Steps:
- Place all ingredients in a soup kettle or Dutch oven. Slowly bring to a boil; reduce heat until mixture is just at a simmer. Simmer, uncovered, for 3-4 hours, skimming foam as necessary. , Set chicken aside until cool enough to handle. Remove meat from bones. Discard bones; save meat for another use. Strain broth, discarding vegetables and seasonings. Refrigerate for 8 hours or overnight. Skim fat from surface.

CHICKEN ONION SOUP
We almost never eat beef, but I love onion soup. A little experimentation - and left over rotisserie chicken from the supermarket deli -- brought forth this yummy version of an old classic. And yes, I know the original doesn't have meat present in the soup, but hey, it was my experiment, ya know? ;)

Steps:
- Dice the onions, put them in a crock-pot / slow cooker and toss them with the oil, salt and pepper. Turn crock-pot to low for 8-10 hours or high for about 5 hours. I start this before bedtime and wake to beautifully caramelized onions.
- Add broth and shredded chicken to the onions in the crock-pot.
- Raise crock-pot setting to high to bring soup to temperature and meld flavors. Adjust salt level if necessary.
- When ready to serve, turn broiler on; ladle soup into oven proof bowls, top with baguette, a slice of cheese and a sprinkle of parmesean. Place under broiler until cheese is melted.
- Soup's on!

CHICKEN WITH CARAMELIZED ONIONS

Steps:
- Coat a large skillet with cooking spray; place over medium heat until hot.
- Add onion; cover and cook 10 minutes or until onion is golden brown, stirring frequently.
- Combine salt and next 3 ingredients; stir well.
- Sprinkle half of spice mixture over onions; add 1/4 cup chicken broth, and cook 10 minutes, stirring frequently.
- Add 2 tablespoons broth, and cook until liquid evaporates, scraping pan to loosen browned bits.
- Stir in remaining 2 tablespoons broth; cook until liquid evaporates.
- Add vinegar, and cook an additional 2 minutes.
- or until liquid almost evaporates.
- Remove onion mixture from skillet; set aside, and keep warm.
- Wipe skillet clean with paper towels.
- Rub chicken with remaining spice mixture.
- Recoat skillet with cooking spray; place over medium-high heat until hot.
- Add chicken; cook 5 minutes on each side or until done.
- Serve chicken with caramelized onion mixture.

EASY CHICKEN BROTH
If you love rich and amazing chicken broth, this is so delicious it can be consumed as-is or added to your favorite soup. I always use my leftover rotisserie chicken this way and freeze the broth after. You can cut whole recipe in half if you only have one chicken leftover.

- Preheat oven to 425 degrees F (220 degrees C).
- Melt 1/4 cup butter in a large, oven-safe skillet on medium heat. Stir in onions until they are all coated in butter. Transfer skillet to the preheated oven and cook onions, stirring occasionally, until they are tender and well browned, about 1 hour.
- Transfer skillet to the stovetop; cook and stir onions over medium heat until they start to brown and stick to the bottom of the pan, about 5 minutes. Pour sherry and vinegar into the pan, and bring to a boil while scraping browned bits of onion off the bottom of the pan with a wooden spoon.
- Place caramelized onions in a large soup pot. Pour in chicken broth, beef broth, and thyme. Bring to a boil, skimming off any foam and fat that appear on top. Reduce heat to low and simmer for about an hour. Season with salt and pepper to taste.
- Preheat the oven's broiler and set the oven rack about 6 inches from the heat source.
- Generously brush French bread slices with melted butter. Place on a baking sheet and broil in the preheated oven until crisp and golden, about 5 minutes.
- Ladle soup into heat-proof bowls, top each bowl with a piece of toasted bread, sprinkle with 2 to 3 tablespoons of Cheddar cheese and Monterey Jack cheese.
- Broil bowls of soup under the broiler until cheese is golden and bubbly, 5 to 6 minutes.

ONION-FREE CHICKEN BROTH
Steps:
- Make sure neck and giblets are out of the chicken. Put chicken in the crock pot (mine is 5 quart). Add all other ingredients around it. Add enough water to completely cover chicken. Put the lid on the crockpot. Turn the crock pot to high and let cook until meat falls off the bone or the internal temperature of the chicken is 180 degrees - right around 5-6 hours. Remove chicken from pot and set aside. This chicken is tasty and ready to use in other recipes like chicken pie! Using cheesecloth over a fine mesh sieve, strain the broth into a large glass bowl. Cover and let cool. Once cooled down to about room temperature, place into the fridge. Refrigerate overnight. The fat should congeal and harden at the top. Remove as much as possible. Mix the broth once the fat is removed to incorporate the sediment. That has flavor. Portion out the broth and either use or freeze. Makes about 8 cups depending on the size of your crock pot.
