ORANGE OATMEAL COOKIES
This is a wonderful cookie recipe for those who love oatmeal cookies and also orange-flavored cookies. They are chewy, not crispy, and are fairly quick-cooking!

Steps:
- In large bowl of mixer, cream butter and sugar until fluffy; beat in egg, orange zest and juice.
- Gradually beat in flour, baking powder, soda, salt and nutmeg until mixed.
- Add oats (I used quick-cooking oats, but I think that old-fashioned or rolled oats would improve the texture.).
- Drop by heaping teaspoonfuls on greased cookie sheets.
- Bake in 350° oven until golden around edges.

- Heat oven to 350°F. Grease cookie sheets. In large bowl, combine brown sugar, shortening, orange juice, orange peel and eggs mix well. Add flour, baking soda and salt mix well. By hand, stir in oats, nuts and coconut. Drop by rounded teaspoonfuls 2 inches apart onto greased cookie sheets.Bake at 350°F. for 10 to 12 minutes or until light golden brown. Cool cookies 1 minute remove from cookie sheets.HIGH ALTITUDE - Above 3,500 feet: Increase flour to 2 1/2 cups. - Preheat oven to 350 degrees F (175 degrees C). Line 2 baking sheets with parchment paper.
- Beat butter, white sugar, and brown sugar with an electric mixer in a large bowl until smooth. Stir egg white and applesauce into butter mixture until just combined into a dough. Add orange juice with pulp and orange zest to the dough; stir.
- Mix flour, oats, walnuts, baking soda, cream of tartar, and cinnamon in a separate bowl; fold into the dough until evenly incorporated.
- Drop by heaping tablespoon onto prepared baking sheets.
- Bake in preheated oven until bottom of cookies are lightly browned, 10 to 12 minutes. Cool on baking sheets 2 to 3 minutes before moving to wire racks to cool completely.

- Put oven rack in middle position and preheat oven to 375°F. Butter a large baking sheet.
- Stir together oats, flour, baking soda, and salt in a bowl to combine.
- Whisk together brown sugar, butter, egg, vanilla, and zest in another bowl.
- Stir egg mixture into flour mixture until just combined. Stir in chocolate chips.
