- Combine the vinegar, sugar, dry mustard, salt, oil and poppy seeds in a container. Mix well.
- Place the romaine lettuce on salad plates. Decorate with the orange and avocado slices. Drizzle the dressing over top and serve.

Mandarin oranges add the color and the dressing adds the zing to this mixture of greens. You can use spinach or iceberg lettuce in place of romaine, or use a combination of any of them.

- Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
- Place vinegar, sugar, red onion, mustard powder, and salt into the bowl of a blender. Cover, and puree on high until smooth. Reduce blender speed to medium-low; slowly pour in the vegetable oil and blend until incorporated and the dressing is creamy. Stir in the poppy seeds and set aside.
- To serve, toss the romaine in a large bowl with the crumbled bacon, Mandarin oranges, and enough dressing to moisten. Place onto salad plates and sprinkle with toasted almonds.

- Cut off ends of oranges; using a paring knife, remove peel, pith, and outer membranes, following the curve of the fruit. Working over a bowl to catch the juices, cut between sections to remove whole segments; add segments to a large bowl. Squeeze juice from membranes into a bowl; measure out 3 tablespoons juice; reserve remaining juice for another use.
- In a small bowl, whisk together reserved orange juice, vinegar, and olive oil; season with salt and pepper.
- In a large bowl, combine oranges, lettuce, avocado, and radishes. Drizzle with dressing as desired, and toss gently to combine. Serve immediately.

- First make the dressing: Add the orange juice, oil, apple cider vinegar, honey, garlic, dijon mustard, poppyseed and salt to a medium bowl and whisk until well combined. Set aside.
- Add sliced almonds to a skillet or pan and place over medium heat. Toast almonds for 5-7 minutes or until almonds become golden and fragrant. Be sure to stir every minute or so to ensure that almonds do not burn. Once they are finished toasting, immediately remove almonds from the pan and set aside to cool for a few minutes.
- In a large bowl, add spring mix, quartered strawberries and orange segments. Then pour dressing over and toss to combine. Top salad with goat cheese crumbles, avocado and toasted almonds. Serve with protein of choice, or as a side salad.
