OPEN FACED BRAUNSCHWEIGER MELTS
My Mom used to make these for us during tomato season in the summertime (way back in the 70's). Even though the combination of ingredients sounds weird, the flavors really blend well into an awesome taste sensation that I am totally addicted to, even after all these years. I LOVE this stuff! (Unbelievably quick and easy, too.) :)

Steps:
- Toast bread slices, and put them on an ungreased baking sheet.
- Spread 1 Tbsp mayonnaise on each toasted piece of bread.
- Place 1 Braunschweiger slice over the mayonnaise.
- Place 1 slice of tomato on top of Braunschweiger slices.
- Place 1 slice of cheese on top of tomato.
- Put baking sheet under a preheated broiler and broil until cheese gets bubbly (3-5 minutes).

Who knew caramelizing onions in Italian dressing and serving them over a melty open-face burger could be so delicious? (We knew, apparently!)

Steps:
- Heat dressing in large nonstick skillet on medium-high heat. Add onions; cook 2 min. Stir onions and move to one side of skillet.
- Add patties to other side of skillet; cook on medium heat 10 min. or until burgers are done (160ºF), flipping burgers and stirring onions after 5 min.
- Top burgers with VELVEETA; cover. Cook 1 to 1-1/2 min. or until VELVEETA is melted; place on toast slices. Top with onions.

- Preheat the broiler.
- Arrange the bread slices in a single layer on a baking sheet.
- Broil 4 to 5 inches from the heat source for about 2 minutes per side, or until lightly toasted.
- (Or toast the bread in a toaster.) Spread 1 side of each slice with mayonnaise.
- To make the topping: Heat the olive oil in a large nonstick skillet over medium-high heat; add the mushrooms, zucchini, onion, and garlic.
- Cook, stirring occasionally, until tender, about 5 minutes.
- Remove from the heat; stir in the salt and pepper.
- Taste and adjust the seasoning.
- Combine the cheeses in a small bowl.
- Top each bread slice with 2 tomato slices, a sprinkling of pepper, and half of the sautéed vegetables, lettuce or bean sprouts, and the cheese mixture.
- Place the sandwiches on the baking sheet.
- Broil for about 2 minutes, or until the cheese is melted.
