Steps:
- Heat oven to 375°F. In large bowl, stir cookie mix and cocoa until well blended. Add butter, egg and almond extract; stir until soft dough forms. Gently stir in almonds. Onto ungreased cookie sheet, drop dough by rounded tablespoonfuls.
- Bake 12 minutes or until set. Remove from cookie sheet to cooling rack. Cool completely, about 30 minutes.
- In medium bowl, stir frosting and coconut extract. Frost cookies. Sprinkle with coconut.

CHOCOLATE COCONUT ALMOND CAKE MIX COOKIES
These delightful cookies are a spin-off of Kimmi Gaines Almond Joy Cake Mix cookies, which are delicious! I had all the ingredients on hand and decided to just modify Kimmi's recipe. I believe they will be a crowd pleaser for sure.

- 1. Mix all ingredients together; if dough is too stiff, add a little more milk. Using parchment paper, drop by spoonful onto cookie sheet. I used a small ice cream scoop. Bake at 350 degrees for 12 - 15 minutes or until they start to brown. ENJOY!
- 2. Some regions do not carry Coconut cake mixes but Duncan Hines does make a Coconut Cake mix so if you can find one at your grocer, use it. If not, just use a white cake mix and add the teaspoon of Coconut Extract.

- Heat oven to 350°F (325°F for dark or nonstick cookie sheet). In large bowl, mix cake mix, flour, oil and eggs with spoon until dough forms. Stir in coconut and almonds, using hands if necessary.
- On ungreased cookie sheet, shape dough into 15x4-inch rectangle, using greased hands. Bake 21 to 27 minutes or until golden brown. Cool on cookie sheet on cooling rack 15 minutes.
- Cut rectangle crosswise into 1/2-inch slices. Place slices, cut sides down, on cookie sheet. Bake 10 to 12 minutes longer or until edges are deep golden brown. Cool 5 minutes; remove from cookie sheet to cooling rack. Cool completely, about 30 minutes.
- In 1-quart saucepan, heat chocolate chips and shortening over low heat, stirring constantly, until chocolate is melted. Drizzle chocolate over cookies, or dip one end of each cookie into chocolate. Let stand about 30 minutes or until chocolate is set. Store covered.

- Preheat the oven to 375 degrees F (190 degrees C). Grease cookie sheets.
- In a large bowl, cream together the butter, white sugar and brown sugar until smooth. Beat in the eggs, one at a time, then stir in the vanilla. Combine the flour, baking soda and salt, stir into the creamed mixture until well blended. Finally, stir in the chocolate chips, coconut and almonds. Drop by rounded spoonfuls onto the prepared cookie sheets.
- Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

CHOCOLATE, ALMOND COCONUT CAKE MIX COOKIES
I made these quickly for a movie night and they were an absolute hit! I would have made Kimi's Almond Joy cookies, but I did not have a Pinacolada Drink Mix, or Almond Joy Candybars! This came in wonderful though....we enjoyed them immensely! I accidentally put the wrong picture on here...trying to delete it!

- Preheat the oven to 350 degrees. Spray a cookie sheet generously with butter flavored vegetable spray.
- In a stand mixer,mix all the ingredients together until thoroughly combined. The dough should be thick and stick together in sort of one big gob.
- Make 1-1/2 inch balls and place about 2 inches apart on the cookie sheet. Flatten each ball some with the palm of your hand; but don't squish them all the way down!
- Place cookie sheet in the oven, and bake for 10 minutes. Wnen you remove from the oven (they won't be hardened or brown on the edges) allow them to cool on the cookie sheet for about 5 minutes. Remove cookies to a cooling rack to complete cooling. NOTE: These would be really good with sliced almonds on the top, but I didn't have any at the time)!
COCONUT-ALMOND CHOCOLATE NO-BAKE COOKIES
If you like the classic chocolate no-bake cookies, these might be right up your alley. These cookies are loaded with coconut and oatmeal and held together with a mixture of fudgy, decadent chocolate and almond butter. - In a large saucepan, stir together sugar, cocoa and salt. Then stir in milk.
- Cut butter into 1 tbs. chunks and add it to the saucepan as well as the corn syrup. Place saucepan over medium-high heat, stirring occasionally until mixture reaches a slow-rolling boil. Boil for 3 minutes, stirring constantly as to avoid burning on the bottom of the pan.
- Remove pan from heat. Stir in almond butter and vanilla until smooth.
- Stir in oatmeal and coconut until thoroughly incorporated, and mixture begins to stiffen.
- Immediately drop by teaspoonfuls onto waxed paper. Allow to cool for at least 1 hour to ensure cookies harden properly.
- Store in an air-tight container and enjoy!

