There are few things that are simpler to make than an oven pancake, but my oven pancakes always, always failed. Either they were undercooked, or dry, or burnt around the edges *yet* undercooked in the middle. I couldn't make an oven pancake to save my life, people. Until I discovered this recipe! I only made it because I had heavy cream that needed using, was feeling lazy so didn't want to make anything complicated, and was fully prepared to fail. But, lo and behold, a perfect, soft and fluffy pancake emerged from my oven! So simple, so good, so... successful! Load on the whipped cream and strawberries and enjoy.

600 ml milk
200 ml cream
2 eggs
150 ml sugar
1 teaspoon vanilla sugar (or extract)
1 teaspoon salt
500 ml all-purpose flour
1 teaspoon baking powder
50 g butter, melted

Steps:

  • Preheat oven to 225°C Line a jelly roll pan with parchment paper.
  • Lightly whip eggs: add milk, cream, sugar, vanilla sugar and salt, whip to combine.
  • In a separate bowl, combine all-purpose flour and baking powder. Gradually add the flour mixture into the milk mixture, whisking continuously to avoid lumps from forming.
  • Add melted butter, stir to combine.
  • Pour the batter into the prepared pan and bake for 20-25 minutes. (This pancake does not puff up like many other recipes, so expect it to cook quite flat).
  • Serve warm with sugar, syrup, berries and whipped cream, chocolate sauce -- or whatever you fancy!

I use my cast-iron skillet when I make this recipe, but an ovenproof, non-stick skillet would work just as well. This is a brunch favorite.

3 large eggs
3/4 cup milk
3/4 cup all-purpose flour
1/2 teaspoon salt
2 granny smith apples, peeled, cored, and cut into 1/4-inch slices
3 tablespoons sugar
2 tablespoons lemon juice
1/4 teaspoon cinnamon
6 tablespoons unsalted butter
1/2 a lemon, juice of
3 tablespoons confectioners' sugar

Steps:

  • Preheat oven to 450 degrees Fahrenheit.
  • In a medium bowl, beat the 3 eggs and milk until well blended. Add the flour and salt; stir until batter is barely blended (the batter should be slightly lumpy).
  • In another bowl, toss apple slices with sugar, 2 tablespoons of lemon juice, and cinnamon.
  • Melt unsalted butter in a heavy, ovenproof 12-inch cast-iron or non-stick skillet over medium-high heat. Add apple mixture and saute 4 minutes, or until slightly softened. Spread out apples into an even layer; pour batter over apples.
  • Bake in preheated oven for 20 minutes, or until pancake is golden brown and puffed.
  • Sprinkle with the juice of half a lemon and dust with confectioner's sugar. Serve immediately.

These pannakoeken are made by Dutch Grandmas (Omas) everywhere! They are very thin and look more like crepes, however not sweet like crepes. You can eat them with savory fillings or sweet fillings, we like them with syrup best!

1 1/2 cups flour
2 teaspoons sugar
1 teaspoon baking powder
1 teaspoon baking soda
3 eggs
1 tablespoon oil
2 1/4 cups milk

Steps:

  • Mix dry ingredients together. Add oil and eggs to this mixture. Slowly add the milk to a very thin consistency. Whisk well til very few lumps remain.
  • Fry about 1/2 cup of this mixture at a time in a quite hot frying pan sprayed with pam, you only need to grease the pan intermittantly after that. Spread thinly in the hot pan by tipping the pan in circular motion. The thinner the pancake the better:) Fry them til the top of the pancake appears dry then flip over until it is quite brown on the bottom.
  • These take some practice but are worth the effort!

2 tablespoons sugar
1 teaspoon salt
1/8 teaspoon nutmeg
3 eggs
2 cups milk
2 tablespoons butter

Steps:

  • Sift flour, sugar, salt & nutmeg into mixing bowl.
  • Beat eggs lightly with milk.
  • Add to dry ingredients and mix until smooth.
  • Heat butter in oven in 9" skillet.
  • When butter bubbles, pour batter into skillet & bake at 375 degrees for 35 minutes or until pancake is set and golden brown.
