Not only is this dish simple to make, it's also perfect for a church breakfast or an afternoon brunch. The Swiss cheese and diced ham add nice flavor.

1 cup butter, melted
100 large eggs
2-1/2 quarts 2% milk
1-1/4 teaspoons white pepper
7-1/2 cups shredded Swiss cheese
7-1/2 cups cubed fully cooked ham

Steps:

  • Divide the butter among five 13x9-in. baking dishes; set aside. In a large bowl, beat 20 eggs, 2 cups milk and 1/4 teaspoon pepper until blended. Stir in 1-1/2 cups cheese and 1-1/2 cups ham; pour into one prepared dish. Repeat four times. , Bake, uncovered, at 350° for 40-45 minutes or until a knife inserted in the center comes out clean (cover with foil if the top browns too quickly). Let stand for 5 minutes before cutting.

8 eggs
1 cup milk
salt and pepper to taste
2 cups diced ham
1 cup shredded American cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Beat eggs in a large bowl, making sure that they are mixed very well and have a 'frothy' top. Add the milk, salt and pepper. Mix well. Stir in ham, then add cheese pieces and stir well. Pour mixture into a well greased 4 quart casserole dish and bake in the preheated oven for 50 to 60 minutes or until top is lightly browned.

1 package (30 ounces) frozen shredded hash brown potatoes, thawed
1 pound cubed fully cooked ham or 1 pound bulk pork sausage, cooked and drained
1 medium onion, chopped
1 medium green pepper, chopped
1-1/2 cups shredded cheddar cheese
12 large eggs
1 cup 2% milk
1 teaspoon salt
1 teaspoon pepper

Steps:

  • In a greased 5- or 6-qt. slow cooker, layer half of each of the following: potatoes, ham, onion, green pepper and cheese. Repeat layers., Whisk together remaining ingredients; pour over top. Cook, covered, on low until set, 6-7 hours. Turn off slow cooker. Remove insert; let stand, uncovered, 15-30 minutes before serving.

1 tablespoon dried minced onion

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease one 8x8 inch casserole dish and set aside.
  • Beat together the eggs and milk. Add seasoning salt, ham, Cheddar cheese, Mozzarella cheese and minced onion. Pour into prepared casserole dish.
  • Bake uncovered at 350 degrees F (175 degrees C) for 40 to 45 minutes.

From an email recipe exchange that I just got. I haven't made it yet so I am guessing the time and yield. You use a dozen eggs. It sounds like there's a lot of room for creativity with this recipe.

12 eggs, well beaten
1 teaspoon salt
pepper
1 (16 ounce) container cottage cheese
1 small onion, grated
1/2 large green pepper, diced (optional)
1/2 lb mushroom, thinly sliced
1/2 cup all-purpose flour
1 teaspoon baking powder
1 lb cheddar cheese, grated
1/2 cup margarine or 1/2 cup butter, melted
spinach (optional)
2 tomatoes, thinly sliced
parsley flakes, for garnish

Steps:

  • Grease a 9X13 baking dish.
  • Mix together flour, salt, baking powder, and pepper.
  • Add to the beaten eggs.
  • Mix in the cottage cheese, cheddar cheese, onion, the mushrooms and spinach and melted butter.
  • Pour into the baking dish.
  • Lay sliced tomatoes on top of the egg mixture and gently press with a fork.
  • Sprinkle with parsley flakes.
  • Bake at 350 degrees for 40-50 minutes.
  • Let set for 15 minutes before serving.

This is a sausage omlet for many made all at once! GREAT for summertime vacation! Just mix, set and go to bed! I use the sundried tomatoes since it will rehydrate during cooking. you can use fresh but recommend waiting until serving to top each serving with fresh room temperature diced tomatoes. You can use other meats if you wish, use some leftover ham, or crispy fried bacon. cooked turkey sausage. Add fresh sliced mushrooms or diced bell peppers! or how about a minced jalapeno! what ever you like in your omlet the choices are yours- just make sure any meats are already cooked.

26 ounces frozen hash brown potatoes
1 lb sausage, cooked and crumbled
2 cups mozzarella cheese, shredded
1/2 cup parmesan cheese, shredded
1/2 cup sun-dried tomato, julienne cut
6 green onions, sliced
12 eggs
1/2 cup milk (or half and half)
salt and pepper, to taste
1 pinch cayenne pepper

Steps:

  • Spray a 6 quart slow cooker with cooking spray or use a slow cooker liner (reynolds makes these) Layer 1/2 of the potatoes on the bottom of slow cooker, half of the sausage, 1/2 the mozzarella and Parmesan cheese, 1/2 the sun dried tomatoes and green onion. Repeat with the remaining half of the same ingredients.
  • Beat eggs, milk, salt and pepper and cayenne in large bowl with a wire whisk until well blended.
  • Pour evenly over potato-sausage mixture.Cook on low setting for 8 hours or on high setting for 4 hours or until eggs are set.

This is a great breakfast casserole for large groups. I got this from a sweet lady and her cookbook, Betty "Winks" at Cooking. She did cooking demos at a local department store I worked at in Little Rock, AR. I have made it several times and there is never any left. Great for holidays and deer camp. Goes great with hash browns and biscuits! You can also substitute a can of Rotel tomatoes for the stewed tomatoes and bell pepper.
