2 to 4 tablespoons butter, melted
2 tablespoons honey
1/2 teaspoon ground cinnamon
3 large eggs
1/2 cup orange juice
1/8 teaspoon salt, optional
6 slices bread
Additional honey, optional

Steps:

  • Preheat oven to 400°. In a small bowl, mix the butter, honey and cinnamon. Pour into a greased 13x9-in. baking pan; spread to coat bottom of pan. , In a shallow bowl, whisk the eggs, orange juice and, if desired, salt. Dip both sides of bread in egg mixture. Place in prepared pan. , Bake until golden brown, 15-20 minutes. Invert onto a serving platter; if desired, serve with additional honey.

Mom's Orange French Toast is the best French Toast ever! Orange extract provides delicious flavor.

2 eggs ((extra large; or 3 large))
1/4 cup milk ((or half & half))
3 sprinkles salt
1 1/2 teaspoons orange extract
4 slices bread ((about 1/2-inch thick))
1 1/2 tablespoons salted butter ((divided use))
maple syrup ((for serving))
orange slices ((optional))

Steps:

  • In a small mixing bowl, add the eggs, milk, salt and orange extract. Beat well with a fork or whisk.
  • Stack your bread in the bowl. Coat both sides of each slice with the egg mixture, letting it soak in for a bit. (Using a spatula, you can take turns carefully transferring the bottom piece of bread to the top of the stack and keep going, then flip the bread and repeat.) If there is leftover egg mixture, pour some on each piece when you start cooking.
  • Heat a skillet or griddle to medium high. (If using an electric skillet, set it to 375 degrees F.) Melt a tablespoon of butter in the pan and spread it around with a spatula to coat the pan. Cook 3-4 slices of French toast at a time, depending on what will fit. Start checking each piece after 3-4 minutes on the first side.
  • Flip each slice when it is starting to brown. Add another 1/2 tablespoon of butter to the pan and use your spatula to disperse it so it flows underneath the bread. Continue cooking the French Toast on the second side, until it is browned to your liking.
  • Serve the French toast with maple syrup and orange slices, if desired.

1 loaf day-old French bread
8 ounces cream cheese, softened
1/4 cup powdered sugar
1 1/2 tablespoons sour cream
1 orange, zest of
mexican vanilla (if possible)
6 large eggs
1 1/2 cups milk (approximately)
oil
cinnamon
nutmeg
powdered sugar
orange slice (to garnish)

Steps:

  • Blend vanilla into the cream cheese, powdered sugar, sour cream and orange zest. Mix well. Cover and store in the refrigerator overnight, to let the orange flavor blend into the cream cheese mixture.
  • In the morning, mix eggs & milk, in a 1:1 ratio. (For two people, use three eggs. Measure them into a measuring cup, and then pour in that much milk.) Whisk together with a little vanilla.
  • Slice the day-old French bread into 1 & 1/2 inch thick slices. Cut a pocket into each slice and fill generously with the cream cheese mixture. Dip into the eggs & milk blend, allowing your French bread to soak it up. Grill on an oiled, preheated griddle on medium heat for about 2-4 minutes, until golden. Sprinkle with a scant amount of cinnamon and nutmeg. Turn once, and cook for another few minutes, till golden.
  • Dust with powdered sugar, garnish with fresh slices of orange, and serve immediately with warmed maple syrup. Looks lovely garnished with a bit of the orange zest, too, if you have some nice long pieces. Enjoy!

4 large eggs
1 tablespoon light brown sugar
1 teaspoon lightly packed orange zest
1/2 teaspoon vanilla extract
1/2 teaspoon ground cardamom
1/2 teaspoon kosher salt
8 (1-inch thick) slices sweet batard or brioche
3 or 4 tablespoons unsalted butter (1/2 stick)
Honeyed Strawberries, recipe follows
1 tablespoon honey
1/2 vanilla bean, split lengthwise and seeds removed
1/4 cup freshly squeezed orange juice
1 pound strawberries, hulled, and halved lengthwise

Steps:

  • In a large bowl, whisk together milk, eggs, sugar, orange zest, vanilla, cardamom, and salt until eggs are broken up and evenly combined. Soak 3 bread slices in egg mixture turning once, until soaked through, about 4 minutes total.
  • Meanwhile, melt 1 tablespoon of butter in a large frying pan over medium heat. When butter foams, place 3 pieces soaked bread in the pan and cook until browned, about 2 minutes per side. Repeat with remaining bread. Serve topped with Honeyed Strawberries.
  • Mix honey, vanilla, and orange juice together in a medium bowl until honey is dissolved. Add strawberries, stir to coat, and let sit until berries give off their juices, at least 5 minutes. Stir briefly before using.

