OLLA PODRIADA (SPANISH NATIONAL SOUP)
Forgot about but while look for take on chili found this in my "The Professional Chef" copyright 1969 Olla podrida "Spanish Nation Sopu" is a Spanish stew made from pork sausage (chorizos), beans, rice and an inconsistent, wide variety of other meats and vegetables, often including chickpeas (Garbanzos), depending on the recipe used. The meal is traditionally prepared in a clay pot over several hours. It is eaten as a main course, sometimes as a single dish, and sometimes with ingredients separated

Steps:
- I like to sock the kidney beans over night then cook them for approximately 2 hours. reserve. The other way I love is to use a clay pot Saute vegies then combined cook for the 2 hours in a 350F oven.
- Saute Onions, selery and garlic in oil in a large soup pot.
- Add Rice and saffron. Saute approximately 5 minutes
- Add chicken stock and simmer until rice is cooked
- Poach sausage separately 7 to 8 minutes. Remove from cooking water and cool.
- Remove outside casing. Cut or dice sauge lenthwise into 4 equal pieces. Slice 1/4 in think. Add to soup.
- Drain kidney beans. Add beans, Garbanzos, chicken and ham to the pot. If you cooked in the clay pot then add Garbanzos, chicken and ham to the pot. Return to the oven simmer 10 to 15 minutes more.
- Note: Chorizos sausage shoulkd be used it available otherwise use Hot Italian sausage.

Steps:
- Place beef, pork and stock in Dutch oven then bring to a boil, reduce the heat and simmer for 1 1/2 hours.
- Add the chicken and bring to a boil again. Reduce the heat and simmer for 1 hour until meat falls off the bone.
- Cool the mixture to remove bones then return to the pot and bring to a boil again.
- When boiling add the tomatoes, lima beans, hot pepper,green peppers,onions, carrots, celery, potatoes, okra, bay leaf, and worcestreshire. Reduce to simmer and cook over very low heat for 45 minutes or more. Stir frequently as it thickens.
- Add the corn and simmer for 15 minutes more or until all vegetables are soft.
- Season to taste.
- Serving Suggestion: Garnish with chopped fresh parsley and serve with crusty bread.
- Best if left overnight and reheated.

CHOCOLATE CHIP BISCUITS-AUSSIE STYLE
These are a very "moresome" bikky:) I used to sell these at the local markets, and they always sold out first. Very easy to make, and to really show off, you can throw a handful of chopped macadamia nuts in, gives them an extra crunch!!! PLEASE NOTE, THESE ARE NOTHING LIKE AMERICAN CHOC CHIP COOKIES, WHICH ARE SOFT AND CHEWY. I have also added coco powder to the mix and used white chips, looks good, but the white chips stay very hard.

Steps:
- Cream together the butter and sugar.
- Add the condensed milk and keep beating for 2 minutes.
- Fold through the flour, then the choc chips. The mixture will be tacky.
- Place teaspoons full on your baking tray (either greased or baking pepper).
- Flatten slightly with a floured fork.
- Bake at ABOUT (all stoves are different) 160°C for about 15 minutes, or till golden.
- Leave on trays for 3 minutes, then cool on wire racks.

These are really popular finger food in Australia. Maybe you call them ribbon sandwiches, but most often they are know as club sandwiches here.

Steps:
- If you have your bread sliced at the thickness for sandwiches, you should have 8 long slices.
- Soften the cream cheese in the microwave if necessary so you don't tear the bread.
- Lay your bread slices out, and spread with the cream cheese-just as you would with butter for a normal sandwich.
- On the first slice, top with the ham, then a bread slice, top with tomato, and a bread slice, top with the mashed egg, then a final bread slice.
- Season each layer with salt and pepper to taste.
- Repeat with the remaining 4 slices of bread and filling.
- I like to place 12 cocktail sticks in the sandwich stacks so I can see where I will be cutting, then I take my electric knife, remove the crusts, and finally cut each stack into 12.

- Make pastry first;.
- Mix flours, salt, sugar and add boiling water.
- Mix well, knead on floured bench.
- Rest before using.
- Make filling;.
- Mix meat, and seasonings by hand or pulse in a food processor. Do not over process.
- Add vegetables and mix by hand.
- Roll pastry until thin & cut into rounds; I use an egg-ring.
- Brush edge of rounds with eggwhite.
- Place 1-2 tablespoons of filling on each round & shape around filling, moulding into an attractive ball-shape; a little filling should be exposed on the top.
- Steam for 15 minutes OR Deep fry 180 c for 5-10 minutes.
LEMONADE AUSSIE STYLE
My mum used to make this for me when I was a kid. She would use lemons, oranges or a mix of both, but I prefer just lemons. The recipe suggests 1 cup of the syrup to 2 or 3 cups of water or ginger ale, but I think you need to mix it to your liking.

- Wash and chop all the vegetables (not the tomatoes) and place in a large glass or ceramic dish dish.
- Place the oil, juice, soy sauce and garlic in a jug and stir.
- Pour over the vegetables and mix.
- Cover and let marinate for 2 - 24 hours.
- Cook over a prepared hot BBQ plate for 10 minutes, flipping often.