CHOCOLATE-GLAZED COCONUT-ALMOND CAKE
This is the most sinfully delicious dessert you will ever try! Make for any formal, (or any occasion at all) and this recipe will not disappoint. Presentation is exceptional and elegant. You will need only a very small slice, very rich! This recipe came from Bon Appetit, February, 1994 issue.

- For the cake-----------.
- Preheat oven to 325F degrees.
- Butter and flour 9" diameter cake pan with 2" high sides.
- Using electric mixer, beat 1 cup sugar, almond paste and butter in large bowl to blend.
- Add yolks, extract and salt and beat 1 minute.
- On low speed, beat in flour alternately with milk in 3 additions each.
- Mix in coconut.
- Using electric mixer fitted with clean dry beaters, beat whites in large bowl to soft peaks.
- Gradually beat in remaining 1/4 cup sugar and beat until stiff but not dry.
- Fold whites into batter.
- Pour batter into prepared pan.
- Bake until tester inserted into center comes out clean, about 1 hour.
- Cool cake in pan on rack 20 minutes.
- Run small sharp knife around sides to loosen cake.
- Turn out cake onto rack; cool completely.
- For Filling-----------.
- Bring cream of coconut and butter to simmer in heavy medium saucepan over low heat.
- Add white chocolate; stir until melted.
- Pour into bowl and cool.
- Add cream cheese and beat until smooth.
- Mix in coconut.
- Chill until spreadable, about 30 minutes.
- For Glaze-----------.
- Bring 3/4 cup whipping cream and corm syrup to a simmer in heavy medium saucepan.
- Add chocolate and stir until melted and smooth.
- Cool until just pourable, about 15 minutes.
- Using serrated knife, cut cake horizontally in half.
- Place 1 cake layer cut side up on plate.
- Spread filling over.
- Top with second cake layer cut side down.
- Pour half of glaze over top of cake, spreading with spatula to cover sides and smooth top (reserve remaining glaze for sauce).
- Press almonds around sides and in 1" border around top edge of cake.
- Refridgerate cake until glaze sets, about 1 hour.
- (Can be made 1 day ahead. Cover cake with cake dome; chill. Chill remaining glaze. Let cake stand 2 hours at room temperature before continuing.) Mix reserved glaze and remaining 1/4 cup whipping cream in saucepan.
- Stir over low heat until sauce is heated through.
- Slice cake; serve with sauce.

- 1) Mix cake mix, 1/3 cup of oil, and eggs together. I use my hands.
- 2) Slowly add the coconut flakes a little at a time continuing to mix the dough by hand.
- 3) The dough will be thick and sticky, if it is too thick, you can add one more TBSP of oil.
- 4) Line a cookie sheet with parchment paper.
- 5) Roll dough into small balls and drop onto parchment paper.
- 6) Press the balls down firmly with your hand. If the dough balls are not pressed down, the cookie will not cook properly. They did not spread out evenly on their own.
- 7) Bake at 350 degrees for 12 to 14 minutes.
- 8) Since ovens vary, you may want to keep an eye on your first batch. The cookies should cook to a light golden color.
- 9) Place cookies on a cooling rack immediately once they are cooked and allow them to cool for about ten minutes.
- 10) Once the cookies have cooled, melt one of the German's Sweet Chocolate bars by breaking it in half and microwaving it for 60 seconds and then stiring it with a spoon to get it smooth.
- 11) Dip the top portion of the cookie into the chocolate and place the cookie on wax paper to allow the chocolate to dry.
- 12) One chocolate bar should cover about 12 small cookies really well.
- 13) I made 36 small size cookies or 24 medium cookies, but you could adjust for size if you like.
- 14) If the chocolate is not getting hard you can place the cookies in the fridge, or even in the freezer for just a few minutes.