1 1/2 cups heavy cream, half-and-half, or milk
2 tablespoons Grand Marnier
1 teaspoon pure vanilla extract

4 ounces cream cheese, softened
2 tablespoons confectioners' sugar
6 croissants, preferably day-old
1/2 cup orange marmalade, plus more for serving if desired

2 tablespoons vegetable oil
Orange Syrup
2 oranges, segmented (optional)

Steps:

  • Whisk together the eggs, cream, Grand Marnier, vanilla, cinnamon, nutmeg, salt, and orange zest in a medium bowl, and set aside. Stir together the cream cheese and confectioners' sugar in a small bowl.
  • Halve the croissants crosswise. Spread bottom with cream-cheese mixture, then with marmalade. Place tops back on to seal. Place the stuffed croissants in a shallow baking dish large enough to hold them in a single layer. Pour egg mixture over croissants; soak 5 minutes.Turn croissants over; soak 5 minutes more or until they are soaked through.
  • Preheat oven to 250 degrees. Place a wire rack on a baking sheet; set aside. Heat 1 tablespoon butter and 1 tablespoon vegetable oil in a large skillet over medium heat. Fry half of the croissants until golden brown, about 3 minutes per side.Transfer to wire rack, and place in oven while cooking remaining bread.Wipe out skillet, and repeat with remaining butter, oil, and bread. Keep in oven until ready to serve. Serve warm with orange syrup, butter, and orange segments, if desired.

ORANGE PECAN FRENCH TOAST

My husband and I were vacationing recently and had this lovely French toast at a bed and breakfast. When we came back home, I kept missing it so I called them up and requested it. They actually gave me the recipe over the phone! I generally halve the recipe for my husband and I, and bake it in an 8 inch square pan. Reheats well in the toaster oven. I served it to my in-laws recently and they loved it. Serve with a little sweetened whipped cream and berries!

⅓ cup butter, melted

⅓ cup chopped pecans

  • In a medium bowl, whisk together the orange zest, orange juice, milk, sugar, cinnamon, vanilla, egg whites, and eggs. Pour this mixture over the bread, pressing on the bread slices to help absorb the liquid. Cover and refrigerate for at least one hour, or overnight.
  • Preheat the oven to 350 degrees F (175 degrees C ). Remove the cover from the baking dish, and let stand for 20 minutes at room temperature.
  • Bake for 35 minutes in the preheated oven, until golden brown. Dust with confectioners' sugar before serving.

1/2 cup orange marmalade

  • Preheat oven to 300°F.

CLASSIC FRENCH TOAST

Here's a recipe for the kind of French toast people line up for outside restaurants on Sunday morning. It's simple: no new ingredients, tools or technology needed. You don't even need stale bread. What you do need is thick-cut white bread, dunked into an egg-milk mixture with extra richness from egg yolks and heavy cream. That gives the French toast a buttery taste and firm but fluffy texture. (Oversoaking is the enemy here; the mixture should fill the bread, not cause it to break.) For an appetizing, lacy brown crust, sprinkle on sugar toward the end of cooking: It will caramelize and turn glossy. Just make sure to keep the heat low after you add the sugar. Otherwise, it could burn quickly over high heat.

2 whole eggs
2 egg yolks
2 cups whole milk, or 1 3/4 cups milk, plus 2 to 4 tablespoons cream

8 slices white bread, such as Pullman, brioche or challah, sliced 1/2- to 3/4-inch thick

Steps:

  • Heat oven to 200 degrees, and place a wire rack on a sheet pan inside.
  • In a shallow bowl, whisk the eggs, additional yolks, milk, vanilla (if using) and salt until foamy and smooth. Set aside. Place a small lump of butter (enough to coat the bottom of the skillet when melted) in a large, heavy nonstick skillet over low heat. It will melt very slowly.
  • When butter is just melted and bubbling, raise heat and bring to a sizzle. Place 2 slices of bread in the bowl with the egg mixture. Turn them a few times in the mixture until evenly saturated, about 5 seconds on each side. Do not soak.
  • Lift a slice out of the egg mixture, gently shake off any excess, and place in the pan. Repeat until the skillet is full, and let the slices cook at a sizzle for about 2 minutes, until just turning golden brown on the bottom.
  • Add another small lump of butter to the pan and flip the slices over, swirling the pan so that the fresh butter coats the bottom. (This will allow the second side to brown.)
  • Continue cooking over low heat until the second side is golden brown. Dust with cinnamon sugar, flip again, and dust the other side. Test for doneness by pressing the center: The dent should slowly spring back. If it remains, the interior is not yet cooked. Continue cooking at low heat, flipping occasionally, until done. Serve immediately, or transfer to the oven to keep warm while cooking remaining bread. Serve as soon as possible. Top with maple syrup, berries, jam, sliced bananas, orange supremes - whatever you'd like.
