Great on Carrot Walnut Cookies (see recipe).

Number Of Ingredients 6

3 ounces cream cheese, softened
2 tablespoons butter, softened
1 teaspoon orange zest
2 tablespoons fresh orange juice
2 ½ cups confectioners' sugar
¾ cup chopped walnuts

Steps:

  • Beat cream cheese, butter or margarine, orange peel, and orange juice until creamy. Beat in confectioner's sugar until blended and smooth.
  • Spread about 1 1/2 teaspoons on each cooled cookie. Sprinkle with walnuts.
  • Let icing set 1 to 2 hours. Refrigerate in an airtight container with waxed paper between layers up to 1 week.

Number Of Ingredients 6

1 cup (2 sticks) unsalted butter, room temperature
2 bars (8 ounces each) cream cheese, room temperature
2 cups confectioners' sugar, sifted
2 teaspoons freshly grated orange zest
Pinch kosher salt
Pinch kosher salt

Steps:

  • Place butter in bowl of an electric mixer fitted with the paddle attachment and beat on medium-high speed until fluffy, about 2 minutes. Add cream cheese and beat until well combined and fluffy, about 2 minutes more. Add sugar, orange zest, and salt and beat for 5 minutes.

1/4 cup cocoa
1 teaspoon orange extract
3 3/4 cups powdered sugar
1 -2 tablespoon orange juice or 1 -2 tablespoon orange liqueur

Steps:

  • Cream together cream cheese and butter until fluffy.
  • Add cocoa, extract, powdered sugar and 1 Tbs liquid. Beat together, adding additional liquid as necessary until desired consistency and well combined.
  • Beat at medium speed for another 2 minutes, or until fluffy.

1 duncan hines brand moist deluxe devil's food cake mix, 18 . 25 oz (1 lb 2.25 oz)
2 tablespoons hershey's brand european style Dutch-processed cocoa powder
1 1/3 cups water
1/2 cup vegetable oil
3 large eggs
1 1/4 cups oranges, & carrot pulp (from 3 oranges and 6 carrots)
1 (8 ounce) package cream cheese
4 ounces butter
1/4 cup cocoa
3 tablespoons milk
1/4 teaspoon orange oil
1 tablespoon fresh orange zest
3 -4 cups powdered sugar

Steps:

  • Directions for Cake: Preheat oven to 350 degrees Fahrenheit. In a blender, process orange and carrot pulp with eggs, oil and water. Add cocoa powder to dry cake mix and stir, then fold in pulp mixture. Grease two 8 inch round cake pans. Divide batter between pans. Bake 35-40 minutes.
  • Directions for Frosting: Mix together softened cream cheese and butter. Stir in orange oil, orange zest, cocoa powder and milk. Add powdered sugar 1 cup at a time until desired constancy.
  • When the cakes have cooled, frost & serve!

This fruity orange frosting makes a deliciously decorative topping for Halloween Cupcakes (page 81) and other festive treats. Change it up and make your own lemon cream cheese frosting by substituting lemon zest for the orange zest and eliminating the food coloring.

Yield makes 1 1/4 cups

Number Of Ingredients 6

8 ounces cream cheese, at room temperature
1/2 cup butter (1 stick), at room temperature
1/4 cup agave nectar
1 tablespoon firmly packed orange zest
Red food coloring, made from vegetable dye
Yellow food coloring, made from vegetable dye

Steps:

  • In a deep bowl, whip the cream cheese, butter, and agave nectar until smooth using a handheld mixer. Add the orange zest and food coloring and mix until the desired orange hue is achieved, adding more food coloring as necessary.
  • Refrigerate for 30 minutes, until the frosting is slightly chilled and thickened so that it is easily spreadable.
  • Use immediately or store in a glass Mason jar in the refrigerator for up to 3 days.

1 tbsp orange juice (optional)
100g icing sugar , sieved
200g full fat cream cheese

Steps:

  • Beat the softened butter to a soft and even consistency. Add the orange juice, if using, then the icing sugar. Cream until you have a smooth, soft buttercream consistency.
  • Add the cream cheese and work it in - don't beat it in, just slowly mix with a wooden spoon. Depending on how soft the mixture is, you may want to put it in the fridge for 10 mins at this point. If it's runny, it will firm up again. It should be spreadable and not run off the cake.
