ONION CHEESE YEAST BREAD RECIPE

Savory onion and cheese bread is light with a crisp crust, tender crumb, and great onion and sharp cheddar flavor. Try it for your next grilled cheese or ham sandwich.

1 envelope active dry yeast
1/4 cups lukewarm water
1 pinch powdered ginger (helps activate the yeast)
2 cups warm buttermilk
1/3 cup sugar
1/4 cup melted butter (lukewarm not hot)
1 teaspoon salt
3/4 teaspoon baking soda
1- 1/2 cups extra sharp cheese (shredded or cubed small)
2 cups chopped onions (caramelized)
6 cups bread flour (more or less as needed)

Steps:

  • Add the yeast and ginger to the water with a teaspoon of the sugar.
  • Stir together in a bowl and set aside for 5 minutes.
  • Mix buttermilk, sugar, salt, baking soda in with the yeast mixture.
  • Add three cups of flour and mix until smooth.
  • Mix in butter, onions, and cheese until it is totally incorporated into batter.
  • Now, begin to add the rest of the flour, one cup at a time, keeping mixer on low speed.
  • When dough pulls from the sides of the bowl remove it from the mixer to a floured surface and knead until elastic and smooth. Or, knead with the mixer according to manufacturer's instructions.
  • Place in greased bowl, turn to grease the top, cover and allow to rise for 1 -1/2 hours.
  • Punch down and form into two loaves.
  • Place in greased loaf pans and grease tops.
  • Cover, and allow to rise for 45 minutes.
  • Brush tops with egg yolk mixed with a teaspoon of water to make it glossy.
  • Preheat oven to 400F. Bake for 30 minutes, covering tops with foil if they brown too fast.
  • Remove loaves from oven and allow to cool in pans for 10 minutes.
  • Turn out and cool completely on a rack.
  • Cover the loaves if you want soft crusts.

I've been making this easy bread for years. It goes great with a casserole, soup or stew. I've taken it to many picnics and potluck suppers. Many people have asked for the recipe, and they're always surprised at how simple it is to make!

1 package (1/4 ounce) active dry yeast
1/2 cup warm water (110° to 115°)
1/2 cup warm milk (110° to 115°)
1 tablespoon butter
1 tablespoon sugar
1 teaspoon dried rosemary, crushed
1/2 teaspoon salt
1/2 teaspoon dill weed
1/2 teaspoon garlic powder
1/4 cup finely chopped onion
2-1/4 cups all-purpose flour, divided

Steps:

  • In a large bowl, dissolve yeast in water. Add the milk, butter, sugar, rosemary, salt, dill, garlic powder, onion and 1 cup of flour. Beat until smooth. Add the remaining flour and stir for about 1 minute. , Transfer to a greased bowl. Cover and let rise in a warm place until doubled, about 30 minutes. , Stir the batter down, about 25 strokes. Spread into a greased 8x4-in. loaf pan. Cover and let rise until almost doubled, about 15 minutes. , Bake at 375° for 40-45 minutes. Remove from pan to a wire rack. Serve warm.

1 ½ cups all-purpose flour
3 teaspoons baking powder
1 teaspoon salt
2 tablespoons margarine
½ cup shredded sharp Cheddar cheese
½ cup finely diced onion
1 tablespoon margarine
1 egg
½ cup milk
½ cup shredded sharp Cheddar cheese

Steps:

  • Preheat oven to 400 degrees F (205 degrees C). Grease one 8 inch round or one 8x8 inch square pan.
  • Combine flour, baking powder and salt, cut in 2 tablespoons of the butter until mixture is crumbly. Stir in 1/2 cup of the grated cheese. Make a well in the center of the mixture.
  • Fry the onion in 1 tablespoon of the butter or margarine until clear and golden. Set aside.
  • In a small bowl beat the egg and stir in the milk and the cooked onion. Pour egg mixture into the well in the flour mixture. Stir until just moistened. You will have a soft dough. Pat dough into the prepared pan. Sprinkle remaining 1/2 cup grated cheese over top.
  • Bake at 400 degrees F (205 degrees C) for 25 minutes. Serve hot. Makes about 6 servings.

2 packages (1/4 ounce each) active dry yeast
1 cup warm water (110° to 115°)
5-1/4 to 5-3/4 cups all-purpose flour, divided
4 tablespoons sugar, divided
3/4 teaspoon salt
1-1/4 cups hot water (120° to 130°)
1 envelope onion soup mix
3 tablespoons shortening

Steps:

  • In a bowl, dissolve yeast in warm water. Add 1/2 cup flour, 2 tablespoons sugar and salt; beat until smooth, about 1 minute. Cover and let rise in a warm place for 20 minutes. , In a small bowl, combine hot water, soup mix, shortening and remaining sugar. Cool to 115°. Add to yeast mixture with 2 cups flour; mix for 1-2 minutes. Stir in enough remaining flour to form a soft dough. , Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. , Punch the dough down; divide into thirds. This recipe originally came from the booklet that accompanied my bread machine. I've modified it a bit and it's my family's favorite bread. We use it for sandwiches, toasted with parmesean cheese for dinner and even just toasted with butter for breakfast!

