3-1/4 to 3-1/2 cups all-purpose flour
3/4 teaspoon salt
6 eggs, beaten

Steps:

  • In a small bowl, combine 3-1/4 cups flour and salt. Make a well in the center. Pour eggs into well. Stir together, forming a dough. Turn dough onto a floured surface; knead for 3-4 minutes or until smooth, adding remaining flour if necessary. , Divide into nine portions; cover and let rest for 15 minutes. Roll each portion into a 12-in. x 5-in. rectangle. Roll up jelly-roll style, starting with a short side; cut into 1/4-in.-thick strips. Unroll noodles and allow to dry on kitchen towels for 1 hour before cooking. , To cook, fill a Dutch oven three-fourths full with water. Bring to a boil. Add noodles; cook for 9-12 minutes or until tender. Drain.

OODLES OF TUNA NOODLES!

Lord, I hate peas. Lord, I hate cream of ++ soups! I love tuna casserole though. I really don't want to see the calorie count on this - but it''s got healthy stuff in it too! Let me know what you think! For the egg noodles, use the kind you'd get in the deli - farm made or reams frozen - hearty heavy noodles....and feel free to reduce the hot pepper if you'd like - or skip it altogether, I like stuff hot! It takes 2 pans and a 6 qt casserole - but I think it's worth the dishes!

1 (16 ounce) package egg noodles
2 (6 ounce) cans tuna in water
1/2 cup butter
1/2 cup flour
2 cups milk
2 (10 ounce) packages frozen spinach
1 medium onion, finely diced
1 teaspoon dried ancho chile powder
1 tablespoon mccormics grill mate seasoning
2 cups shredded cheddar cheese
1 (6 ounce) can frenches French-fried onions

Steps:

  • Melt butter in medium saucepan. Add flour - whisk until smooth and light brown (approx 3 minutes). Add milk, stir constantly til it comes to a boil.
  • Add onion, frozen spinach, grillmates, and chili powder. Cook on low, stirring occasionally til spinich is thawed and incorporated.
  • At the same time, in large sauce pan, boil water and cook egg noodles - but only for approx 3/4 of the time on the package. Drain.
  • Drain and flake tuna.
  • Put noodles, tuna, spinach sauce and 1 and 1/2 cups cheese back in noodle pan - mix well.
  • Pour into greased or sprayed 6 qt casserole dish.
  • Top with fried onions - then with remaining 1/4 cup cheese.
  • Bake at 350 til hot and bubbly - approx 1/2 hour.
  • Can be made ahead til toppings - freeze, thaw, top and bake.

A very simple noodle salad that makes a great lunch for two. This recipe is easily doubled. Cook time is chilling time.

1 (3 ounce) package ramen noodles (discard seasoning packet)
1/4 cup mayonnaise
2 tablespoons sambal oelek
1/2 tablespoon rice wine vinegar
1/2 cup red pepper, chopped
3 green onions, sliced (white and some of the green)
4 ounces cooked chicken breasts, diced
2 cups chopped romaine lettuce

Steps:

  • Cook Ramen as directed on package.
  • Drain noodles and rinse with cold water and place in a medium sized bowl.
  • While noodles are cooking combine mayonnaise, Sambal olek, and rice wine vinegar in a small bowl.
  • Add remaining ingredients to the noodles and mix well.
  • Add the dressing and mix well.
  • Chill 1 - 2 hours before serving.
  • Serve on a bed of chopped romaine lettuce.

Chow mein noodles form the core of this delicious and easy snack. Add Chocolate Chips, Peanut Butter Chips, Peanuts, and Raisins for a treat that's sure to please.

1 (12 ounce) package HERSHEY®'S Semi-Sweet Chocolate Chips
1 (10 ounce) package REESE'S® Peanut Butter Chips
1 ¾ cups REESE'S® Creamy or Crunchy Peanut Butter
3 cups chow mein noodles
1 cup chopped peanuts
1 cup raisins

Steps:

  • Line several trays or cookie sheets with wax paper.
  • Place chocolate chips, peanut butter chips and peanut butter in large microwave-safe bowl. Microwave at HIGH (100%) 1 minute; stir. Continue heating 30 seconds at a time, stirring after each heating, until chips are completely melted and mixture is smooth when stirred. Stir in noodles, peanuts and raisins.
  • Drop by heaping teaspoonfuls onto prepared trays. Refrigerate until set (about 40 minutes). For best results, store in refrigerator.

2 cups cooked turkey (leftovers)
1 (10 ounce) can mushroom soup
1 (10 ounce) can celery soup
1 (10 ounce) can cream of chicken soup
1/2 cup white wine or 1/2 cup apple juice
4 1/2 ounces black olives
1 lb cheddar cheese (shredded)

Steps:

  • Mix everything but cheese together.
  • Spread in a casserole dish.
  • Spread cheese over and bake 350' 25 minutes.

3/4 teaspoon salt

Steps:

  • In a small bowl, combine 3 1/4 cups flour and salt. Make a well in the center. Pour eggs into well. Stir together, forming a dough. Turn dough onto a floured surface; knead for 3-4 minutes or until smooth, adding remaining flour if necessary.

"We'd plan an entire menu from the books, prepare the meal together and serve it to her family. This soup recipe was a favorite."

3/4 pound boneless skinless chicken breasts, cubed
2 medium carrots, sliced
1 small onion, chopped
2 celery ribs, sliced
1 garlic clove, minced
5 cups water
1/4 teaspoon pepper
2 packages (3 ounces each) chicken ramen noodles

Steps:

  • In a large saucepan coated with cooking spray, saute the chicken, carrots, onion, celery and garlic until chicken is no longer pink. Add water, pepper and contents of seasoning packets from the noodles. Bring to a boil. Reduce heat; cover and simmer for 15-20 minutes or until carrots are tender., Break noodles into pieces and add to soup; cover and cook for 3 minutes or until tender.
