SESAME NOODLES

Sesame Noodles image

A modern version of a Cantonese classic, this noodle dish got a reworking in Epicurious member Roni Jordan's Massachusetts kitchen and has been a family staple for more than twenty-five years. These sesame- and soy-sauced noodles will easily become a favorite whether you enjoy them warm, at room temperature, or straight out of the fridge three days later. Toss in your favorite veggies for a multifaceted vegetarian meal or serve it alongside grilled chicken or flank steak.

Yield Makes 4 servings

Number Of Ingredients 11

1/4 cup light soy sauce
1/4 cup Asian sesame oil
1 tablespoon peanut or vegetable oil
1 tablespoon honey
1/2 tablespoon chili garlic sauce
1/4 cup white sesame seeds, lightly toasted, or black sesame seeds, untoasted
1/3 cup green onions (white and light green parts only), thinly sliced on a diagonal
1 garlic clove, minced
1 (1-inch) piece fresh ginger, peeled and minced
Optional extras: thinly sliced mushrooms such as black, shiitake, or cremini; blanched and slivered pea pods; thinly sliced red bell peppers; julienned carrots
1 pound fresh Chinese egg noodles, cooked and drained

Steps:

  • In a large bowl, whisk together the soy sauce, sesame oil, peanut oil, honey, chili garlic sauce, sesame seeds, onions, garlic, and ginger along with any garnishes you may want to use. Add the noodles and toss to coat evenly.
  • The NOODLES may be prepared ahead and refrigerated, covered, up to 24 hours. Toss well before serving.

MY FAVORITE SESAME NOODLES

My Favorite Sesame Noodles image

This recipe for sesame noodles is one I've created through trial and error. It combines green onions, peanut butter and sesame oil for a wonderfully complex flavour.

Time 25m

Yield 1

Number Of Ingredients 10

½ (8 ounce) package spaghetti
2 tablespoons peanut butter
1 tablespoon honey
2 tablespoons tamari
1 teaspoon Thai chili sauce
1 teaspoon sesame oil
1 teaspoon ground ginger
1 clove garlic, minced
1 green onion, chopped
2 teaspoons sesame seeds

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the spaghetti, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 12 minutes. Drain well in a colander set in the sink.
  • Melt the peanut butter in a large microwave-safe glass or ceramic bowl, 15 to 20 seconds (depending on your microwave). Whisk the honey, tamari, and chili sauce into the peanut butter, then stir in the sesame oil and ginger. Mix in the garlic and green onions and toss with the spaghetti. Top with the sesame seeds.

"OPEN SESAME" NOODLES

This is a very versatile and widely enjoyed pasta dish with chicken. It has an Asian influence with a very nice sesame flavor. I whipped it up one evening with a limited pantry and my little one named it. Joint collaboration on this one, folks! Oh yea, and the key is with the FRESH ginger.

  • Install the standard blade in the work bowl of your food processor then put the work bowl on your scale and weigh in all the ingredients except the pasta , remembering to zero out the weight of each ingredient as you go. This is one of those cases where the scaling is more about convenience than precision, so if you ere a gram or two on either side of target, it’s okay. It’s not going to explode or anything.
  • Pulse about ten times in 3-second bursts to bust up the garlic. Then run steady for about two minutes. Scrape down the sides if needed and go another minute or until the sauce is smooth.
  • Place 2/3rds of the sauce in the bottom of a large bowl and toss in the noodles until thoroughly coated. This is a lot easier if the sauce is warm so if you’re getting it out of the fridge you may want to nuke it briefly.
  • Garnish with any of the options listed above and consume. I typically go with the sesame seeds and green onions.