1 1/4 cups water
2/3 cup chopped onion
4 -5 garlic cloves, chopped as finely as you prefer (optional)
4 tablespoons butter
4 cups flour
2 tablespoons sugar
4 teaspoons dry milk
2 teaspoons salt
2 teaspoons yeast

Steps:

  • Measure and add liquid ingredients to the bread pan.
  • Measure and add dry ingredients (except yeast) to the bread pan.
  • Use your finger to form a well (hole) in the flour where you will pour the yeast. Yeast must NEVER come into contact with a liquid when you are adding ingredients. Measure the yeast and carefully pour into the well.
  • Close up bread machine.
  • Choose the "basic" setting that most machines have - it's the three hour setting on mine.
  • I always use the "light" crust color because the bread comes out quite a bit softer.

1 (.25 ounce) package active dry yeast
2 tablespoons white sugar
1 ½ cups warm water (110 degrees F/45 degrees C)
2 teaspoons salt
2 tablespoons shortening
1 tablespoon minced onions
½ teaspoon dried oregano
3 ½ cups bread flour
½ onion
2 tablespoons butter, melted

Steps:

  • In a large mixing bowl, dissolve yeast and sugar in warm water. Let stand until creamy, about 10 minutes.
  • Stir salt, shortening, minced onions, oregano and 2 cups bread flour into yeast mixture. Stir in the remaining flour, 1/2 cup at a time, beating well after each addition. Cover with a damp cloth and let rise in a warm place until doubled in volume, about 1 hour.
  • Stir dough to deflate and place it into a lightly greased 9x5 inch loaf pan. Cover with a damp cloth and let rise until the top of the dough is within 1/2 inch of the top of the pan, about 40 minutes. Meanwhile, preheat oven to 375 degrees F (190 degrees C).
  • After loaf has risen, arrange onion slices on top of the loaf. Pour melted butter over the slices and bake in preheated oven for 35 to 40 minutes, or until golden brown. Remove from pan to cool on a wire rack.

1 package active dry yeast
¼ cup warm water
4 cups all-purpose flour
½ cup hot water
½ cup milk
¼ cup salted butter, softened
¼ cup white sugar
1 large egg
1 ½ teaspoons salt
¼ cup salted butter
¼ cup instant minced onion
1 tablespoon grated Parmesan cheese
1 tablespoon sesame seeds
1 teaspoon ground paprika
1 teaspoon garlic salt

Steps:

  • Spray a cookie sheet with cooking spray.
  • Dissolve yeast in warm water in a large mixing bowl. Add 2 cups flour, hot water, milk, butter, sugar, egg, and salt. Blend on low speed until moist, then beat on medium speed for 2 minutes. Stir in remaining flour by hand until a soft dough forms. Place on the prepared cookie sheet, cover, and let rise until doubled in size, 45 to 60 minutes.
  • Melt butter for filling in a small saucepan. Remove from heat and add onion, Parmesan cheese, sesame seeds, paprika, and garlic salt; mix well.
  • Spray a fluted tube pan (such as Bundt® with cooking spray.
  • Divide dough into golf ball-sized pieces. Place 1 layer of dough pieces in the prepared pan and top with some filling. Continue to later dough and filling until you've used them up. Cover with a piece of plastic wrap that's been sprayed with cooking spray. Let rise in a warm place until light and doubled in size, 45 to 60 minutes.
  • Preheat the oven to 350 degrees F (175 degrees C).
  • Bake in the preheated oven until golden brown, 30 to 35 minutes. Serve warm or cool.

ONION LOVER'S TWIST BREAD

Ancient recipe. This is an involved yeast bread but it is beautiful and tasty! The filling could easily be herbs rather than onion. The paprika makes for a nice color in the filling but it could easily be omitted. Add more herbs though to absorb the butter.

1/2 cup hot water
4 cups flour, divided
1/4 cup sugar
1/2 cup milk

1/2 cup onion, very finely chopped
1 tablespoon parmesan cheese (or other grated cheese)

  • Heat oven to 350 F degrees.
  • Grease two cookie sheets.

  • Add 2 cups flour, the sugar, milk, salt, butter and egg, blending at low speed until moistened.
  • Beat 2 minutes at medium speed.
  • Stir in remaining flour to form a soft dough.
  • Cover and let rise in a warm and dry place until double in bulk, 45-60 minutes.
  • Combined all filling ingredients.
  • Stir down dough and divide in half.
  • Roll each half out to a 18x12" rectangle on a floured surface.
  • Cut length-wise in to three 4x18 inch strips.
  • Transfer strips to a cookie sheet.
  • Fill each strip with filling.
  • Use a brush to lightly dampen edges with water and pinched closed.
  • Braid the three strips like a pony tail, being sure to pinch ends tightly.
  • Tuck them under a bit for a beautiful loaf.
  • Repeat with second dough on a second sheet.
  • Let rise until double, about 45-60 minutes.
  • Bake at 350 degrees F for 30-35 minutes.
  • Brush with butter when removed from the oven for a glossy finish if desired.

This bread is a savory treat! I use my heavy-duty mixer and the sponge method. White whole wheat flour works well in this recipe, and the onions can be replaced with chives or scallions.

3 cups flour, more if needed
1 tablespoon active dry yeast
1 teaspoon salt
2 tablespoons sugar
1 cup milk, warmed
1 egg, beaten
1 cup sharp cheddar cheese, grated
1/2 cup onion, chopped

Steps:

  • Put 1 cup of the flour in your mixing bowl. Stir in the yeast, salt and sugar. Pour in the warm milk and mix well for three or four minutes on medium. Let stand for about 10 minutes until bubbly.
  • Add the egg, then the onion and cheese, then the rest of the flour until the dough holds together and is only a bit sticky. Cover with a damp towel and let it rise for an hour.
