, to better hold an even shape during cooking. Insert ovenproof meat thermometer so tip is in thickest part of inside thigh and does not touch bone.
  • Roast uncovered about 2 hours 30 minutes or until thermometer reads at least 165°F and legs move easily when lifted or twisted. If necessary, place tent of foil loosely over breast during last hour to prevent excessive browning. Place duckling on warm platter; cover and let stand 15 to 20 minutes for easiest carving.
  • Meanwhile, in 1-quart saucepan, heat orange peel, orange juice, jelly, lemon juice, mustard and salt to boiling. In small bowl, mix cornstarch and water; stir into sauce. Cook over medium heat, stirring constantly, until mixture thickens and boils. Boil and stir 1 minute. Stir in orange sections and liqueur. Brush duckling with some of the sauce. Serve with remaining sauce.
