Easy Vinegar Marinated Cucumbers (Cucumber Salad) image

Easy Vinegar Marinated Cucumbers are a light, refreshing, summertime side dish. Add regular or cherry tomatoes for a more colorful cucumber salad.

5 cucumbers
1 red onion
1 cup apple cider vinegar ((or white vinegar, red wine vinegar, rice vinegar))
1/2 cup sugar ((or more to taste))
1/2 cup water
1 teaspoon salt

Steps:

  • Peel and slice cucumbers into thin slices.
  • Cut onion in half and cut into very thin slices.
  • Combine onions and cucumbers in a large bowl.
  • In a separate, medium-sized bowl, combine remaining ingredients. Stir until sugar dissolves.
  • Pour vinegar mixture over cucumbers and onions. Stir until the cucumbers are evenly coated in the dressing.*
  • Refrigerate at least 20 minutes. Before serving, drain liquid and place in a serving bowl to serve.

½ cup distilled white vinegar
¼ cup vegetable oil
¼ cup sugar
2 teaspoons salt
1 tablespoon fresh, coarsely ground black pepper
3 cucumbers, peeled and sliced 1/4-inch thick
3 tomatoes, cut into wedges
1 onion, sliced and separated into rings

Steps:

  • Whisk water, vinegar, oil, sugar, salt, and pepper together in a large bowl until smooth; add cucumbers, tomatoes, and onion and stir to coat.
  • Cover bowl with plastic wrap; refrigerate at least 2 hours.

Grandma's Cucumber and Onion Salad image

Both of my grandmothers made this salad every summer when their gardens produced baskets of cucumbers. It's a cool, fresh side dish for any meal. One of my grandmas omitted the green pepper and the celery seed. She also put ice in it to chill it quickly and cut the vinegar taste.

7 cups sliced cucumbers
salt as needed
1 cup sliced onions
1 cup sliced green bell pepper
2 cups white sugar
1 cup white vinegar
1 tablespoon celery seed
2 teaspoons salt, or to taste

Steps:

  • Place cucumber slices in a colander and liberally sprinkle salt over cucumbers; set aside until water starts to release from cucumbers, about 15 minutes. Drain and rinse cucumbers.
  • Mix cucumbers, onions, and green bell pepper together in a bowl.
  • Whisk sugar, vinegar, celery seed, and 2 teaspoons salt together in a bowl until dressing is smooth; pour over cucumber mixture and stir until evenly coated.

1 cup vinegar
1/2 cup vegetable oil
1/4 cup chopped onion
1-1/2 teaspoons salt

Dash pepper
Torn salad greens
Cherry tomatoes, sliced cucumber and grated carrots or vegetables of your choice

Steps:

  • In a jar with a tight-fitting lid, combine the first eight ingredients; shake well. In a salad bowl, combine greens and vegetables. Drizzle with dressing and toss to coat. Store any leftover dressing in a refrigerator.

1/8 cup rice vinegar
1 tablespoon whole grain Dijon mustard
1 tablespoon honey
Sea salt Freshly ground pepper
1/2 red onion, thinly sliced
1 English cucumber, cut into lengthwise slices with a vegetable peeler
1 tablespoon chopped dill

Steps:

  • Add vinegar, Dijon mustard, honey, salt, and pepper to a jar with a lid and shake well to mix. Add onion; let pickle for 30 minutes.
  • Stir together cucumber and dill in a bowl; drain excess water. Toss salad with dressing and onions just before serving.
