FRENCH ONION POTATO SALAD
This French Onion Potato Salad combines two summer favorites into one dish. This simple recipe will easily become a picnic, campout, and barbecue must have.

Steps:
- Place potatoes in a large pot of boiling water and add salt if desired. Bring to a boil and let them simmer 8-12 minutes, or until potatoes are barely tender and easy to pierce with a knife or fork.
- In a small mixing bowl, stir together Kraft French Onion Dip, plain yogurt, and mustard. Set aside.
- Drain the potatoes and allow potatoes to cool. Once cooled, add the yogurt mixture and stir together to combine. Season with salt and pepper to taste. Add in crumbled bacon and chives and fold in to incorporate.
- Cover and set in the fridge until ready to serve.

- Preheat the oven to 400 degrees F.
- Melt the butter in a cast-iron skillet over medium heat. Add the green onions, red onion, Vidalia onion, white onion and brown sugar and saute for 10 to 15 minutes, stirring occasionally. Add the vinegar and Worcestershire and continue cooking until the onions are very soft and a caramel color, another 4 to 5 minutes. Stir in the cream cheese until it is melted into the onions. Remove the mixture to a large bowl, then stir in the sour cream, mayonnaise and chives. Transfer to an 8-inch square baking dish and top with the Parmesan. Bake until golden and bubbling, 15 to 20 minutes. Serve with crostini or crudites.
FRENCH ONION DIP POTATO SALAD
I'm calling this recipe French Onion Dip Potato Salad because that's exactly what it tastes like, French Onion Dip baby! This dish tastes so decadent and rich but it's very, very low in fat. The flavour you get from caramelizing onions is insane and turning that into a potato salad, well let's just say if you were to call me a genius, I wouldn't disagree!!! Remember, potatoes aren't fattening, it's what we do to them that tends to make them that way.

Steps:
- Add the butter to a large pan and heat over medium high heat.
- When it's hot and the butter has melted, add the onions and season with salt, mix well ensuring the onions are coated in the butter.
- Continue sautéing at this temperature until you see the onions are starting to brown (about 10 minutes).
- When the onions are starting to brown, drop the heat to low and allow them to caramelize for about 30 minutes, up to an hour (low and slow).
- Whisk together the yogurt, Dijon mustard, 1 tsp salt and ½ tsp pepper then add in the boiled potatoes and caramelized onion.
- Discard the thyme sprigs.
- Chill for at least an hour before serving.
- Taste and adjust seasoning.

Everyone loves onion dip, so toss in scallions and celery, then into tender red-skinned potatoes for a yummy summer salad! I found this recipe in Woman's World magazine. I have not tried this recipe, but I'm posting it for safe keeping.

- Slice potatoes and onions very thin. Salt potatoes and onions. Add oil and butter to the pan. When the butter foams, add potatoes and onions to the skillet.
- Place a dinner plate on top of potatoes and weight it with any heavy object: a sack of flour, heavy canned goods, etc. Let the potatoes and onions crust, 2 to 3 minutes, then turn, replace weights, and let them crust again. - In a large cast-iron pan over medium heat, add the butter and heat until melted. Add the onions and 1/4 teaspoon salt. Cook the onions until they are caramelized, about 20 minutes. Deglaze with the vermouth and reduce until dry, about 2 minutes. Remove from the heat and set aside to cool.
- Meanwhile, preheat a fryer or a large Dutch oven filled with 3 inches oil to 350 degrees F. Line a sheet tray with a wire rack. Fill a large pot with salted water and bring to a boil.
- Add the sour cream, cream cheese, garlic powder and onion powder to a food processor, then add the cooled onions. Process until combined and smooth. Taste and adjust the seasoning as needed. Pour into a serving dish and refrigerate; stir again before serving.
- Add the fingerling potatoes to the boiling water and cook for 12 minutes. Strain and set aside on a sheet tray or large plate until they are just cool enough to handle. Gently crush the potatoes, but still hold their shape. Fry until crispy, 3 to 5 minutes. Drain on the wire rack and season with salt.
- Serve the crispy potatoes on a platter with the onion dip and caviar on the side.

- Put the potatoes in a pan of cold salted water and bring to the boil. Simmer for 15 mins or until tender and a knife goes in easily. Meanwhile, combine the onion and vinegar in a large bowl, cover and set aside.

- Cut both ends off the yellow onion and cut evenly into 2 halves. Remove and discard skin. Place onion halves on a cutting board with cut-sides down. Make vertical slices against the grain, then turn and slice across the cuts to chop. Chop again if you'd like smaller pieces. You should have about 2 cups chopped onion.
- Heat olive oil in a large skillet over high heat. Transfer onion and salt into the hot oil. Cook until onions are deep brown in color, 7 to 8 minutes. Add shallots and red onions; stir and saute until they start to soften and sweeten, 3 to 4 minutes. Turn off the heat and stir in garlic and dried onion.
