LOBSTER CLUB SANDWICH
You can't go wrong with this easy and delicious twist on the popular lobster roll. The ingredients include thick white bread, lobster tail, green onions, mayo, bacon and tomato. Just a few more items and you'll have the perfect lobster club!

Steps:
- Toss together the lobster meat, green onions and parsley in a medium mixing bowl. In a small bowl, stir together the mayonnaise and lemon juice. Add half of the lemon mayonnaise mixture to the lobster. Season with salt and pepper and fold together.
- Spread 1 side of each slice of bread with the remaining lemon mayonnaise mixture. Top 2 slices of bread with arugula, tomato and bacon. Spoon the lobster salad on top. Cover with a second slice of bread. Cut the sandwich in half, diagonally and secure with frilly toothpicks.
LOBSTER BLTS
Steps:
- Bring a medium pot of water to a boil. Add the lobster tails and boil until the shells are bright red and the lobster is just cooked through, about 7 minutes. Drain and submerge in a bowl of ice water to cool.
- Using kitchen shears, remove the shells by the underside down the middle and then cutting the top. Pull out the meat, rinsing or wiping off any residual shell fragments, and dice into 1/2-inch pieces.
- Put the bacon in a cold, large skillet and cook over medium heat, turning occasionally, until crisp and browned, 10 to 12 minutes. Drain on a paper-towel-lined plate.
- In a medium bowl, stir together the 1/3 cup mayonnaise, shallots, celery, capers, vinegar and lemon zest and juice. Fold in the diced lobster. Add salt and pepper to taste.
- Lay out the bread slices on a work surface and spread each with 1/2 tablespoon mayonnaise. Top half of the slices with 2/3 cup lobster salad, 2 slices bacon and 2 tomato slices. Season the tomatoes with salt and pepper. Top with a piece of lettuce and cover with the remaining bread slices.
- Slice the sandwiches in half, securing each half with a frilly toothpick.
OPEN-FACED LOBSTER "ROLLS" WITH AVOCADO SPREAD
This lighter take on the lobster roll exchanges the mayo for a lemon-avocado puree and the usual buttered roll for a slice of grilled bread.

- Prepare an ice-water bath. Bring a large pot of water to a boil. Reduce heat to medium-low. Plunge lobsters into water headfirst, and simmer, covered, for 11 minutes. (Do not let water boil.) Transfer to ice-water bath using tongs. Let stand for 10 minutes to cool.
- Crack lobster claws, knuckles, and tails, and remove meat. Chop meat into chunks.
- Toast fennel seeds in a skillet over medium-high heat for 1 minute; grind. Transfer to a food processor; pulse with avocado, 2 tablespoons lemon juice, 2 teaspoons scallions, 1/2 teaspoon salt, and some pepper until smooth.
- Spread avocado mixture onto bread; top with watercress. Arrange lobster meat on top, and sprinkle with remaining scallions. Drizzle with remaining tablespoon lemon juice and the oil. Garnish with lemon zest.

- Brush English muffins with butter; set aside. In a bowl, combine the crab, shrimp, 3/4 cup cheese, celery, olives and parsley. Combine the mayonnaise, lemon juice, mustard and Worcestershire sauce; pour over seafood mixture and toss to coat. , Place a rounded 1/4 cupful of the mixture on each muffin half; sprinkle with remaining cheese. Place on a baking sheet. Broil 4-6 in. from the heat for 3-4 minutes or until heated through and cheese is melted. Serve immediately.

- Combine first 4 ingredients and 2 tablespoons chives in medium bowl. Cook lobster in medium pot of boiling salted water until just opaque in center, about 8 minutes. Drain; cool. Remove meat from shell. Dice lobster; fold into mayonnaise mixture. Season with salt and pepper.
- Spoon salad atop bread slices. Sprinkle with 1 tablespoon chives and serve.
